How To Make Ricotta Stuffed Shells


1. Preheat the oven to 375ºF.

2. Cook the pasta according to your package directions until its al dente .

3. Make the filling by adding all the ricotta ingredients to a high-powered blender, adjusting the salt and acid as needed, and cooking the spinach with 1 teaspoon of olive oil in a pan over medium heat until reduced in size and wilted.

4. Mix the ricotta cheese with the cooked spinach and spices.

5. Add 2 cups of pasta sauce to the bottom of a 9×13 pan. Stuff about 1 tablespoon of the ricotta cheese mixture into each shell and nestle into the tomato sauce until youve used up all your ricotta and shells.

6. Drizzle the remaining tomato sauce over the shells, cover the pan with foil, and bake for 30 minutes.

7. Carefully remove the foil, top with fresh basil, and serve immediately.

How To Make Vegan Stuffed Shells

First things first â choose your pasta. I could not find whole wheat jumbo pasta shells. So, I had to use just regular shells.

However, I did find these gluten-free brown rice jumbo shells and thatâs huge for those who typically have to avoid pasta dishes.

  • Pasta: Cook the pasta according to the directions on the package.
  • Tofu Ricotta: Prepare the vegan tofu ricotta while the pasta cooks and evenly spread 1 ½ cups of the on the bottom of an 8Ã8 baking dish or 9Ã13 baking dish .
  • Stuff The Shells: Once the pasta has finished cooking drain it and fill each shell with 1-2 heaping tablespoons of the vegan ricotta and place in the baking dish. Continue filling the shells until you have used all the tofu ricotta. FYI, I was able to get 5 rows of 3 in an 8Ã8 baking dish.
  • Bake: Pour the remaining over the shells and bake uncovered for 25 minutes until the sauce is bubbling. Remove from the oven, sprinkle with vegan parmesan, and serve.
  • And, just like that, a delicious, healthy, vegan, restaurant-style Italian meal even the kids are going to swoon over!

    Make It Your Way: Ingredient Substitutions

    Please remember that recipes are just a starting point.

    How can you make these ricotta stuffed shells using what you already have? Here are some ideas

    • Gluten-free? You can sub gluten-free jumbo shells. If you cant find jumbo shells, you can alternatively use gluten-free lasagna sheets rolled up.
    • No spinach? Use another type of leafy green: baby kale, lacinato kale , watercress, or arugula.
    • No ricotta-making ingredients? store-bought will work . Keep in mind that itll be a little pricey for the amount youll need for the stuffed shells.
    • Sub for ricotta? You can also use cashew cream.
    • Dont have all the dried spices? You can really use any Italian spices in place of the dried spices in the recipe. If you want to use an Italian spice blend that will work great or use other dried herbs such as oregano, thyme, or rosemary individually.

    How Long Will Vegan Stuffed Shells Last?

    Vegan Stuffed Shells can be kept in the fridge for up to a week in an airtight container.To reheat, place the shells in an oven-safe dish and warm in a 325ËF oven for 10-15 minutes. Once they are ready simply remove and serve.

    Can I Freeze Vegan Stuffed Shells?

    Yes! Prepare the stuffed shells according to the directions but donât cook them. Then, store in a freezer-safe dish and cover with plastic wrap and aluminum foil. You can store this in the freezer for up to 4 months.When youâre ready to enjoy simply bake the vegan stuffed shells according to the recipe instructions but add an extra 10-15 minutes. Keep in mind every appliance is different so always keep an eye on it as it cooks.

    Can I Make Vegan Stuffed Shells Ahead Of Time?

    Yes, absolutely! This recipe can be prepared the day before. Follow all the instructions up until baking, cover, and place in the fridge. Follow regular cooking directions when youâre ready to bake.

    Gluten Free Pasta Shells with Greek Yogurt Rose Sauce. Looking for a delicious vegetarian option? Something simple and healthy, creamy yet light? Then this recipe for Gluten Free Pasta Shells with Greek Yogurt Rose Sauce will be your new easy meatless choice for dinner!

    With this recipe I’m taking popular restaurant fare and lightening things up a bit.

    Instead of the full fat whipping cream used by chefs in professional kitchens, I’ve substituted healthy Greek yogurt instead. It is still creamy, still has tang, still so delicious.

    To make this meal even more nutritious and gluten free, I used brown rice pasta shells. I’ve used brown rice penne noodles in the past to moderate success so, I thought I’d give the shells a go.

    Another bonus to the brown rice pasta is the extra points awarded to me from my grocery store’s new loyalty card. You rack up points towards $$ off your groceries!

    They even gear bonus points to groceries you buy regularly.

    For instance we always buy onions, tomatoes, berries and cheese.

    Most weeks the bonus points have been on one, if not all, of these items. It’s super cool for those who spend most of their grocery dollars in one store.

    I’ve really seen the points adding up already!

  • Make a mound with your flour. …

    My wife really missed stuffed shells when she went gluten free. I cant blame her. Whats not to like about pasta stuffed with a cheesy filling? Thankfully, gluten free jumbo shells are available.     Though Barilla does offer a gluten-free line of pasta, it does not sell jumbo pasta shells.

    Barilla is one of the leading pasta companies and major suppliers of pasta in the U.S. and internationally. They have an entire line of gluten-free pasta types, including spaghetti, penne, elbows, rotini, fettuccine, and lasagna noodles.

    While you may not see jumbo shells on this list, there are still many pasta dishes you can make with these gluten-free options.

    If you had your heart set on stuffed pasta, lasagna would be the closest option to a stuffed shell.

    You could even create a semblance of stuffed manicotti by rolling the lasagna noodles into a large cylinder that you can stuff with meat, ricotta, or a vegetable mixture.

    Barilla gluten-free pasta uses a mixture of corn and brown rice flour and is surprisingly similar in taste and texture to their original wheat pasta.

    Chicken Parmesan Stuffed Shells Recipe Tips

    Under Cook The Gluten Free Shells Under cooking the shells keeps them from being mushy. Cook the shells 1 or 2 minutes less than the suggested cooking time on the package. They will continue to cook in the oven and hold their shape.

    Swap out the Ricotta Cottage cheese can be used in place of the ricotta for those that dont like ricotta cheese.

    Gluten Free Breadcrumbs Gluten Free bread crumbs work well as a topping and mixing them with a little melted butter helps them brown and crisp up.
