These are addictive, especially if your like me and can NEVER have enough chocolate. It is hard to get the texture right with gluten free cookies, and especially gluten free chocolate cookies – but these are spot on! As my test subject said – and I quote: âthese are really goodâ. Thatâs right folks, the man that has a critique about everything I make only had one thing to say, and it was a good thing. You heard it here first – these cookies are really good – no ifâs, andâs or butâs about it!

I have made these cookies quite a few times now, both with coconut sugar and monk fruit and get rave reviews every time I bring these around – I even get requests from people to bring these triple chocolate cookies over. If that doesnât tell you how amazing these are then I donât know what will! Even my boyfriend tells people about these cookies.

The Best Chocolate For Chocolate Chip Cookies

Ive found that people have very strong opinions when it comes to the perfect chocolate to use in chocolate chip cookies. Some swear by chocolate chips, others prefer chopped chocolate, chocolate féves or chocolate wafers.

I actually like to use a mix of both in the recipe below, youll see that I use a 1:1 mix of chocolate chips and chopped chocolate .

Here are a few things to keep in mind:

  • Use high quality chocolate both for chocolate chips and for chopped chocolate/féves/wafers. Chocolate chips in particular can taste awful if theyre of a poor quality, so if you cant get your hands on good quality chocolate chips, use only chopped chocolate instead.
  • My favourite chocolate brands to use in chocolate chip cookies are Guittard and . Though I havent tested it myself, Ive heard excellent things about Valrhona chocolate as well.
  • Use a dark chocolate with 60-70% cocoa solids. This balances out the sweetness of the cookie dough and gives the best possible flavour.
  • To get the pools of chocolate on top of the cookies, use chopped chocolate/féves/wafers. Due to their chemical composition, chocolate chips maintain their shape in the oven and wont form puddles.

How To Freeze Cookie Dough

If you decided to make the cookie dough but not bake the cookies just yet, you can store the cookie dough wrapped in plastic wrap for up to 4 days, or in the freezer for up to 2 months.

I recommend pre-scooping them into cookie dough balls for an easy fridge-to-bake method. However, you can also store the whole cookie dough in the freezer.

Just let the cookie dough thaw for about 2 hours before scooping!

Use a hand mixer to beat your butter and sweetener together. This is called creaming. Start with lower speed to prevent splattering, then increase as it starts to incorporate.

Your batter will make more cookies and theyll have more of a sugar cookie texture.

Please note: This method doesnt work quite as well with ghee or coconut oil, which is why the texture is a little different if using that, but it does still work to some degree.

Also, only do this for about 5 minutes. You dont want to go too long, or youll lose the air pockets that youre creating and the cookies will be too dense.

  • Almond Flour: Yep, no complicated flours here just almond flour!
  • Sea Salt: A pinch to enhance the chocolatey goodness.

  • Chocolate Chips: I like to use semi-sweet chocolate chips, but you could also use milk chocolate.

    I adapted this recipe from a chocolate chip cookie recipe on AllRecipes and made our recipe gluten free, egg free, dairy free, and soy free.

    Gluten Free Chocolate Chip Cookie Baking Notes

    With our cookies, you can make them crispier or chewier/softer depending on what you like. If you want these more crispy, bake for about 12-13 minutes. If you want these more chewy in the middle, bake for just 10-11 minutes.

    Since my husband loves crunchy cookies, heres another trick we like to do for extra crisp cookies: leave the cookies on the cooling rack longer and put them in a container that isnt airtight . This keeps the cookies crisp if thats your jam!

    I like my chocolate chip cookies chewy in the middle and a bit crisp on the edges, so I just bake these for 10-11 minutes and store them in an airtight tupperware-type container to keep them from getting crunchy.

    Youll notice that we didnt add any additional salt to this recipe since the King Arthur gluten free flour blend has salt in it already and the cookies also have baking soda.

    If your gluten free all purpose flour doesnt have salt in it already, you can add 1/4 teaspoon of salt to these if you like.

    Is Vegan Cookie Dough Safe To Eat

    Many people try not to eat regular cookie dough, as it contains raw eggs. However, vegan cookie dough is also tricky, as it contains raw flour. Flour can be a sneaky source for E. Coli so its best to not eat raw cookie dough, vegan or not!

    That being said, if youre by chance using heat-treated flour, then your vegan cookie dough can be safer to eat, much like edible cookie dough!
