My all time favorite gluten free flour for cookies is Bob’s Red Mill 1-1 Ratio Gluten Free Flour. This is my own opinion, not paid or sponsored at all. I truly love their products in general but we always have at least 2 bags of this flour in our house.
I always like to do a combination of this gluten free flour and some almond flour. I have found that this really helps to lighten it up and give it a nice texture as well.

Flour must be accurately measured for recipes to turn out. However many have been measuring flour inaccurately
For instance, if a recipe calls for one cup of flour, and you scoop the flour out of the bag with the measuring cup, you could end up with 1.25 times as much flour instead!
This can make a huge difference in the taste and appearance of recipes.
Instead spoon the flour out with a large spoon and level the top of the measuring cup by scraping a knife across the top.

- Add in eggs and egg white and beat until smooth.
- Add in vanilla. Begin to add in dry ingredients and mix until just incorporated.
- Fold in dairy free chocolate chips.
- Chill dough for at least 2 hours. Use a small cookie scoop to scoop out 18 equal sized cookies and place about 2 inches apart on a cookie or baking sheet lined with parchment paper or a Silpat liner. Alternatively, you can make tablespoon sized balls.
- Bake cookies at 325 for about 12 minutes and allow to cool prior to eating.

Dairy Free Chocolate Chip Cookies bake for 8-10 minutes in an oven preheated to 375 degrees Fahrenheit . The cookie sheet should be on an oven rack about one-third of the way from the top of the oven. The cookies should look a little underdone coming out of the oven.

They continue to firm up as they cool, so you dont want them to get too dark in the oven.
Let the cookies cool on the baking tray for 1-2 minutes before moving them to a wire rack to finish cooling. If using a dark baking sheet, youll want to get them off the sheet as soon as you can.

Both butter and vegan butter are around 100 calories per tablespoon. Dairy free and regular chocolate chips are 70-80 calories per tablespoon.
If you dislike vegan butter because it is a highly processed food, you can substitute half the butter for coconut oil. This swap will actually make the cookies even higher calorie, as coconut oil is 120 calories per tablespoon.

For the sweetener: Feel free to experiment with different types of sugar or sugar free alternatives such as xylitol or granulated erythritol.
You can also just use all of one type of sugar instead of two. The resulting cookies might be crunchy or spread more, or they might need more or less time in the oven, but edible baking experiments are the best kind of experiments!

How To Make Softer And Thicker Chocolate Chip Cookies
Its been almost 2 years since we originally posted this recipe, and in the spirit of creating the perfect allergy friendly cookie and always making improvements, we continued to experiment with different flour combinations for softer and thicker chocolate chip cookies.
We combined 2 different flours that created an even softer and thicker cookie and debuted this change with our Cranberry White Chocolate Chip Cookies!
If you like crispier and chewier cookies, you can stick with the recipe as written, but if you want a thicker cookie , then try this:
- Swap the 1-1/2 cups gluten free all purpose baking mix for 1 cup of gluten free all purpose baking mix + 3/4 cup fine sorghum flour . Bake for 12 minutes.
Everything else stays the same in the recipe! Ill add this into the recipe card notes so if you print off the recipe, it will be there, too

How To Freeze Cookie Dough:
Drop by tablespoon or cookie scoop onto a parchment-lined cookie sheet. These can be close together but not touching. Place cookie sheet in the freezer for one hour. Take frozen cookie balls and store them in a freezer bag or container in the freezer for up to two months.
To bake preheat oven to 350°. Place frozen cookies on a parchment-lined cookie sheet and bake 1-13 minutes until just golden brown. Place the baking pan on a wire rack to cool for 5 minutes and then transfer cookies directly to the wire rack to cool completely.
- Yield:2 1/2 dozen 1x
Gluten Free Chocolate Chip Cookie Baking Notes
With our cookies, you can make them crispier or chewier/softer depending on what you like. If you want these more crispy, bake for about 12-13 minutes. If you want these more chewy in the middle, bake for just 10-11 minutes.
Since my husband loves crunchy cookies, heres another trick we like to do for extra crisp cookies: leave the cookies on the cooling rack longer and put them in a container that isnt airtight . This keeps the cookies crisp if thats your jam!
I like my chocolate chip cookies chewy in the middle and a bit crisp on the edges, so I just bake these for 10-11 minutes and store them in an airtight tupperware-type container to keep them from getting crunchy.
Youll notice that we didnt add any additional salt to this recipe since the King Arthur gluten free flour blend has salt in it already and the cookies also have baking soda.
If your gluten free all purpose flour doesnt have salt in it already, you can add 1/4 teaspoon of salt to these if you like.
