Why Make Your Own Protein Pancake Mix

Making your own protein pancake mix is not just easier, but it is healthier too. You know EXACTLY what goes into the mix, and only wholesome and clean ingredients.

If you look at store bought protein pancake mixes, you will see added sugar, added sodium, and even strange ingredients like vital wheat gluten and corn starch.

My homemade pancake mix has none of those. Its also suitable for vegan, gluten free, and dairy free diets.

They Are An Allergy And Dietary Nightmare

It just so happens to be that any traditional pancake will include at least one ingredient which is going to be problematic for someone.

Eggs, milk, and butter? Not exactly what you would call dairy free or vegan friendly.

Flour? Since wheat is de facto, youve now excluded Celiacs and those on a gluten free diet.

Low carb? Unless youre using a low carb protein pancakes recipe made with special flour, virtually all of the common flours from the supermarket wont exactly be what you would call Atkins friendly.

Low fat? They may or may not be high fat, but any butter certainly wont be pleasing the oil free crowd.

Low glycemic or diabetic? Even without the maple syrup, the highly refined flour can be a diabetic disaster. When prepared with wheat flour, the glycemic index tests out at 80 for a mere 2.8 ounce serving .

Vegetarian? In the US, the definition of vegetarian is wishy-washy, but in many parts of the world such as India, eggs are never considered a vegetarian food. Here, ovo-vegetarians eat eggs but lacto-vegetarians do not.

Despite being delicious, as you see just about everyone has something they hate about this classic American breakfast food. Even without food allergies, no one would ever legitimately claim that these fluffy buttermilk concoctions are good for weight loss or are healthy.

But what if you could get rid of those bad characteristics and make a version which pleases just about everyone?

Can I Freeze Gluten

Yes, you can freeze gluten-free pancakes. Always bring your gluten-free pancakes to room temperature first.

After they are at room temperature you can store them in an airtight container or a zip lock bag for up to three months.

Remember when measuring out flours for this gluten-free pancake recipe spoon your flour into your measuring cup, then level it.

Do not dip your measuring cup into the flour then level, it will be too much flour.

To make pancakes, you need flour, but it doesnt have to be wheat flour! Gluten-free pancake mixes usually contain a blend of non-wheat flours that have different properties to mimic the texture of traditional pancakes.

Rice Flour for a Neutral Flavor

Rice flour is a popular choice due to its neutral flavor and light texture. Like rice, it comes in white and brown varieties, with brown rice flour having a slightly nuttier flavor.

Brown rice flour is a whole grain, which means it contains all parts of the grain, including the nutritious bran and germ and carb-rich endosperm. On the other hand, white rice flour is made from rice that has had the bran and germ removed, making it lower in fiber, vitamins, and minerals.

How To Make These Dairy Free Protein Pancakes

  • Start by mixing the pancake mix. Add the oat flour, gluten free flour, naked pea protein mix, brown sugar, baking powder, and salt to a bowl. Whisk well. Store this in an airtight container, I like to use large mason jars.
  • To make the pancakes you will need a medium size bowl. Each serving makes 6-7 pancakes, so if its the weekend I will double the recipe.
  • Add 1 cup of the gluten free protein pancake mix to the bowl. Add 1 tsp. cinnamon, 1 tsp. vanilla, 1 egg, and 1 to 1 1/2 cups of your favorite dairy free milk. Mix well until the batter is smooth.
  • On a hot skillet sprayed with non-stick add 1/4 cup of batter for each pancake. Cook 3-4 minutes on each side. Feel free to add mix ins like nuts, berries, or chocolate chips.
  • Serve hot with butter and syrup.

    My recipe for homemade protein bars is currently one of the most popular posts on this entire food blog. It’s a really comprehensive post with tons of variations , and it makes sense. It’s complete without being needlessly complicated, and it fills a snacking need.

    What Is And Isn’t Included

    I didn’t include certain common brands in this list, including my favorite all purpose gluten free flour blend, Better Batter. I find that their pancake mix contains too much xanthan gum, so I don’t recommend it.

    In fact, when I build my own gluten free pancake mix, I don’t ever use Better Batter as a base. I use my gum-free blend, instead, and then add a touch of xanthan gum to reduce that feathered edge that some pancake blends can produce in the finished pancake.

    It’s important to note that a pancake mix is not an all purpose flour blend. That includes my own DIY pancake mix.

    A pancake mix always contains a chemical leavener , often some salt, and sometimes xanthan gum. I do not recommend using any of these pancake mixes in any of my recipes that call for an all purpose gluten free flour blend.

    I haven’t tested each of these blends in my recipes that call for my own pancake mix. It’s just not practical for me to do all of that testing, I’m afraid. But the most basic mixes on the list should work in recipes like my Gluten Free Breakfast Casserole.

    This time, I decided not to include prices that you should expect to pay for these products, as prices tend to vary so significantly. I don’t think that that information adds enough value to continue to add it.

    King Arthur Flour Gluten Free Pancake Mix

    I’m leading with King Arthur Flour gluten free pancake mix because everyone in my family agreed that it was the best of the bunch. Since I’ve never liked their all purpose gluten free flour , I was really very surprised.

    Typically I find that King Arthur rice flour blends are gritty and contain way too much starch. This mix doesn’t suffer from either of those limitations. Since the instructions call for having the batter sit for 10 minutes before you begin making pancakes, perhaps the rice flour softens just enough.

    The pancakes weren’t super puffy like my buttermilk pancakes, but they were very light and fluffy. The taste of the pancakes alone, without any added sugar, honey or maple syrup, was really excellent. I really like this blend!

    Here are the other details:

    • Ingredients: whole grain brown rice flour, potato starch, tapioca starch, rice flour, cane sugar, baking powder , natural flavors, salt, vitamin and mineral blend , reduced iron, thiamin hydrochloride , riboflavin , xanthan gum.
    • Here is the recipe that I used, based on the package label:1 1/3 cups pancake mix1 large egg3 tablespoons melted butter1 cup milkWhisk together eggs, butter or oil, and milk. Whisk in the mix. Allow the batter to sit for 10 minutes to thicken. Preheat griddle to 350°F/medium. Scoop 1/4 cup of batter onto lightly greased griddle.Cook 1-2 minutes, until bubbles form on top and bottom is golden brown. Flip and cook for 1-2 minutes more. Serve hot.
