Chocolate peanut butter bars recipe its finally here! I never expected you guys to be so hyped for these when I posted them on Instagram, but you asked for the recipe, so here it is

Yep, with just 4 ingredients, you can make these easy peasy chocolate peanut butter bars in just 30 minutes. Those are the kind of recipes that I really love!

And theres no gluten-free flour, xanthan gum, baking powder required at all.

But most importantly of all they taste bloomin awesome and theyre something nobody would ever know is gluten free at all.

Before you go rush to get your aprons on though, you should probably know whats in them, dont you think?!

Freezing & Storing These Easy Gluten Free Vegan Peanut Butter Bars

These gluten free peanut butter bars are easier to eat than they are to store. But theyre also easy to store. Lol. On the 1st day, the chocolate topping still needs to set, so youre better off storing your healthy peanut butter bars in the fridge. After Day 1, go ahead and store your PB bars at room temperature, out of direct sunlight.

Great news: you can keep your healthy peanut butter bars for up to 2 weeks!

Freezing: store your dairy free peanut butter bars in a freezer-friendly container for up to 2 months. Allow to thaw for 10 minutes before storing or go for it

What Youll Need To Make These Peanut Butter Cookie Bars

These epic, gluten free peanut butter cookie bars have golden, crisp, cookie-like edges and gooey centers that make that irresistible. You wont believe theyre both gluten and dairy free! Heres everything youll need to make them:

  • Eggs: youll just need two eggs in these peanut butter oatmeal cookie bars.
  • Coconut sugar: were naturally sweetening them with coconut sugar, but you can use brown sugar if youd like.
  • Peanut butter: be sure to use a natural, creamy peanut butter for the perfect texture. Use the code AMBITIOUS15 to get 15% off my favorite brand, Wild Friends!
  • Coconut oil: some coconut oil ensures that they have an ooey-gooey center.
  • Almond flour: youll also need fine, blanched almond flour to keep them gluten free and give them the right texture.
  • Oats: were using rolled oats in these bars because oatmeal cookies = love.
  • Baking staples: youll also need vanilla extract, baking soda & salt.
  • Chocolate: gotta have those dark chocolate puddles in every bite! Feel free to use a chocolate bar, chocolate chunks or chips. Special note on this below!
  • For topping: I love sprinkling a little fancy sea salt on top

Storing & Freezing Tips

  • To store: Id recommend leaving them on the counter for no more than a day or two, and then storing the peanut butter oatmeal cookie bars covered in the refrigerator. Theyre delicious straight from the fridge!
  • To freeze: allow the peanut butter cookie bars to cool completely, then cut them as directed. Wrap individual cookie bars in plastic wrap, then in foil or a reusable bag. Freeze for up to 3 months. When ready to enjoy, simply thaw them at room temperature.
  • Tips To Make This Recipe

    Gluten Free Chocolate Peanut Butter Bars
  • Use high quality smooth peanut butter. The peanut butter is the most crucial part of the recipe so make sure to buy something thats creamy with a delicious, natural peanutty flavor.
  • Make sure to use a larger piece of parchment paper than necessary. This will allow some of the paper to hang on the sides, making it easier to lift the bars out of the pan and slice them neatly.
  • Use the stovetop to heat the ingredients together if you prefer. The microwave is quicker for me, but you can do this on a stovetop. Just be sure to watch it carefully as you dont want to overheat either of the mixtures.
  • Make your own oat flour to save money. While you can definitely buy oat flour, making it at home is as easy as placing the measured amount in a blender or food processor and crumbling it until its flour-like. It usually takes a minute. Check out my oat flour post for more info!
  • Place in fridge, not freezer to set. To get a smooth chocolate layer on top, I recommend placing it in the fridge. If you rush it and place in the freezer instead the chocolate will crack on top, thus affecting the presentation.

    These Chocolate Peanut Butter Bars are the perfect treat for peanut butter lovers! Theyre made with only four ingredients, theyre vegan, flourless and refined sugar free. You dont need any special equipment and you dont even need to bake them. It doesnt get easier than this no-bake dessert!

    While most recipes for chocolate peanut butter bars mix peanut butter with powdered sugar, butter and graham crackers to make the peanut butter crust, I use oat flour and maple syrup instead to make the recipe dairy-free.

    How To Make Chocolate Peanut Butter Bars

    Start by heating up the peanut butter and maple syrup together. You can do this on a stovetop, but I find it quicker in the microwave to heat it for one minute. Then use a spoon to combine them well together.

    Next, add the oat flour and combine it with the peanut butter and maple syrup mixture until there are no more flour streaks.

    In another bowl, heat the chocolate chips with the second measurement of peanut butter. Again, you can use the stovetop or the microwave, and heat just until the chocolate melts. Then stir to combine.

    And now youre ready to assemble everything. Use an 8×8 or 9×9 baking dish and line it with parchment paper or foil. Make sure you have enough hanging on the sides to make it easier to lift the chocolate peanut butter bars when they set. That makes it easier to cut them.

    Press the peanut butter layer down firmly using the back of a spoon. Pour the chocolate mixture on top spreading it evenly with the back of a spoon or spatula. Then set it in the fridge for 1-2 hours until the chocolate is set on top.

    Then you can use the parchment paper to lift the entire piece out of the baking pan and cut them into 16 equal chewy decadent chocolate peanut butter squares.

    Ideas For Topping & Decorating Your No

    • ADD SPRINKLES! What isnt more fun with sprinkles? A few confetti sprinkles make these extra cute.
    • SHAVED CHOCOLATE. Ill never say no to more chocolate! Try adding some chopped or shaved chocolate on top for a cute effect.
    • COARSE SEA SALT FLAKES. My personal favorite. I love a tiny sprinkle of coarse flaked sea salt on top right before serving.
    • DRIZZLE THEM WITH WHITE CHOCOLATE. Or, you can add a small drizzle of white chocolate over the chocolate layer and use a toothpick to create a marble design.

    Dark Chocolate Peanut Butter Cup Snack Bars that are gluten & dairy-free

    Have you caught on to my dark chocolate theme this week? Apparently I was craving all the chocolate when I mapped out this weeks blog recipes.

    I also came to the conclusion at the end of 2016 that your favorite recipes here on the blog usual have dark chocolate and/or peanut butter in them. The Paleo Chocolate Banana Bread, Flourless PB Cup Banana Bread, Quinoa Crunch Bars, etc.

    I dont blame you though..

    But today we are making a recipe that you guys are going to go c-r-a-z-y over. These Dark Chocolate Peanut Butter Cup Snack Bars.

    They are honestly one of the best things that have ever come out of my oven. These bars have a crispy oatmeal crust and are filled with creamy peanut butter and dark chocolate. Plus they are gluten free and dairy free and packed with fiber, protein, healthy fats and complex carbs.

    The crust even has a hidden gem in it collagen. Yup, we have another sweet recipe with collagen in it. Those 6-ingredient Coconut Flour Chocolate Chunk Cookies, Chocolate Chip Ginger Oatmeal Cookies and Chocolate Chip Flaxseed Waffles ALL have marine collagen in them.

    I add a scoop of Vital Proteins marine collagen into my lemon water every single day. But I also love adding it to random recipes. I do not think it has any sort of taste when you mix it in a hot beverage or within a recipe you are cooking/baking. It really just gives any recipe or beverage an extra boost.

    Heres What I Put In My No

    While these peanut butter cup bars are definitely a treat, I re-worked the traditional recipe to be a bit healthier . Heres what youll find in the recipe:

    NATURAL PEANUT BUTTER. I recommend using natural peanut butter for this recipe. Youre looking for peanut butter with JUST peanuts or just peanuts + salt. Itll have a more runny consistency and set up beautifully when combined with the other ingredients.

    OAT FLOUR OR ALMOND FLOUR. Then, to help these bars set up, I add a bit of oat flour or almond flour. Either works great, so use what you have! Note: I dont recommend using white or wheat flour for this recipe.

    PURE MAPLE SYRUP. Instead of the powdered or white sugar you often find in chocolate peanut butter bars, mine are sweetened with a little pure maple syrup. You can sub honey or agave if you prefer!

    VANILLA EXTRACT.Vanilla is kind of my secret ingredient here. It ties all that chocolate-peanut butter flavor together BEAUTIFULLY.

    SALT. Then, I love adding a *tiny* pinch of salt to round things out. It wont make your chocolate peanut butter bars taste salty, itll just keep them from being too sweet.

    CHOCOLATE CHIPS. For the chocolate layer, I add a blend of chocolate chips + a little more peanut butter. Its SO YUMMY!

    How To Make This Recipe

    Gluten Free Vegan Chocolate Chunk Peanut Butter Bars

    • Whizz until they form a fine powder.
    • Place the peanut butter and maple syrup in a glass mixing bowl.
    • Place the bowl over a pan of boiling water and stir regularly until the peanut butter is melted and liquidy.
    • Add the ground oats and mix well.
    • Place in the fridge to firm up slightly while you melt the chocolate.
    • Break up the chocolate into small pieces and place in a bowl with the peanut butter.

    Tip: You can use the same bowl – no need to wash it out.

    • Place the bowl over a pan of boiling water and stir regularly until melted – make sure not to overheat it as the chocolate will split if you heat it too much.
    • Carefully pour the melted chocolate mixture on top of the peanut butter layer.
    • Tip the loaf tin from side to side so that the surface is completely covered all the way to the edges.
    • Place in the fridge for at least a few hours until completely firmed up.
    • Cut into squares once its completely firmed up.

    I’ve been wanting to share a certain aspect about living in China as a young American woman for a while, but have been scared to come across as the most vain person in the world. But I figure it’s a big part of living in China and you guys might be interested to hear about it, so why not? I trust that you guys know my heart and know that I’m just sharing my experience.

    So, as most of you could guess, the majority of Chinese people have very similar features. Black hair, dark oval eyes, slender bodies, pale skin, etc. They’re beautiful!
