Add gluten free all purpose flour to a mixing bowl along with brown sugar, baking soda, baking powder, salt, cinnamon and nutmeg and mix together.

Then add in grated carrot, flax eggs , applesauce, oil, vanilla, apple cider vinegar and chopped walnuts and mix into a thick batter.

Divide between two 8-inch prepared cake pans and bake for 30-35 minutes.

    I made Julies recipe for Cinnamon Crunch Coffee Cake, and I was amazed at not only how easy it was to make, but how light and fluffy the cake baked up. I cant imagine anyone being able to guess that it was both vegan and gluten-free.

    The Vanilla Cake Mix allows you to get creative and add whatever ingredients you like to turn it into carrot cake or raspberry cake or whatever floats your boat. I swirled in some melted chocolate to create a marble effect, then I frosted it with chocolate frosting and topped it with chocolate chips. The cake was moist and delicious.

    Muffins, doughnuts, cake, cupcakes.It is amazing. I highly recommend using the suggested coconut oil..I have to explore the brownie mix more so now..

    This cake mix is amazing! I made two 8 inch cakes, layered dark, sweet cherries in the middle and covered the entire thing with chocolate frosting YUM! I love to bake but when I dont have time for shopping and measuring, this will be my go-to option. Cant wait to experiment with the Brownie Mix!

    Amazing! I used it to make a blueberry coffee cake. Just add 1 cup of blueberries to mix and cinnamon/brown sugar crumble on top. Best dessert Ive had in ages!

    What Can You Use As An Egg Replacement

    When making these cookies you need to replace 2 eggs with an equal amount of a vegan egg replacement. I choose to use ground flaxseeds for mine, but here are a few other options that would work as well:

    • Ground Chia Seeds. To replace a single egg you need to mix 1 tbsp of ground chia seeds with 3 tbsp of water. Let it sit for 5 minutes to thicken up and then its ready to use.
    • Apple Sauce. To replace the eggs traditionally used in this recipe you can add 1/2 a cup of applesauce to the mix.
    • Bananas. You can replace the eggs traditionally used in the recipe with 1/2 a cup of banana. Which is around 1.5 bananas according to this calculator.
