Why Do People Make Such A Big Deal Over Gluten
The problem with gluten is that its extremely prone to cross-contamination. If you have celiac disease or an intolerance to gluten, whatever you eat shouldnt come into physical contact with a gluten-containing product.
But how often does that really happen? you might wonder. The answer: Quite a bit, often before that bowl youre impatiently waiting for is even manufactured.
Grains are a field crop, and many farms harvesting these crops grow more than one. And while this might be an extreme example, cross-contamination can start in the field. Farmers who grow wheat and oats might use the same machinery for both crops. Sometimes, this can cause one product to sift into the other, either during harvest, transport, or while being milled into flour. Suddenly, those gluten-free oats are no longer gluten-free.
The solution? If youre extremely sensitive to gluten, search for products that were manufactured in a gluten-free facility. This is what General Mills did with Honey Nut Cheerios and Lucky Charms: The products have always been made with oat flour, a naturally gluten-free flour. However, to combat cross-contamination, they began sifting out stray products from wheat, rye, and barley.

Always be wary of any processed foods that contain cranberries. This berry was ranked last on our list of fruits ranked by sugar content because it’s so low in the sweet stuff. Unfortunately, that usually means that manufacturers add more sugar to make up for their bitter taste, as you can see with the 17 grams of sugar, glycerol, corn syrup, honey, and molasses.

|Sumario:||Cereal bars have been an excellent vehicle for delivering functional ingredients to food market. Researches has showed that sorghum is a great source of phenolic compounds. Besides, it is a gluten free cereal, therefore a potential ingredient to celiac diets. Thus, a cereal bar with popped sorghum, sorghum extrudates, cashew fiber and dehydrated banana was formulated. Sensory acceptability of this product was determined by two panels: one panel composed of celiac individuals and another by non-celiac subjects. The product shelf life was estimated by the acceptability limit methodology. After remained stored for 120 days under 25°C, the shelf life was estimated at 163 ± 52 days. The sensorial study has not found significant differences in relation to overall acceptability between celiac and non-celiac individuals. This study suggest that sorghum co-products could be used successfully as a food ingredient to develop new formulations of the gluten free cereal bars.|

Which Grains Make Gluten
Gluten is found in barley, wheat, and rye. Someone with celiac can eat the remaining grains as long as theyre safe from cross-contamination. There are plenty of options for gluten-free dieters for cereals to add to their morning meals. Firstly, you can eat all whole grains except wheat, rye, and barley on a gluten-free diet. So, any cereal made from grains except these three works well with the diet.
Popular gluten-free cereals include quinoa, sorghum, rice, millet, amaranth, and oats. There is a controversial element to the gluten-freeness of oats, as they can be cross-contaminated. But, they are naturally gluten-free. So, choose oats labeled as gluten-free to be safe.
