Another one of the frequently asked questions. Baking powder is a mixture of three ingredients: baking soda , an acid and a starch to absorb the moisture and keep it from clumping together.

The starch is where the gluten question comes in. However in my experience, the starch is usually rice flour or cornstarch, which dont contain gluten.

So its safe to say that baking powder in general doesnt contain gluten, but it might be produced in a facility where gluten in processed or be a special brand that uses a gluten-containing starch. Therefore always make sure to carefully read the label and check the ingredients list.

Yes, you can freeze this gluten free bread loaf. After it has completely cooled, slice the loaf into equal slices. We like to place a piece of parchment paper or in between each slice, so it’s easy to pull it out of the freezer.

Combine The Dry Ingredients

Scrape down the sides of the bowl then place it somewhere warm to let the dough double in size, about 1 hour. I use my ovens bread proof setting, though in the past Ive placed the bowl on top of a heating pad set to low. A warm sunny spot should work too!

The heat index has been in the upper 90s for the past few weeks and while Im someone whod normally sit outside until my blood starts to boil, even I have to admit its brutal out there. Not as brutal as summers in my parents house growing up though, where they had two rules once school let out:

  • No TV. Just straight up canceled cable for three months.
  • No air conditioning until it reached 90 degrees. Inside the house. INSIDE THE DANG HOUSE.
  • We were totally unplugged, and as much as we complained in the moment, Im so glad they did what they did. Let me be clear Im so glad they canceled cable and shooed us outdoors every single day, NOT that they were so strict with the AC. Going to bed with fans blasting hot air 5 inches away from your face is not a good time!!

    As a result of my parents rules though, my brothers and I left the house each morning after breakfast, maybe stopped home for a quick lunch, but most days didnt come home until dinnertime. Our days were filled with friends, swimming, creek walking, bike riding, chalk drawing, bug collecting, and doing anything that didnt involve sitting in a hot house staring at a blank television.

    Combine The Wet Ingredients

    Start by microwaving butter or vegan butter in a large glass bowl until melted. Add milk and sugar then microwave for 45-50 seconds. Stir the mixture then take a temperature with an instant-read thermometer were looking for 110 degrees.

    Sprinkle in Bobs Red Mill Active Dry Yeast then stir gently and let the mixture sit until foamy, 8 minutes.

    TIP: Be sure to STIR the milk mixture before taking a temperature to get an accurate reading.

    TIP: if your mixture does not foam, likely your yeast was old and/or your milk mixture was too hot or not hot enough.

    Next add a whisked egg plus more sugar then stir to combine.

    Bake Then Ice The Rolls

    Bake the rolls for 16-20 minutes at 350 degrees or until the tops are golden brown, rotating the pan 180 degrees halfway through. Let the cinnamon rolls cool for at least 15 minutes before slathering in icing, otherwise theyll absorb it all.

    The icing is just room temperature butter or vegan butter whisked vigorously with powdered sugar, hot water, and vanilla. Ive tried topping these rolls with cream cheese frosting and this simple butter + powdered sugar version knocks it out of the park tastes like Cinnabon!
