How To Bake Chewy Brownies

How to Make Healthy Gluten Free Brownies | With Almond flour, Extra Fudgy!

You’ll need to bake these brownies for 30 minutes, give or take a couple of minutes, for what I consider the perfect chewy brownie texture. Below is a picture of a batch of brownies that I baked for about 26 minutes. They were incredibly gooey and very much like molten brownies.

But since I prefer my brownies a bit more set, I baked another batch. I took them out at 30 minutes and let them cool for at least an hour before slicing. Those are the ones pictured throughout this post. I found 30 minutes to be the optimum cooking time for fudgy and moist brownies.

Since all ovens are different, I recommend checking the middle of the brownies with a toothpick at 26 minutes the first time you make them. There should still be crumbs and melted chocolate on the toothpick. If the toothpick comes out clean, your brownies will still be delicious tasting but not as soft and gooey in texture.

For extra gooey, molten like brownies, remove them from the oven at no more than 28 minutes.

What Do You Need

Simple ingredients for the easiest recipe! Look at this texture, you would not believe it’s gluten-free. Only 3 steps to this moist and chocolaty dessert:

1 – Melt the butter and chocolate together. You can either use the microwave and if so I would recommend doing 20 seconds at a time and stirring each time. If you are using a pot, I would suggest making a water bath . it will allow melting without burning.

2 – Whisk the sugar and the eggs. And whisk it like to mean it, until your arms hurt! I’m kidding, sort of. This is an important step if you don’t want your brownies to be flat and cakey. Add some air.

3. Combine. Add the melted chocolate/butter to the egg/sugar mix.

4. Lastly, add the dry ingredients: your almond flour, baking powder, and baking soda. Don’t forget the walnuts, they bring an amazing crunch to it.

Bake in the oven and prepare yourself mentally to not eat it all in one sitting, this is the almond flour brownie of your dreams coming together!

Serving Suggestions And Substitutions

  • Make sure your eggs are room temperature. If they are cold from the fridge they will solidify the coconut oil again and change the texture.
  • Watch for the edges to look dry before taking the brownies out of the oven. If you like a gooier brownie take them out once you see the dry edges. For a denser brownie wait for 30-35 minutes.
  • For an even more fudgy gluten-free brownie add a handful of dark chocolate chips to the batter before baking and sprinkle a few on top for an extra chocolate flavor.
  • An important tip is to wait at least an hour before slicing your brownies. Even though it is tempting to immediately just dive in, if you cut brownies too soon they will be goopy and the edges will be soft. They will fall apart easily so have patience and know that the end result will be worth the wait.
  • Serve with ice cream, whipped cream and caramel sauce for an elaborate dessert.
  • Substitute the almond flour for a gluten-free flour blend like King Arthur.
  • You can use both dutch process cocoa or cacao powder also.
  • Substitute the walnuts for pecans.
  • Store in an airtight container in the refrigerator for up to a week or in the freezer for up to 2 months.

Do gluten free brownies taste good? There are a ton of gluten free brownie recipes out there and in my opinion, this recipe does not sacrifice taste. It’s not like cake though. They are not cakey brownies. They are fudgy and chewy.

Can I used salted butter instead of unsalted butter?

I recommend using unsalted butter because you can control how much salt goes into your brownies. Nothing is worse than a brownie that is too salty. However, if you only have unsalted butter, go ahead and use that just remove the salt from the recipe.

Can I use almond meal instead of almond flour?

This recipe works best with finely ground almond flour. Almond meal is coarser than almond meal.

I dont have instant espresso powder. Is it necessary?

The instant espresso powder just brings out the chocolate flavor even more. If you dont have any on hand you can omit it from the recipe.

What is fleur de sel?

Fleur de sel is a flakey finishing salt. It provides the perfect sweet and salty bite and brings out the chocolate flavors in these brownies. If you have Maldon salt you can use that, too! You can also omit the fleur de sel from the recipe if you wish!

Can this recipe be doubled?

It sure can! You can double the recipe and use a 9×13-inch baking dish.

How long do these brownies stay fresh?

These brownies stay fresh covered at room temperature for about 3 days. For longer storage, you can store the in the freezer.

  • You can usually find almond flour with other gluten-free flours at most larger grocery stores. Bobs Red Mill makes a great almond flour, but you can also find it at places like Trader Joes and Aldi.
  • You may also see almond meal, which is similar to almond flour, but slightly more coarse. Although almond flour and almond meal arent always interchangeable, you can use either for this recipe.

How To Make Homemade Almond Flour Brownies

With only 10 minutes of prep time, these chocolate brownies are the perfect sweet treat to make when you want to serve something yummy, yet dont want to spend a lot of time in the kitchen. If you love the ease of this brownie recipe, be sure to try oat brownies as well!

  • Begin by greasing an 8×8 pan, then set aside.
  • Next, in a large saucepan, melt one stick of room temperature butter with one cup of the chocolate chips. Stir the melted butter and chocolate chips together until the consistency is nice and smooth.

    How To Make These Brownies

    Making gluten-free, homemade almond flour brownies from scratch isn’t any different than making regular brownies. We’re essentially repeating the same steps, but replacing the all-purpose flour with almond flour.

    I used an 8 by 8 baking pan for these brownies but you can also use a 9 by 9 baking dish. If you do, youll want to reduce the baking time by a couple of minutes since the size of your pan will affect how quickly the chocolate brownies bake. A larger pan will yield thinner brownies that will bake slightly faster.

    To make it easier to lift the brownies out of the pan, grease your baking pan and line it with parchment paper, leaving an overhang on two opposite sides.

    Id suggest storing your almond flour in the refrigerator or freezer so that it lasts longer. Depending on who you ask, in the refrigerator, it could last 3-6 months. In the freezer, it could last 6-12 months.

    How To Make Vegan Almond Flour Brownies

    Making these brownies is so easy because its a one-bowl brownies recipe! I love one bowl or one-pot dishes because well yeah, fewer dishes! It also means Im less likely to skip a test & the whole dish gets done more seamlessly.

    Firstly, you add in your liquids. I tested olive oil, coconut oil and a neutral oil in these. I personally love olive oil because of its viscosity, but I also love the slight coconut-y taste that coconut oil adds. If you want neither, you can use a neutral oil or any oil you have .

    Then in goes my vegan eggs. Here I used my Bobs Red Mill Gluten Free Egg Replacer because friend if youre baking a lot, trust me buy this. Its the perfect egg replacer and I always have bags of it on hand. Each bag lasts 34 eggs too and lasts long, so its definitely a great buy. You can use flax eggs but I havent tested them.

    Then, in goes my sugar. Organic brown sugar is my favourite especially since coconut sugar makes them much darker and has a coconut-y flavour. But, you can definitely use it! Add in your vanilla and your water.

    In summary, these vegan almond flour brownies are:

    Im dating myself, but does anyone else remember the commercials for Betty Crocker Snackin Cake from the 1970s? They worked on my pee-wee brain like magic: I wanted chocolate snackin cake, and I wanted it bad.

    The appeal was twofold. First, the notion that cake can be a snack. To my child consciousness, this was pure genius. Why on earth was my mother pushing snacks of fruit, vegetables, and whole wheat crackers when chocolate- chocolate chip cake was a viable option?!!!

    Second, the box came with its own cardboard baking pan, lending it a toy-like appeal that was right up my 7-year-old alley. Im not sure why this was so alluring, but the thought of it made me giddy with excitement. According to the commercial, making the snackin cake was as simple as dumping the contents into the cute cardboard tray, mixing in some water, and baking for a brief spell. It sounded like heaven, sheer heaven.

    My granola-making, Co-Op-shopping, vegetable-gardening mother, of course, thought it sounded like nonsense. She ignored my pleas and passed plates of peanut-butter & raisin-filled celery sticks instead. So long, snackin cake.
