Bake at 350 °F for 25-30 minutes.

Lets dig into my gluten free pasta and cheese recipe options.

The first variety, pictured above, is the roux-based macaroni and cheese. It calls for a few more ingredients, but it makes a just-right balance of creamy and cheesy.

The second variety, called queso-style, is pulled from our recipe for gluten free cheese sauce. It makes a thick, rich sauce thats the easiest way to make the cheesiest sauce.

The third variety, called almost-instant, calls for cheddar cheese powder. Its a specialty ingredient that you probably dont already have, but it tastes like The Box and its the only type of gf mac and cheese that my non-gooey-cheese eating gluten free son loves.

Mac And Cheese Toppings

If you want to bake in some crunch you can use breadcrumbs, french onions, saltines or oyster crackers. Just crush the toppings, top the mac and cheese and bake .

If youre using potato chips or crackers for a crunchy topping, just place them in a sealable plastic bag, squeeze out the air, seal and roll it out with a rolling pin. Its an easy and no mess method.

What Gluten Free Thickener Should I Use

I know a lot of mac and cheese recipes use some blend of cream, eggs, and cheese and just stir it together and toss it in the oven and thats finesorta. But my version is going to require that you make a roux or white sauce first and that means youll need a thickener.

In my original baked macaroni and cheese I use flour of course but here I recommend an all purpose gluten free flour blend with xanthan gum in it. I LOVE King Arthurs Measure for Measure Gluten Free Flour blend. It works like a champ. You should be able to buy it just about anywhere these days or online as well.

How To Make It Primal

If youre not familiar with it, primal is like paleo, but with dairy.

So, if you use grain-free flour and use grain-free, primal-friendly pasta, then you have yourself some primal mac and cheese!

You can get Jovial brand cassava flour pasta, and it tastes great. A bit similar in taste and texture to whole-wheat pasta, I think.

Capellos is almond flour-based and supposedly super tasty. I havent had the pleasure of trying it yet!

For the flour, cassava flour works great. I used Ottos.

I have never tried to make this mac and cheese recipe myself dairy free. But I think its worth trying for 2 of the 3 methods.

Here are the substitutions I would try, dairy ingredient by dairy ingredient:

  • For the milk: unsweetened almond milk
  • For the shredded cheese: Violife brand or Miyokos Kitchen brand blocks, shredded
  • For the sliced cheese: Daiya sliced American-style cheese
  • For the butter: Miyokos Kitchen or Melt brand vegan butter

The dehydrated cheese, almost instant recipe cant be made dairy free. For the cheddar cheese powder in the third variety, I really like Hoosier Hill Farm brand

    Before we get to the recipe, we wanted to talk about the star of the showthe cheese! For instance, did you know that you can actually make your own lactose free cheese right at home? Mozzarella and ricotta are a few of the easier ones to make, but you can even buy certain premade cheeses from the store that are low in lactose, too. Aged cheeses typically have less sugar in them, making them easier for lactose intolerant stomachs to digest. A few popular types are sharp cheddar, mild cheddar, Muenster, brie, provolone, Gouda, blue, parmesan, and Swiss.

    As with all cheeses or foods in general, make sure you know your limits. If youve never eaten a specific type of cheese , try it in smaller portions to see how your stomach reacts before you eat an entire meal. Everyone reacts differently and has different tolerance levels, so do whats best for your body!

    To Rinse Or Not Rinse

    Thats a good question. Normally, I would say no because it doesnt prevent the pasta from clumping, it makes it difficult for the sauce to stick to the noodles, and it cools down the pasta and cold gluten-free pasta isnt very tasty.

    But because gluten-free pasta is a lot starchier than normal pasta, I rinse it. Very quickly less than 5 seconds. Then transfer immediately to the sauce.

    For The Macaroni And Cheese:

  • Preheat your oven to 375°F.
  • Bring a pot of water up to a simmer for the pasta. Season the water with salt.
  • Melt the butter in a saucepan.
  • Add the onions, garlic and salt and sweat them gently until the onions are softened.
  • Stir in the Cup4Cup Multipurpose Flour until there are no lumps.
  • Gradually whisk in the hot milk. Continue whisking until no lumps remain.
  • Bring the sauce to a gentle simmer and cook for about 3 minutes or the sauce is thickened and no longer tastes like raw flour.
  • While the sauce is cooking, bring the water to a rolling boil and begin cooking the macaroni.
  • Stir in the cheese and cayenne pepper until completely melted and the sauce is shiny then turn off the heat.
  • Drain the pasta then stir it into the cheese sauce.
  • Pour the mixture into a 9 inch by 9 inch baking dish. Use a rubber spatula to level the surface.
  • Sprinkle the cheddar cheese crumble evenly over the surface of the macaroni and cheese.
  • Bake in the center of the oven for 30 minutes or until the topping is golden brown and the sides of the dish are bubbling.
  • Giving up gluten doesnt mean giving up the foods youve always loved.
