Hint Of Lime Baked Tortilla Chips

THE CRUNCHIEST KETO/LOW CARB NACHOS/CHIPS/GLUTEN FREE

Did you know that it is citrus season right now?! For some reason it seems kinda out of place to me since I seem to crave citrus-y things much more in the summertime when its really hot outside. But, hey, Ill take it!

I guess I should have been cued up to the fact that it is citrus season by the hundreds of orange trees in full bloom that I pass every morning on my way to work. Some of them are in such random places too, like in front of apartment buildings or randomly growing up in roadway medians, and Im always so sad to see most of the delicious fruit go to waste. Im thinking I might need to start helping them out a little bit!

Besides these Homemade Cool Ranch Doritos, Hint of Lime Chips have always been my favorite. Who am I kidding, I love anything that is crunchy and salty! But seriously, the best thing about hint of lime tortilla chips are that they arent just crunchy and salty, they are also really refreshing with the added lime flavor.

Now, Im not sure what the exact ingredients are in the lime flavored chips you can buy at the store, but I can tell you that there are only 4 ingredients in these chips! Sometimes, the less ingredients the better. And these are also super easy to make. All you need is about 3 minutes of prep and 12 minutes in the oven and then if you are anything like me, 30 seconds to inhale them all

The Potential For Cross Contamination At Chipotle

While much of the menu at Chipotle is considered gluten free , this doesnt mean you can eat at the restaurant free and clear.

In fact, the flour tortillas are a key ingredient in the large burritos Chipotle makes for its customers, and the flour from those tortillas can get everywhere.

This is why the main point of concern when eating at Chipotle is cross contamination. Cross contamination occurs when a gluten-free item comes in contact with bits of gluten during the preparation or handling process.

To minimize your risk of cross contamination at Chipotle, follow these precautions:

  • Ask the server to change his or her gloves. Once they change gloves, make sure they dont handle the flour tortillas.
  • Order a bowl vs. burrito. You can enjoy a hearty burrito bowl or light salad. Avoid the burritos, tacos, or anything that would be prepared in the tortilla press.
  • Ask for fresh ingredients. The staff can help you get fresh, untouched ingredients for your bowl. Im usually fine with them scooping all sorts of ingredients into my bowl, but what Im not fine with is the cheese and lettuce. Have you ever noticed how they grab those items with their hands vs. spoons? Request fresh lettuce and cheese taken from untouched containers. They always have containers of fresh ingredients in the back they can pull from.

What Ingredients Do You Need To Re

    • American cheese
    • Cayenne pepper
    • Dried minced garlic

There is nothing better than a slow cooker filled with cheese! Once all of the ingredients are in the slow cooker, close that lid, stir occasionally and you can even dip directly in the cooker to save a dish.

What are some tips for making this queso dip?

    • Do not make this recipe on the stovetop. Yes, it is done quicker, but the recipe will be grainy, extremely thick and the cheese/oil will likely separate.
    • Only cook on the low setting of the slow cooker.
    • Again, it will cook on high just fine, but youre likely to run into a texture/separation issue.
    • Be sure to roast the tomatoes and peppers ahead of time. This really helps add a layer of flavor to the cheese.
    • Make sure you remove the skin from the veggies after roasting.
    • If you want the dip to stay liquid a little longer, try adding 2 oz of cream cheese.

Doesnt the dip look DELICIOUS!? I highly recommend your hand at trying this copycat recipe. Its a great option if youre having friends over because youll have a slow cooker full.

Enjoy this dip right out of the slow cooker with some tortilla chips. One last note, you can make this queso recipe with Kraft singles , the color of this Qdoba queso dip will be more yellow-orange in color. If you use white American cheese, the dip will be lighter in color . Either way, it will taste amazing!

Gluten Free Restaurant Review Of Qdoba

    Qdoba Gluten Free Dairy Free

Cali and I went to Qdoba for dinner. Before we went I looked up the Allergen menu online. We had the naked chicken burrito with cheese, sour cream, pica de gallo, black beans and rice. Cali had a bowl of rice, beans and chicken from my big bowl.

The meal tasted great but when I got home trouble! Not sure what had gluten but something DID! The meal didnt stay with me. Not sure I would feel confident to go back at this point.

I havent knowlingly had gluten in 12 days. I have to say I really DO feel better without the Gluten. So to have a night like tonight it helps remind me why I have been saying no to cookies, bread, and other yummy Gluten food items. Hopefully tonight wont set me back too far.
