Fresh fruits like berries, apples, bananas, peaches, citrus fruits, and more are all fair game, as are fresh vegetables like leafy greens, broccoli, asparagus, carrots, bell peppers, potatoes, and many others. If you’re purchasing frozen, pre-chopped, or canned fruits and veggies, take a different look at the food label as they might be processed in a facility that processes gluten or dairy products.

2. Whole Grains Just because you can’t have gluten or wheat doesn’t mean all grains are out of bounds. Rice, quinoa, amaranth, millet, corn, buckwheat, corn, and sorghum are all dairy and gluten-free grains. When purchasing oats, be sure to look for a gluten-free variety to ensure they haven’t been cross-contaminated with wheat during processing.

4. Beans and Legumes If you’re looking for ways to add satisfying protein, fiber, and carbs into a gluten-free and dairy-free diet, look no further than beans and legumes! Black beans, white beans, kidney beans, chickpeas, and lentils are all affordable, easily found in most grocery stores, and a great way to bulk up a plant-based meal. While all beans and legumes are inherently gluten-free and dairy-free, it’s smart to double-check the ingredients when buying canned beans to ensure no extra starches have been added.

In fact in the past 6 years of eating gluten free I have actually discovered a whole host of different foods and meals to enjoy some that I may never have tried had I always been able to eat gluten!

So, I thought it might be a nice idea to share with you on a fairly regular basis what I eat in a day! Gluten has been a big target for the dietary and wellness media for a few years, but who actually is at risk and should be avoiding products containing gluten? Should everyone? There are two main groups that are negatively affected by gluten: those with Celiac Disease and those with Non-Celiac gluten sensitivity.

Celiac Disease

Celiac disease is an autoimmune disorder and the most severe form of gluten intolerance, affecting approximately 1% of the population. Non-Celiac Gluten Sensitivity

Tips For Starting A Gluten And Dairy

Removing gluten and dairy from your diet can feel overwhelming, but there have never been more dairy-free and gluten-free options available in the grocery store. Here are a few tips to help you ease into the process.

  • Take inventory of your pantry and refrigerator foods and purge anything with gluten and dairy to give yourself a clean slate. Pay special attention to any processed foods’ labels to ensure there aren’t any hidden gluten or dairy ingredients.
  • Educate yourself on ingredients you need to avoid so you don’t inadvertently eat something you’re trying to avoid.
  • Remember, there are way more foods you can eat than foods you can’t, so focus on building your diet around real, whole foods that are nutrient-dense and easy to mix and match.
  • For any packaged or processed foods, look for the certified gluten-free symbol to avoid gluten and the certified vegan or Pareve symbols to avoid dairy products. Anything that’s labeled “Whole30 compliant” is also gluten and dairy-free. These are a great “shortcut,” so you don’t have to read the whole label, and you can rest assured they haven’t been cross-contaminated. When eating out, let your server know you can’t have gluten or dairy to ensure they don’t serve any sauces or seasonings with hidden gluten or dairy ingredients.

Hummus is such a versatile and healthy snack base, and I am excited to be able to tolerate small portions of chickpeas again, so that I can occasionally include this one in my snacking rotation.

I love to pair it with fresh, crunchy veggies like carrots, cucumbers, celery, and grape tomatoes. And because raw veggies can only be so satisfying I alternate my dipping with gluten free pretzels too.

This method creates little pockets of air, so you end up with more cookies and more is never a bad thing when youre talking cookies, is it?

Also, because the air doesnt conduct heat as well, the butter and sweetener in the cookies melts more slowly during baking. That means your keto almond cookies end up with a more delicate crumb.

Why Avoid Refined Sugar

Type I, or insulin-dependent, diabetes occurs at an estimated rate of 5 to 10 percent in the celiac population compared to 0.5 percent in the general population. Researchers have determined that there is a causal genetic link between the two diseases. Both are autoimmune disorders, which tend to occur in pairs or clusters.

Controlling Type I diabetes on a gluten-free diet poses particular challenges. Many processed gluten-free foods have a higher amount of added sugar and starch to help improve taste and compensate for the absence of gluten. Both are problematic for diabetics who need to control blood sugar.

There are a myriad of other health problems that are linked to excess sugar in the diet, including obesity, metabolic syndrome, insulin resistance and hypoglycemia. More recently, studies have been published suggesting that cancer, hypertension and heart disease are linked to excess sugar.

Candida, a yeast overgrowth, is another condition that requires avoiding refined sugar. Hashimotos Disease and Lyme Disease are often improved with a dietary decrease in sugar intake. Inflammation in the body can be caused by sugars high glycemic index, a system representing how quickly and how high a food can increase blood sugar levels, and the resulting insulin response. The higher the number is on the glycemic index, the more severely blood sugar rises.
