They do require a bit more effort than the originals. Instead of opening a can of sweetened condensed milk, youve got to make your own homemade paleo + vegan version by reducing down the coconut milk and coconut sugar. But, its a process that doesnt require a lot of thought, just a distant eye and the occasional stir to keep it from burning.

If you ask me, thats not a lot to do to cut out the major amounts of sugar that wouldve been in that can of sweetened condensed milk. Besides that, everythings pretty much the same in terms of effort.

The crust is made out of crushed nuts instead of crushed graham crackers. With a little bit of cinnamon stirred into the nut mixture, you wont even notice the difference!

The toppings are super similar to the classic recipe, with the exception of leaving out the butterscotch chips. I couldnt think of a reasonable substitute, and the original chips werent too much of a loss for me. The bars are still plenty sweet and decadent without them!

One Paleo Bar from Costco contains 230 calories, 14 grams of carbohydrates, 6 grams of protein, and 19 grams of fat.

Because they are made primarily of nuts and coconut, the nutrition profile is going to be skewed a bit higher on the fats side. Just be aware of this, and balance your other meals throughout the day.

Lets Talk About The Ingredients

While we arent a paleo exclusive house, I do like to keep ingredients on a rotation so we arent just eating the same ingredients all the time. Most granola bars have an oat base, and since we do oats in other places throughout the week from baked oatmeal to breakfast cookies, I wanted to make this staple, easy to make bar without oats to change the nutrient profile up a little bit. You can swap the nuts for whatever nuts that you have on hand and I do think that if you are nut free you can use all seeds. The combination power packed nuts, seeds, and coconut, makes for a balanced fuel for everyone in the house!

Heres how to make sure youre choosing a smart snack rather than a smartly marketed candy bar: These are the 10 best paleo bars out there. Bars have minimal ingredients, no refined sugars, healthy real foods within and some with a healthy dose of protein. If youre looking for healthy grain free bars, look no further.

Layer #: Shortbread Base

It might be a little generous to call this a shortbread base because its not dense with a slight crispness, as shortbread should be. There. I said it. Its a slightly soft, cakier base than the traditional version and I assure you: you will be too busy grabbing seconds to notice.

The base is adapted from the sweet version of my paleo pie crust recipe , which you simply press into an 8×8 baking pan and pop it in the oven for a few minutes while you start to prepare your other layers.

Dont skip this early oven visit. This crust absolutely does need to be pre-baked before the layering can begin. This step is called blind baking, which refers to the empty crust being baked alone before it is baked with something inside or on top. The blind bake sets the crust and forms a bit of a moisture shield so that when you start layering all that melty chocolate and gooey caramel on top, it wont seep in to the crust and make it too soggy.

Serving Paleo Lemon Bars:

These Lemon Bars are best made 24 hours in advance of when you have to serve them. They only need about 90 minutes to cool, but if they can set in the refrigerator overnight theyll be even better!

Powdered Sugar: These lemon bars are fine to serve as is totally plain, or you can dust the lemon squares with powdered sugar. Powdered sugar isnt paleo, but it makes the bars pretty and hides any imperfections. If the lemon bars are at all moist/have condensation at the top of them, blot with a paper towel before adding powdered sugar. Otherwise, the sugar will get absorbed

Serving Size: I divided this into. 9 servings, but you could cut in to 16 if youd like smaller lemon bars.

Serve chilled: These paleo lemon bars should be served chilled. Theyre fine to sit out at room temp for 2-3 hours, but they will get soft, and theyre meant to be eaten cold.

Healthy Lemon Bars In 5 Easy Steps

This healthy lemon bar recipe couldnt be easier to make. Youll have silky, delicious lemon bars in no time:

  • Prep your pan. Line an 8×8 inch pan with parchment paper, and please try to avoid a glass pan as the crust may burn with glass.
  • Make the shortbread crust. Whisk together the dry ingredients and stir in the wet until a dough forms. Press the dough into your pan and bake.
  • Make the lemon filling.Whisk together all of your lemon filling ingredients until theyre very well combined.
  • Layer the bars. Once your crust is done baking, immediately pour over the lemon filling, lower the oven temp and bake until the bars are set.
  • Cool & enjoy. Let the bars cool at room temp and then in the fridge before slicing them. Top with powdered sugar & lemon zest and enjoy!
  • The Method : : Mix The Wet Ingredients


    Next, youll want to melt the honey, coconut oil, and almond butter in a sauce pan, and pour into the food processor. The wet ingredients are what gives the stick to the granola bar to bind the pieces together, so you really shouldnt try to adjust the amounts of these, or youll end up with a crumbly mess if you use less, or a gooey mess if you use more. Pulse the food processor to combine the dry pieces with the wet ingredients. You can pulse until the pieces are still on the visible side, or until they are very small and unrecognizable. I like to go somewhere in between I do have coconut chip detective that will refuse the bar if she can see the coconut chips but she has no idea they are there in this form ! The mixture should look like this ::

    How To Make Pecan Pie Bars

  • Preheat the oven to 350 degrees F, and line an 8×8 baking pan with parchment paper.
  • Stir together all ingredients for the crust in large bowl. Press into the bottom of the prepared pan.
  • Bake for 10 minutes until the edges are golden, then cool for 10 minutes.
  • While the crust is cooling, whisk together ghee and coconut sugar in a saucepan over medium heat until smooth and creamy.
  • Remove from heat. Stir in maple syrup, vanilla extract, and sea salt.
  • In a large bowl, crack the eggs and whisk.
  • Pour the heated filling mixture into the eggs slowly while continuously whisking so the eggs dont cook.
  • Stir in pecans, then pour the whole thing over the crust.
  • Bake for 45-50 minutes until the filling is set.
  • Cool for 1 hour, then refrigerate for at least 2 hours. Slice into 16 squares, and enjoy!
  • Is Protein Bars Ok On Paleo Diet

    There are some paleo protein bars, too, that can be extremely useful pre- or post-workout. While the paleo protein bars may be 100% paleo, they can also be a good snack if you stay within your healthy lifestyle after exercise. They may keep you on track, even though they are all made from animal products.

    • Granola Bar Pan: the funny thing is, I tested this paleo granola bar recipe so many timesonce in an 8-inch square pan, once in the granola bar pan, once again in the 8-inch, then again in the granola bar pan. Then, repeat. Lol. Time and time again, Erik and I preferred the paleo granola bars made in the granola bar pan. They take a little longer to prepas youll have to fill in the crevices & pack in the mixturebut that extra 5-7 minutes is totally worth it. You get the crispiest, most delightful edges. I felt more like I was eating a decadent dessert than a healthy paleo snack.
    • Raw Coconut Chips: I actually snack on these! Of course, I would also find a way to sneak them into my paleo recipe, too! Youll be blown away by how generous the coconut chips are in size, taste and aroma.
