What Dairy Products Are Gluten Free

I tried gluten-free Kraft Dinner (a.k.a. Kraft Macaroni & Cheese) | Robyn’s Gluten-free Living

All dairy that is unaltered including milk, butter, yogurt, sour cream, and cheese are naturally gluten free.

Excluding low-fat milk which is naturally gluten-free, it is the flavored, low fat, fat-free, or processed/spreadable variations that can contain added ingredients like gluten to help thicken or stabilize the product. To identify potential sources of hidden gluten look for these words on the label wheat ingredients, modified food starch, or maltodextrin.

This brand is the name behind Americas beloved nacho cheese, and it also has a wide range of cheese sauces. Ricos website clearly states that all its cheese sauces are free from gluten, making them safe.

Schwartz

Can I Make Kraft Macaroni And Cheese Without Milk Or Butter

This is almost dairy-free, which is why many people want to make it without milk or butter.

However, you still have dairy in the cheese powder as whey, which is milk protein, milk fat, and cheese culture.

If you want to skip dairy altogether, you would have to use artificial cheese or a natural, vegan cheese substitute.

If you just want to make it without milk or butter, you can use more water.

The problem with that is it wont have a very creamy consistency.

If you thin it out even more, it may be less cheesy.

If you add more shreds, it will be too clumpy and stiff like a starchy ball.

Even if you arent vegan, but you love macaroni and cheese and cant consume milk, here is that variation.

Choosing The Best Cheese

As you can see, Kraft American cheese is not the healthiest option for you. Cheese, however, can be difficult for people to give up. Luckily, you do not have to. You just need to know what to look for and what to avoid.

What To Avoid:

  • Avoid packaged, shredded cheeses. While the pre-shredded cheese you can find at the store may be convenient, it has anti-caking agents added in to keep all those little shreds from sticking together and forming one big clump.
  • Avoided powdered cheeses. Items like easy mac that contain a package of powdered cheese in it, although quick and easy to make, is not healthy.
  • Avoid cheese from a spray can. Need I say more about this one? That stuff cannot even qualify as cheese!
  • Avoid low fat or non-fat cheeses. You may think you are making the healthier choose when opting for a low fat or non-fat cheese, but those are actually heavily processed.

What To Look For:

My New Favorite Gluten Free Macaroni

If you use my new favorite brand of gluten free macaroni, which you see in the image above, you can refrigerate the boiled pasta before adding it to the cheese sauce of your choice. The brand is Rummo, and their gluten free pasta is a cut above.

Amazon does carry some Rummo brand gluten free pasta, but they dont often carry the elbow macaroni. Ive hunted it down, but from sources I consider too expensive for me to recommend in good conscience.

I also regularly use Barilla gluten free elbow pasta , and theyre great, too. But Rummo actually cooks al dente and isnt hard even when its cold. Thats just a gluten free miracle.

Easy Mac And Cheese Vegan Gluten

If you were to ask me 12 years ago what my must-have pantry staple was, I would be lying if I had said anything other than Kraft Dinner. Its rather shameful to admit as a lover of very good food. Perhaps my previous love of the infamous blue boxed pasta was built strictly on nostalgia, or maybe it was more about ease, convenience and cost. Either way, I was a KD kid through and through. Thankfully, I have upgraded to a vegan gluten free kraft mac and cheese recipe!

When deciding to eliminate dairy from my diet, I had to say good-bye to one of my most trusted lazy weeknight dinner options. I knew a replacement was in order and fast. Anyone who has ever ditched dairy can attest to how difficult that transition can be. Thankfully, a great deal of improvements have been made in the realm of vegan cheese making over the past decade. The options for quality wanna-be cheese have made the creation of recipes like this easy mac and cheese, SO much easier and tastier! If it werent for these cheesy life savers, the easy part of this easy gluten free kraft mac and cheese recipe would be a complete lie. Im thankful that I was forced to up my cooking game but its nice to take the easy way out from time to time!

Kraft Macaroni & Cheese Dinner: with Cauliflower Added and Gluten Free Review

Follow the manufacturer directions for boiling the gluten free pasta

After you drain the water from your pasta, rinse it with cold water. This will help prevent it from continuing to cook.

Add the cheese sauce immediately after rinsing the pasta with cold water.

The gluten free mac and cheese sauce is pretty fail-proof as long as you keep stirring it while it cooks.

Why Would You Want To Avoid Gluten

Certain medical conditions require people to avoid gluten. Celiac disease is an autoimmune condition in which people have damage to their small intestine if they eat gluten. People with a condition called non-celiac gluten sensitivity may also avoid gluten due to gastrointestinal distress or other symptoms.

Cheese That Is Not Labeled Gluten

If the packaging does not say gluten-free, then you will need to carefully read the ingredients on the label before purchasing. As a rule, cheese with fewer ingredients has a better chance of being gluten-free. A natural cheese, like Swiss or Jack, may contain only three ingredients: milk, salt, and enzymes, which means that it contains no gluten.

Processed cheeses, on the other hand, like American cheese usually include several different kinds of natural cheeses, like Colby, Cheddar or Jack, and stabilizing emulsifiers, as well as butter, milk, milk protein concentrate, and whey powder. Processed cheeses might also use artificial colors and preservatives, which may contain gluten. Artificial color and stabilizers or thickeners often contain trace amounts of gluten, so should be avoided. Manufacturers are getting better at clearly identifying wheat based products, so you may even see wheat listed on the ingredients, making this unsuitable for a gluten-free diet.

Shredded and grated cheeses can also be a potential problem, since the cheese may be lightly covered in starch, which may be wheat-based, or corn or potato. Again, be sure to read the label carefully for any wheat starch.

Avoid Cheese Packaged At Deli Counters

Its unfortunately also possible for any cheese to have gluten cross-contamination introduced when its handled or packaged. Many stores, especially more upscale supermarkets, buy large wheels or blocks of cheeses, and then cut them up to sell in smaller quantities. If this cutting and repackaging take place in the deli section where workers also make sandwiches, or in the bakery section where workers are using flour, the cheese can become cross-contaminated.

Therefore, its best to stick with cheese that was packaged at the manufacturing facility.

To tell the difference, the cheese thats repackaged at local stores usually is wrapped in basic plastic wrap thats held closed by a stick-on label, while cheese thats packaged at the manufacturing facility usually has a more substantial shrink-wrap-style plastic cover, sometimes with the label printed directly on it. If in doubt, of course, you should ask.

In addition, if you purchase cheese sliced at the deli counter, you risk that cheese being cross-contaminated in the slicing machine since a few sliced deli products contain gluten. Again, youre better off purchasing cheese that was pre-sliced and then packaged at the manufacturer, although some people have reported success by asking the store personnel to slice their cheese and other deli products in the early morning after the equipment has been cleaned and before its been used for gluten-containing deli products.

How Is Cheese Made

Kraft Just Released Gluten

Cheddar, colby jack, swiss, and brie These are just a few of the many different cheeses out there. All you have to do is take a stroll down the dairy aisle at your local grocery store to see that there are dozens of different types of cheese, each with numerous sub-varieties.

But how is cheese made, and does it contain gluten?

Cheese starts, quite simply, with milk. Most cheeses you are familiar with are made from cows milk, but other varieties like feta come from goats or sheeps milk and buffalo mozzarella comes, predictably, from buffalo milk. The milk is generally first tested for quality and purity, then pasteurized to kill potentially harmful bacteria. The manufacturer may also add more fat, cream, or protein to create a standardized base milk before continuing the process.

Once the base milk is ready, the starter cultures are added. Beneficial bacteria cultures facilitate the process of fermentation, which turns lactose, the natural sugar in the milk, into lactic acid. The type of culture and the fermentation process length determines the final flavor and texture of the cheese. Its this process that leads to the many different varieties of cheeses we all know and love.

Add the rinsed and drained pasta to a saucepan with 2 cups skim milk, 1 teaspoon salt, and a dash of cayenne pepper. Turn the heat to medium then stir constantly until the milk comes to a simmer Turn the heat down to low then stir constantly until the pasta is tender, another 12 minutes or so.

Be sure to stick to low heat because if the milk cooks off too quickly there wont be enough left to cook the pasta. See how thick the skim milk gets by stirring with the starches released from the pasta?

Once the pasta is tender add 1 cup freshly shredded cheese then stir until the sauce is smooth, adding in a splash of skim milk if you need it.

This is the fun part of the recipe because you can play around with the cheeses you like and/or have in the fridge you really cant go wrong! If you want to stick with a more classic sauce though, choose medium-hard cheeses like cheddar, gouda, and fontina.

Let the mac and cheese thicken for a few minutes with the lid on the pan, then scoop and serve! Make this once and youll be whipping it up from memory at least once a week its definitely a keeper. And you can, of course, use regular pasta in place of gluten free pasta, too. Mac and Cheese for all!

Is Kraft American Cheese Healthy

Kraft American cheese is not healthy. In fact, Kraft American cheese slices are considered one of the worst cheeses for you. The individually wrapped slices are not slices off of a real block of cheese, but formed separately in manufacturing, and they are loaded with unhealthy additives and preservatives that can cause a slew of diseases and ailments.

Aside from all the additives and preservatives, Kraft American cheese slices are loaded with sodium. One single slice has nearly 300 milligrams of sodium! That can do serious damage to your waistline if consumed regularly, along with causing high blood pressure and heart disease.

In addition to the scary amount of sodium in a single slice, Kraft American cheese slices are made with vegetable oils that are loaded with unhealthy fat putting you at risk for clogged arteries and obesity.

I have never tried to make this mac and cheese recipe myself dairy free. But I think its worth trying for 2 of the 3 methods.

Here are the substitutions I would try, dairy ingredient by dairy ingredient:

  • For the sliced cheese: Daiya sliced American-style cheese
  • For the butter: Miyokos Kitchen or Melt brand vegan butter
