Digiornos Gluten Free Pizza

DiGiornos gluten-free frozen pizza was only fare in my opinion. The crust is ultra thin, and I personally wanted something more substantial from my frozen pizza.

It has an overall delicious and savory pizza taste, I just wish it had a thicker crust. The Nima Sensor is all smiles, which means this pizza is definitely safe and gluten-free!

You Mention A Pizza Stone In Your Directions I Dont Have One

First, I highly recommend getting a pizza stone if you dont have one. It really makes a huge difference when you make gluten-free pizza.

But no worries. If you dont have one, simply use a heavy baking sheet.

If you dont have a heavy baking sheet then you can use a cookie sheet. Let it preheat in the oven just as you would a pizza stone.

You can do this before you make your gluten-free pizza dough.

What Is Gluten Free Pizza Crust Made Of

This yeast dough starts with one cup of warm water. It should be about body temperature or slightly warmer. Be careful not to use hot water, which will kill yeast, and cold water, which wont allow it to activate.

  • Warm Water: 1 cup, about body temperature .
  • Instant Dry Yeast: This usually comes in little packets of about two teaspoons, so youll need a packet . Its also known as Rapid Rise or Fast-Acting, and doesnt need to be proofed.
  • Gluten-FreeFlour: As weve talked about, this recipe uses two cups of gluten-free, 1:1 flour.
  • Salt: A teaspoon of salt seasons the crust perfectly!
  • Sugar: I like to add one tablespoon of sugar for a little flavor boost.
  • Baking Soda: ¼ teaspoon of baking soda is important for the texture of this pizza crust.
  • Olive Oil: Youll only need about a tablespoon of olive oil for this recipe.

Understand The Importance Of Yeast

In any recipe, yeast can be used to help give rise to your dough. Yeast creates gas that, when cooked, allows your dough to expand. This air helps the inside of your pizza crust stay soft and chewy, while the heat from the oven creates a browned crispy outside. Because there is no gluten, gluten free dough often lacks the structure that most wheat flours provide. The amount of yeast needed to create that structure will vary per recipe, and many recipes may call for other ingredients that may not commonly be found in pizza dough to help create that structure.

Just because youre avoiding gluten doesnt mean you have to avoid pizza! And if youre skeptical, just wait until you try this easy recipe.

A lot of us who are gluten-free have been working with gluten-free recipes for years, and in the early days, that wasnt always a lot of fun. But these days, gluten-free cooking has come a long way! There are gluten-free workarounds for just about everything, including pizza crust!

My version is very similar to a regular wheat-based pizza crust, using mainly flour, oil, yeast and water. I also add a little bit of baking powder and a spoonful of sugar to my dough, helping to boost the rise in the dough, and give it a little more flavor.

Another nice thing about this recipe is that, although I do add yeast, you dont have to worry about letting the dough rise or punching it down. That makes this very quick and easy to make, even for a weeknight meal!

Why This Recipe Works

So what makes this recipe work as well as it does? Well, first of all, lets talk about the flour. Youll notice that for this recipe, were using 1:1 gluten-free flour, which usually has xanthan gum added to the blend.

That xanthan gum essentially takes the place of wheat gluten for recipes like this. You probably know that gluten is the stretchy, expandable part of wheat-based dough that allows the dough to rise when the yeast begins to work. The xanthan gum does that here, creating a nice, stretchy texture to the dough, rather than a crumbly one.

For sandwich bread and other recipes that need a double rise, I would recommend adding extra xanthan gum, but for this one, a normal 1:1 ratio of gluten-free flour is just perfect.

I also use instant dry yeast to make this recipe quick and easy. Instant dry yeast is a super useful ingredient to stock, and it keeps for a long time.

Where To Buy Gluten Free Pizza

Gluten-free frozen pizza is sold at nearly every grocery store nowadays! Youre bound to find at least one of these brands at a store near you.

This list contains frozen, pre-made gluten free pizza products. So to find any of these pizzas, always check the frozen aisle of your local grocery store. Gluten free pizza doughs may be found outside of the freezer aisle, but those products are not included on this list.

Even though gluten-free frozen pizza brands are sold at most grocery stores, some stores will have a much larger selection than others. Youre much more likely to find a wide variety of gluten free pizza at specialty diet/health food stores like Sprouts and Whole Foods.

The frozen pizza products near the top of the list are some of the easiest to find, so look for them at any major grocery store! If you dont have luck finding those, keep going through the list to see products sold at select stores. Some of these are private label brands, meaning they are only sold at the store that makes them.

If you are following another diet besides gluten free , read the description under the brand to see if there are any other certifications.

Product ingredients can change at any time, so always read the most updated product labels, allergen warnings, and certifications before purchasing any of the products on this list.

Free Your Baking Space Of Gluten

When crafting any gluten free recipe, its important to assess your cooking environment. Celiac disease and gluten allergies can be triggered by even the smallest amount of gluten. Have you recently prepared foods with wheat flour in your kitchen? Before you begin crafting your dough, its important to fully wipe down all baking surfaces and remove any gluten-containing products that are nearby. Cross-contamination can be very dangerous for those who are gluten intolerant and youll want to avoid it at all costs.

Dont Substitute Or Omit Ingredients

When learning how to make a gluten free pizza crust, its important that you follow the recipe. Gluten free flours are very different than traditional flours and each ingredient is important when it comes to creating the right flavor and texture of pizza crust. The gluten found in most traditional homemade pizza dough works to create the texture of the dough and helps it rise correctly. Since youll be working with a dough thats free of gluten, many recipes will include important gluten substitutes like whey protein, rice flour and even garbanzo beans to help mimic the same texture found in traditional doughs. Make sure you do your research and gather the correct ingredients before you start making your homemade gluten free pizza dough.

In this delicious gluten free pizza dough recipe, a mixture of garbanzo bean flour, white rice flour, potato starch, cornstarch and xanthan gum is used to mimic the texture and flavor of traditional pizza crust. Following this mixture accurately will create a crispy-on-the-outside, chewy-on-the-inside pizza crust that can also be used to make soft doughy rolls or even a savory stuffed calzone!

Gluten Free Sourdough Pizza Crust Faqs

Thin Crust or Thick Crust Pizza?

Depending on how you shape the dough will depend on whether youll create a thick or thin crust pizza. I typically go for a thinner crust by shaping the edges a little narrower . However for a thicker crust, shape the pizza a bit smaller and allow for a little bulk around the edges.

What Kind of Pizza Pan to Use?

To bake the pizza, you can use either a pizza stone and/or the back of a sheet pan or one of each. When baking multiple pizzas, preheating the pan or stone will help create a crispy crust. You can use either because they both produce similar results with sourdough gluten free pizza dough.

Is the Pizza Crust Freezer Friendly?

Yes! There are two ways to freeze: 1. Freeze the dough balls in freezer bags or freeze the par baked pizza crust. Freezing the dough is convenient, however, it looses some of its leavening power and the final texture of the dough is compromised. 2. Freeze the par baked crust. This is the method I prefer because its super easy to thaw, top and bake in short order.

Is Sourdough Pizza Crust Gluten Free?

Yes and no. It depends on the sourdough starter and flours used in the recipe. If gluten free flours are used to make a starter and pizza dough, then sourdough pizza crust is gluten free. However, if gluten full flours are used to make the starter and pizza dough, then the pizza crust is not gluten free.
