How To Make Vegan Banana And Oat Cookies

Almond Butter Oatmeal Cookies | Gluten-Free

Preheat the oven to 180°C .

Peel the bananas and add to a large bowl. Mash thoroughly with a fork until you have a thick liquid consistency .

Add the oats and mix well to create a batter .

Using a fork or spoon , divide the mixture into roughly 8 even balls and space these out on a non-stick baking sheet. If you don’t have a non-stick baking sheet, use a sheet lined with greaseproof paper or a non-stick baking mat.

Use a fork or spoon to flatten the balls into round discs and tidy up the edges. The shape won’t change much during cooking, so decide on the size at this stage.

Bake in the oven for around 12-15 minutes or until the cookies are set and starting to turn slightly golden. Remove from the oven and allow to cool before eating.

These cookies should be stored at room temperature in an airtight for up to a week.You can even freeze the cookies for a couple of months.

Tips To Make The Best Recipe

  • Do not over-bake the cookies, as they continue to cook as they are cooling down. We want these cookies to be soft and chewy, so remove them from the oven when they are just done. Also, they dont contain any eggs, so you can under-bake them.
  • If you find your dough to be too thick, add more banana or even some liquid sweetener, like maple syrup or agave. If the dough is smooth and drippy, add more oats!
  • These cookies DONT spread much, so make sure the cookies are the size and thickness you prefer.

A Few Notes On The Recipe

Chewy Oatmeal Raisin Cookie Recipe (Vegan, Gluten

To make these oatmeal cookies, it is best to use room temperature eggs.

The coconut oil is melted for the recipe, and should be cooled slightly before whisking in with the other wet ingredients, otherwise the hot coconut oil could cook the eggs! That would be no bueno.

The cookie dough is thick enough that it can be formed into balls with your hands but you could also scoop with a spoon or a cookie scoop like this one. You can make them any size you like, but keep in mind that the baking time will vary depending on the size. I used about 2 tablespoons of cookie dough for each cookie and baked them for 15 minutes.

Before baking, flatten the cookies ever so slightly with your fingertips so that they are not too thick when they bake.

Give the cookies enough room to spread on the baking sheet about 1 1/2 inches between each cookie should be plenty. You will probably want to bake them in two batches.

If you want some nice melty chocolate pieces on the top of your cookies like you can see in these pictures, set aside some of the chocolate chunks and press them into the tops of the cookies just before baking.

What Makes These Oatmeal Breakfast Cookies Special

These cookies are chewy and soft, and not too sweet. Theyre made with a combination of certified gluten free oats and oat flour, so they hold together beautifully even though theyre completely whole grainand free of refined sugars.

Since theyre relatively low in fat and low in sugar, theyre not really crispy. Plus, theres moisture in the honey that keeps them soft.

Theyre a true alternative way to eat oatmeal in the morning. In fact, the only ingredient thats in these cookies that you wouldnt find in a bowl of oatmeal is the eggs!

No white rice flour is necessary at all for these breakfast cookies, but I wouldnt call them flourless. I reserve the term flourless for recipes that truly have absolutely no flour of any kind.

What Ingredients Are In Keto Oatmeal Cookies

  • Butter A lot of cookie recipes require at least a stick of butter, but this one only uses a ½ stick instead. Make sure you soften your butter first. Let it sit on the counter to come to room temp.
  • Low Carb Sweetener I chose to use Lakanto Golden Monkfruit sweetener in this recipe. But you can use another one if you prefer.
  • Almond Flour Be sure to use finely ground almond flour, and not almond meal. My favorite brand is Kirkland Blanched Almond Flour.
  • Egg 1 egg.helps to bind the ingredients.
  • Baking Soda ½ tsp
  • Oat Fiber Gives our diabetic oatmeal cookies a real flour-like taste. You almost think that there is wheat flour in them by the taste.
  • Unflavored Beef Gelatin Might sound stranges but it gives these sugarless oatmeal cookies the texture that is found in real oatmeal cookies.
  • Spices ½ tsp of salt, and ¾ tsp of cinnamon.
  • Vanilla Added flavor.
  • Slivered Almonds Place the slivered almonds into a food processor and chop. This mimics the texture of oats.

These oatmeal cookies are super easy to make! No fancy equipment or ingredients required.

Much like just about any cookie recipe, the dry ingredients are sifted together in one bowl, the wet ingredients whisked together in the other, and then they are combined and mixed together until the thick cookie dough forms. The dark chocolate chunks are folded in at the last minute.

The cookie dough will be thick enough to roll into balls with your hands, but you could also scoop the batter with a spoon or a cookie scoop. They are baked for 13-15 minutes until puffy and golden brown on the edges.

If you decide to go for it, the sea salt is sprinkled on right when they come out of the oven for that perfectly salty crunch!

Blanched Almond Flour Versus Almond Meal

Blanched almond flour is made from ground up almonds whose skins have been removed. This flour is much lighter in color than almond meal. Due to the peeled skins, blanched almond flour is much less coarse than almond meal.

Blanched almond flour is highly recommended for baking. It is the basis of these Paleo Chocolate Chip Cookies and Banana Muffins with Almond Flour.

On the contrary, almond meal is made from ground up almonds with their skin on. Almond meal is darker in color and more coarse than blanched almond flour.

Both blanched almond flour and almond meal can be made at home. Using a blender, add almonds and blend until a powder is formed. This process usually takes several minutes. If you keep blending, you will end up with Homemade Almond Butter!

These healthy trail mix cookies are so simple to make!

  • Prep: Get your oven ready by preheating to 350 degrees F. Line a baking sheet with unbleached parchment paper or use a silicone mat and spray with cooking spray.
  • Make eggs: Whisk together the flaxseed and water in a small bowl. Let the mixture sit for 10 minutes.

  • Combine wet ingredients: Mix melted coconut oil, vanilla, cinnamon, baking soda and salt. Add in the flaxseed mixture and whisk well.
  • Add dry ingredients: Add oats and oat flour and mix well. Dont be surprised that your dough will come out pretty thick.
  • Add trail mix: Throw in nuts and dried fruit and stir.
  • Form cookies: Scoop cookie batter onto baking sheet using a large ice cream scoop or a cookie scoop . Flatten with the back of the scoop or a large spoon. Dont worry, these cookies will not spread out more during baking.
  • Bake: Bake for 20 minutes. Then remove from the oven and let the cookies cool for a minute before transferring to a wire rack. Let them cool completely.

Can You Prepare These Cookies In Advance And Freeze Them Until Needed

As mentioned above, I dont recommend keeping the scooped-out balls of cookie dough prepared exactly as per the recipe below in the fridge or freezer for a long period of time, as the cookies wont spread out enough during baking, and theyll end up much too thick.

However, if youre making these cookies exclusively with the intention to freeze them for baking later, you can make them with about 20-30g of gluten free flour blend less than is required in the recipe below. Then, chill the cookie dough in the fridge until its firm enough to scoop, and freeze the scooped-out balls of cookie dough until you want to bake them.

What Can I Use Instead Of Real Oatmeal In Low Carb Cookies

Easy Gluten Free Vegan Oatmeal Raisin Cookies (Vegan, Refined Sugar ...

To replace the real oatmeal with something that is more suitable for your low carb lifestyle I have 2 recommendations for you.

  • Sliced Almonds Chop them in a food processor to get them to be more like the size of real oats.
  • Coconut Flakes Also chopped into smaller pieces.
  • Both of these ingredients replace the use of oatmeal, while still giving you delicious Low Carb Oatmeal Cookies.

    Making The Cookie Dough

  • To a large bowl, add light brown sugar, granulated sugar and orange zest. I like to rub the orange zest into the granulated sugar with my fingertips beforehand, as that helps to release the essential oils from the zest and makes the cookies even more fragrant.
  • Add the softened butter.
  • Whisk it all together until pale and somewhat fluffy . You dont need to use a stand or hand mixer for this, you can do it by hand using a balloon whisk. Of course, if you prefer, you can use a stand mixer fitted with a paddle attachment or a hand mixer fitted with the double beaters.

    Once the cookies are flash-frozen , place the cookie dough balls into a freezer bag. Frozen raw cookie dough can actually last 9 to 12 months in the freezer.

    Yes, you can freeze Keto oatmeal cookies!! Isnt it great to be able to freeze cookies and pull them out whenever you want a snack?

    To freeze these keto oatmeal cookies, place them in either a Ziploc bag or an airtight container, then place them in the freezer. They will stay fresh for up to 3 months.

    When ready to eat, pull them out and place them on the counter until thawed.

    Cranberry Walnut Oatmeal Cookies {Gluten Free + Refined Sugar Free ...

    As I already mentioned oatmeal isnt exactly a great option for Keto due to its carb content. However, you can still make low carb oatmeal cookies with almond flour and a few other ingredients as a substitute. What are those other ingredients you ask?

    We chose to use a combo of oat fiber and unflavored beef gelatin to give both the texture and the flavor of oatmeal cookies. We also used slivered almonds to mimic the texture of oats.

    Another clever substitution that can be used instead of oats, is coconutflakes. You can add chopped coconut flakes to your keto oatmeal cookies but its not my favorite so thats why I chose to use almonds instead.

    Simple Oatmeal Cookie Icing

    Im personally a big fan of old fashioned iced oatmeal cookies, and havent had them since I was a kid.

    So for these vegan oatmeal cookies, I decided to transform them into the classic iced oatmeal cookie, completely dairy free.

    For the icing, youll need just powdered sugar and dairy free milk. You can definitely add in a teaspoon of vanilla for flavor if desired.

    Mix together the powdered sugar with the dairy free milk . Then lightly dip the cooled oatmeal cookies into the icing. Pull the cookie up and slightly twist the cookie to help the icing stop dripping.

    Place the cookie on the cooling rack again and repeat!
