It’s a liqueur made from fresh flowers of the elderberry plant. I like using St. Germain but any brand you like works. It can get pricey but you can use it for lots of different cocktails and it will last you a while.

Every Elderflower Used To Produce St

Each bottle of St-Germain contains up to 1,000 elderflower blossoms, all of which are handpicked annually. Each year when the flowers blossom in late May, farmers spend roughly three to four weeks gathering the blooms that will be used to produce the liqueur. The flowers are all picked in the mornings, when temperatures are at their lowest. This practice allows producers to ensure that the elderflower blossoms are only just beginning to open, meaning the aromas and flavors of the buds will be at their most prominent. In fact, St-Germains unique coloring does not come from any artificial additives, but instead is a result of the pollen from each bud blending with the liqueurs liquid components. Due to the delicate nature of handpicking and the finite yield harvested, limited batches of St-Germain are produced every year.

Can I Make This Recipe Ahead Of Time

Upside-down cakes are really best enjoyed the day theyre made. If you wanted to get a head start, there are a few things you could do to make this recipe come together more quickly.

  • Prep the elderflowers. Take the time to remove as many stems as you can before hand. Carefully wrap the prepped flowers in a damp dish towel , put in a sealed container , and keep in the refrigerator until ready to use. I dont recommend doing this more than 1-2 days in advance.
  • Slice the peaches & make the puree. This is a huge timesaver. Wash, prep, slice, puree. Store the slices and puree in airtight containers in the fridge until youre ready to use.
  • Mix the dry ingredients. I use this trick often. If I really need to save on time, Ill go ahead an measure out all the dry ingredients and store them together in an air-tight container until the next day or whenever Im ready to use them.
  • Cut the parchment paper circle to line your pan. Its a small step, but sometimes every second counts. I actually like to make a few at a time when I have a few spare minutes.

As reported by the New York Times, the Cooper family’s claim to fame lay with Charles Jacquin et Cie, a Philadelphia liqueur company famous for yummy cordials and interesting liqueurs. Despite St-Germain’s current smashing success, Cooper’s father was skeptical about infusing elderflowers into a liqueur, and Cooper wound up leaving Charles Jacquin et Cie to set off on his own.

Tragically, Robert Cooper didn’t live long enough to enjoy the fruits of his labor, passing away at 39 . However, since his death, St-Germain continues to enjoy immense popularity. Cooper will always be known as the youthful liqueur genius whose brilliant idea for elderflower liqueur took him away from his family fortune and straight into the pages of liquor lore. As such, St-Germain carries some of the same mythic qualities as a standalone original with broad appeal.

Founder Robert Cooper Invented St

According to News 18, St-Germain’s founder Rob Cooper fell head over glass in love with an elderflower cocktail and decided to make a liqueur with the same flavor profile. Cooper came from a long line of liqueur producers and was already familiar with Charles Jacques et Cie, thanks to his father. As the story goes, Cooper wandered into a London-area bar in 2001 and tasted a delicious drink fragranced with elderflower liqueur.

Allegedly, that chance brush with elderflower liqueur changed Cooper’s perspective dramatically, as he’d never considered elderflower to be a viable cocktail addition before. So Cooper decided to create an elderflower liqueur of his own, and the rest of the story is delicious history. Although today it’s almost impossible to imagine a posh bar without a signature bottle of St-Germain, the liqueur is less than 20 years old and was dreamt up in this century. Were so lucky in North America to have a few different species of elder that grow wild. Black elder and American Black Elder grow wild in much of the Eastern United States. And in the western United States, you can find another closely related species called Blue Elder .

You can typically find elder growing in disturbed places such as along roadsides, in hedgerows, or areas that have been recently burned. It also really loves water. Here in Florida, its common to find elder growing wild in swampy areas.

If youre lucky enough to live were elder grows wild, you can harvest these lovely little flowers yourself! Depending on the climate, elderflowers are typically in bloom from spring through early summer.
