If youre on my email list, I asked you what your favorite brands are, and you poured your gluten-avoiding hearts out! Ive been through many loaves of bread. If it was a total dud , Im not reviewing it here.

My intention in publishing these reviews is not to stir up controversy, harm anyones business or even support anyones business to be honest. When I posted something on my Facebook page about how Udis bread is hard to separate, someone angrily accused me of endangering their business.

Clearly, that isnt my purposebut I also have no obligation to pretend that reality isnt what it is. My intention is simple. I want to help you, the consumer, spend your money wisely.

Packaged gluten free products are more expensive than conventional products, and always will be. The market for these products is smaller, and the ingredients are more expensive .

But weve come a long way since 2004 when my family first went gluten free. Back then, we ordered some bizarre gluten free packaged bread from Canada that not only couldnt be eaten untoasted but lost its toast within minutes. And the cost was insane. Well, weve come a long, long way since then.

Everyone knows that I love baking fresh homemade gluten free bread. My children adore it when they have it for their school lunches, and my husband loves it because its cheaper.

That isnt the stuff really of my dreams, but it is of theirs. But its just not realistic.

What Town In Texas Is Famous For Kolaches

Village Bakery West, TX

West, TX is the kolache-kingdom of Texas and it was officially dubbed Home of the Official Kolache by the Texas Legislature in 1997. So it makes sense that tucked away in this town is the little bakery that first began selling Texass favorite treat in 1952.

A Trader Joes Gluten Free Bread Worth Buying

When all TJs sold was their gluten free white sandwich bread, I didnt include it in this best-of gluten free bread list. All 3 of my children agreed that it just was not very good.

The loaves were so tiny that it was actually quite expensive in the end. But theyve since come out with a sliced gluten free Italian bread that is really good. So its included as a bonus entry.

I count 12 generous slices in a loaf, each of which is the size and shape of what I remember sandwich bread to be. The slices have a tender interior thats soft without being gummy at all.

It toasts well, too. And the end pieces are full-sized, which is why I counted them among the 12 slices.

Yeast Free Gluten Free Dinner Rolls

My #1 tip for gluten-free bread is to soften it in the microwave for 5-10 seconds! Most breads are kept frozen anyway, but they all tend to harden over time. Do yourself a favor and pop it in the microwave for a few seconds, as it makes a big difference. Also, I usually keep gluten-free bread in the freezer or refrigerator to maintain freshness as long as possible.

Proof Until Doubled In Size

Once youve shaped the rolls, transfer them to a square 8 inch baking tin that youve either lightly buttered or lined with parchment/baking paper beforehand.

Youll need to proof the rolls in a warm place for about 1 hour or until about doubled in volume. Lightly cover them with a sheet of plastic wrap to prevent them from drying out. If your kitchen is on the cold side, you can proof them in a lukewarm oven the ideal proofing temperature is around 79ºF/26ºC.

As you can see below, the rolls initially only just touch each other. However, after proofing , they will sit snuggled rather closely together.

Incredibly Easy Gluten Free Crescent Rolls Aka Almost Croissants

  • 270 grams of flour mix above
  • 4 teaspoons fresh dry active yeast, I use Saf-Instant Note: always store yeast in the freezer. Remove from freezer 15 minutes before using.
  • 2 tablespoons + 1 teaspoon cane sugar
  • 1/2 teaspoon salt
  • 1 stick + 2 tablespoons organic unsalted butter, chilled and diced just before using
  • 1/2 cup milk or water, warm, as needed 100-110 degrees
  • 1 egg, beaten for final wash
  • gluten free flour for board
  • In a large bowl add the yeast to 1/4 cup of the warm milk or water, the 1 teaspoon of sugar and set aside to double.
  • In the large bowl of your food processor place the flour, sugar, salt and xanthan gum, pulse to combine.
  • Add the very cold diced butter and carefully pulse just until butter is in small but clearly visible pieces. Do not over mix.
  • Turn the flour mixture into the bowl of milk and yeast.
  • With a large spatula gently fold the dry into the wet, moving quickly so the butter doesnt melt. Chopping a little with your spatula to break up the chunks until the dough starts to come together. It will still be very rough. Add the rest of the milk if dry. I used 1/2 cup.
  • Now gather up all the pieces and press into a ball and knead a few times in the bowl. Touching the dough as little as possible and moving quickly will keep your butter from melting.

    How To Make Gluten Free Crescent Rolls:

    Are you ready to give this gf crescent rolls recipe a try? Please read through all of the steps before starting.

    Step 1: Add the yeast and 1 teaspoon sugar to filtered warm water to a large mixing bowl and allow to sit for 5-10 minutes. Make sure your water is no hotter than 110º F.

    *I highly recommend using filtered water because chlorine and other chemicals in water can affect yeast growth.

    Step 2: Add the melted butter, sugar, levain , and egg to the yeast mixture. Mix well then add the gluten free flour. Mix into a wet dough. You can also use a standing mixer for this if you prefer.

    What is a Levain? Also known as a very plain sourdough starter, French pastry chef Dominique Ansel recommends this strongly in his croissant recipe that I was trying to convert to gluten free. You can use my gluten free starter recipe to create one if you choose. It takes about 5 days to grow a levain.

    *Although using levain is completely optional for crescent rolls, I feel it is worth using if you have one. Note to use a starter made from basic flour. Stronger starters with buckwheat and other flours will give an off-flavor.

    Step 3: Cover the bowl with plastic wrap and allow the crescent roll dough to rise for 1-2 hours. I let mine rise overnight in the refrigerator.

    These gluten free Texas Roadhouse-style rolls are tender, light and fluffy, but theyre safely gluten free. Let that bread basket pass you by and try these instead!

    Up front true confession: Ive never been to a Texas Roadhouse Restaurant. I looked them up and it turns out that they opened a location right near me. Id totally be in it for the rolls, though, and since they dont make them gluten free well you know how that goes.

    The bread dough, like the others in the style of those in this new Gluten Free on a Shoestring Bakes Bread style, does better with a slow first rise in the refrigerator. I prefer at least 12 hours for that cold rise.

    I have also made it in one day, by allowing the dough to rise and then just chilling it a bit in the refrigerator for easier handling. Although the dough is a bit harder to handle and the rise is not exactly as uniform, it still works quite well.

    The secret to that thin, crackly, buttery crust is to brush the rolls with honey butter both right before and right after baking. And they bake just until the tops are lightly golden brown.

    The blunt edges on the four sides of these square rolls coax the shaped rolls to rise up instead of out. So theyre just these puffy, sweet little pillows of gluten free bread, like you never thought youd taste bread again.

    To make the recent rolls in advance I recommend making them through the second resting period when the dough is folded like a letter.

    The next day, rest the dough at room temperature for 10 minutes before rolling out and proofing.

    Baked rolls can be kept in a plastic bag at room temperature for 5 days. After the 3rd day, they will start to feel stale. No worries, just pop them in the microwave for 10 to 20 seconds to soften up.

    Is Store Bought Potato Bread Gluten

    Although store-bought potato bread is not normally gluten free, there is no reason why you cant produce a gluten free version of the bread using alternative flours instead of regular flour. Rice flour is often the most effective gluten-free flour to use in potato bread recipes. Its flavor is neutral, as is the texture of rice flour, which is fine and light in texture and mild in flavor.

    How To Make Cinnamon Rolls Ahead Of Time

    To make this recipe ahead of time, I recommend making and shaping the cinnamon rolls and then placing them in your refrigerator, tightly wrapped, up to 24hrs. I do not recommend making them any further in advance since the baking powder will lose its oomph.

    I have not tested freezing the unbaked cinnamon rolls but had great success freezing the fully baked, unfrosted cinnamon rolls. You can either defrost them at room temperature or use the defrost option on your microwave. You may also rewarm them in the oven at 325F for 10-15 minutes.

    Practice Patience While Your Yeasted Dough Rises

    If you only take away one piece of advice about baking with yeast, it should be the importance of patience. Of course, you dont want your rolls to overproof , as theyll break apart even before they bake in the oven. But yeast takes time to grow.

    Baking with yeast is also very environment-dependent. If the environment is cooler, the yeast will continue to grow, albeit much slower.

    Resist the urge to pop them in the microwave for a few seconds, otherwise, youll be left with a chewy bun that may harden up as soon as it cools down. But if the microwave is the only option you have, then cook the bun on high for no more than 10 seconds. If the GF hot dog bun is still frozen, put it in the oven for 5 more seconds, repeating in 5-second intervals until fully defrosted.
