Oats can be sneaky. Pure oats are actually gluten free. BUT its the processing that contaminates them. Usually they are processed in facilities that also process wheat ingredients so they get cross contaminated easily. But I recommend using this oat flour from nuts.com. Its certified gluten free, so theres no worry of cross contamination!

Peanut Butter Cookies Made With Gluten Free Flour

If youve ever made any gluten free baked goods before, unless they were flourless, they most likely called for an all purpose gluten free flour. These gluten free peanut butter cookies are made with gluten free flour, which is a blend of different flours that mimics the function of conventional all purpose flour.

Unlike our flourless peanut butter cookies, this recipe makes a your standard thick and chewy cookie, much like a chocolate chip cookiesbut with a deep peanut flavor. Its slightly crisp on the very edges, and you taste the peanut butter, brown sugar, vanilla, and chocolate chips the most.

The all purpose gluten free flour blend is made mostly with rice flour, and it has no real taste or obvious texture. That rice flour blend behaves just like all purpose wheat flour would in a similar recipe.

Gluten free doesnt always mean healthy. Gluten free also doesnt always mean gross. It means exactly what it says. Gluten free! While theres no gluten, there are many other delicious ingredients that can make even a gluten free cookie A-MAZING!

Did I mention this is a one bowl gig? Im into it. You can also make these dairy free by leaving out the chocolate chips. Although, I know there are some chocolate chips that are considered dairy free, so in that case, the more the merrier!

The dough for this recipe is not your typical cookie dough. Its got more moisture than youre probably used to, but dont let that scare you away. KEEP GOING.

The Original Recipe For These Cookies

Gluten Free Peanut Butter Chocolate Chip Cookies (Vegan ...

Originally, this recipe was made using most of the same ingredients, with just a few changes:

  • 3/4 cup all purpose gluten free flour, including xanthan gum
  • 3 tablespoons cornstarch
  • 1/4 cup + 2 tablespoons granulated sugar
  • 3/4 cup old fashioned rolled oats

Everything else in the ingredient list was the same as the recipe is written now. The cookies were also baked in flattened disks at 350°F for 8 minutes instead of 10 minutes at 375°F.

The photo just above shows exactly what the old recipe looked like. They were thick and chewy, still, and had a similar balance of chew from the oats and flavor from the peanut butter. In case you prefer the old recipe, I wanted to be sure you had it.

How To Make Peanut Butter Chocolate Chip Cookies:

  • First, youll cream the softened coconut oil and coconut sugar with a hand mixer until its light and fluffy. Then mix in the peanut butter, vanilla extract and flax egg.
  • In a separate bowl whisk the almond flour,baking soda, baking powder and sea salt until well combined. Make sure no clumps remain!
  • Add the peanut butter mixture to the dry ingredients and continue to mix until a cookie dough forms. Fold in the dark chocolate chunks and peanut butter cups.
  • Cover the bowl and allow the cookie dough to chill in the refrigerator for at least 1 hour
  • Once ready to bake, preheat the oven to 350 degrees Fahrenheit. Line a baking tray with parchment paper and set it aside.
  • Use a cookie scoop or roll the dough into 12 balls and place on the sheet 2 inches apart. Press down lightly and sprinkle with a touch of sea salt.
  • Bake the cookies for 10-12 minutes until golden brown. Allow the cookie to cool on the tray for 5 minutes before transferring to a cooling rack to cool completely.

  • Fold in the chocolate chunks. I used a spatula for this part and I used a sharp knife and cutting board to chop up my chocolate. Semi-sweet chocolate chips can be used in place of chocolate chunks.
  • Chill for 45 minutes then scoop out onto a parchment paper line baking sheet and bake for 10-12 minutes at 350ºF.
  • This cookie dough can easily be kept frozen until ready to use too. I recommend making the dough, scoop out the cookie dough and placing them onto either a wax paper or parchment paper lined baking sheet.

    Place them in the freezer until solid, then transfer the cookie dough balls into a well sealed freezer bag or storage container. Vacuum sealed containers work really well for recipes like this as well!

    Yes! This is the hardest part of the recipe but chilling the dough creates the ultimate peanut butter cookie texture! The end result is an extra thick cookie bursting with rich, luscious flavors.

    Youll need to chill the dough in the refrigerator covered for at least 1 hour before baking. Alternatively, dough can be chilled up to 1 week if youre looking to prep ahead!

    Can You Replace Peanut Butter With Nutella

    You cant replace peanut butter with Nutella in a baking recipe . Ive tried! But Ive been doing some switching back and forth between baking with peanut butter and baking with Nutella and I think Ive cracked the code.

    Nutella is nut butter, but it has lots more sugar in it than even any commercial peanut butter . We made 3 ingredient Nutella brownies, and they were a complete failure when I attempted to replace Nutella with peanut butter. The oil from the peanut butter separated during baking and the result went right into the compost heap.

    I bet you could do something similar in this recipe by reducing the brown sugar in this recipe by at least half and replacing the peanut butter with about 3/4 cup of Nutella. It would take some experimentation, but I think it would be worth it!

    Can I Make These With Natural Peanut Butter

    For my version, I used one cup Peanut Pan Creamy Honey Roasted Peanut Butter and I dont advocate using natural or Homemade Peanut Butter. As lovely as homemade peanut butter is for eating with a spoon, spreading on toast, or making pans of bars with, it lacks the structure that storebought peanut butter has.

    Because these cookies have no flour, which would lend structure, using peanut butter thats oily, natural, and loose is going to result in cookies that are loose and may not bake up as thick. You could try using natural peanut butter and Ive seen some people have success with it but I get much better results with commercial. Good old-fashioned Jif, Skippy, or Peter Pan are my recommendations.

    How To Store Them

    A tightly sealed container is your best bet to keep these cookies fresh, but theyre pretty versatile. In a pinch, a zip top bag will do and of course, a cookie jar is always a decent option.     How To Store Or Freeze Cookies

    The dough can be frozen airtight for a week or two, but dont go much longer than that, as peanut butter can lose moisture and become a bit crumbly if frozen too long. You can also wrap baked cookies airtight and freeze for up to several weeks. But seriously is it realistic to think these cookies would sit around that long? Unlikely.
