Is it crazy that I remember paying like 35 cents at the school cafeteria for the real deal Little Debbies Oatmeal Creme Pies?! I sound like an actual grandmother saying that. But it is true!

I was obsessed with these so much. My mom didnt usually keep too many treats like these in the house since I would easily eat an entire box in a sitting. So instead Id buy them at school and look forward to it every single time.

This is one of the most highly requested recipes ever on the blog. And I am so excited to finally share them with you guys. They are two oatmeal cookies with a hint of ginger and cinnamon, sandwiched between some vanilla frosting. These copycat oatmeal cream pie cookies are the ultimate dessert to make for any occasion and they also just so happen to be gluten-free and vegan.

Little Debbie Oatmeal Creme Pies were a staple, right? Did you grow up eating them? When I created this recipe in 2017 it was when I was making my first cookbook, Living Freely Gluten Free. There is a gluten free oatmeal cookie recipe in the book and I knew that they were destined to be turned into gluten free little Debbie Oatmeal Creme Pies. They are always a hit, so I am excited to share this gluten free oatmeal creme pies recipe with you!

How Do I Make These Oatmeal Creme Pie Recipe With Marshmallow

Start by making the cookies. You can print out the recipe card below. They are just like any other cookie recipe. The trick to this recipe is allowing the cookies to completely cool before adding the creme. The easiest way to go about this is to make the cookies the day before and then fill the next day.

Now, if you cant eat marshmallow creme, for example my son cant have corn syrup then you can still enjoy this by just using the same ingredients and omitting the marshmallow fluff.

The cookies are not difficult to mak, but are sure to impress everyone. Especially once they find out that they are gluten and dairy free!

Note About Ovens And Oven Temperatures

All my recipes are tested and developed with a conventional oven. I always bake my baked goods on the rack placed in the MIDDLE of my oven. This way the heat coming from the bottom will not burn my baked goods.

If you are baking with convection , please adjust the recipes accordingly. Be also prepared that the convection oven can cause your baked goods to dry out quickly and still be raw inside. Be aware that it takes at least 15-20 minutes for a standard American Oven to be fully preheated. I highly recommend investing in an Oven Thermometer.

Stop Restricting And Start Swapping

If youre anything like me, I absolutely hate portioning out my food. Before I switched to a clean diet, I was all about portion sizes and calorie counting, and to be honest, it was miserable! It made eating feel restricting, and really took the enjoyment out of food. Yes, I was eating what I wanted, but only in very small amounts, and was always left wanting more. If I did give into eating until I was satisfied , I was left feeling guilty, and definitely suffered the digestive issues and lethargy that inevitably followed.

After switching to a clean eating diet, not only did my refined-sugar cravings go away, but I stopped relying on portion sizing and calorie counting. Instead, I began trusting my body to guide not only my food choices, but how much I ate as well. Nowadays, I NEVER ignore a craving, and most definitely do not limit or restrict my portions or caloric intake. Clean eating really is all about swaps, not restriction.

  • In a stand mixer, cream together butter and brown sugar

Gluten Free Oatmeal Cream Pie Recipe

Start by combining your wet ingredients, including softened butter, shortening, molasses, and eggs, with your white and brown sugars. Simply beat all of the ingredients together until theyre combined.

In a separate bowl, combine your dry ingredients gluten free baking flour, salt, baking soda, and cinnamon. They key to making these gluten free oatmeal creme pies taste just like the real thing is choosing the right gluten free flour. I suggest Bobs Red Mill 1-to-1 baking flour. Its the best flour for gluten free baking, in my opinion!

After you have whisked all of your dry ingredients together, add them to the wet ingredients and mix until everything is combined. I just used my hand mixer to combine all the ingredients, but a stand mixer would work well too!

The final step to making the cookies for your gluten free oatmeal cream pie is to add the oats. Your dough will probably be pretty thick at this point, so I found it was best to fold in the oats using a spoon instead of my hand mixer. Your stand mixer will probably be able to handle the thick dough, though. You would probably be fine adding in the oats and mixing everything in your mixer.

  • Meanwhile, prepare the filling by mixing together softened butter, powdered sugar, gluten free vanilla extract and milk
  • Beat on medium speed 4-5 minutes
  • Pipe the cream filling on to the flat side of one cookie then top with the remaining cookie to make a cream pie

Now Im going to be very honest. I almost gave up. I also almost slung cookie dough across my kitchen in rage while testing these bad boys. It took me about six different times of cookie testing to get the consistency right. I probably tested with four different kinds of flour and FINALLY after having to throw the previous five batches of cookies in the trash, the sixth batch finally turned out amazing..and saved my sanity.

High Altitude Gluten Free Oatmeal Cream Pies

Gluten Free Oatmeal Cream Pies
  • Preheat oven to 350F. Prepare your baking sheet by lining it with parchment paper.
  • Crack the egg into a small bowl and set aside.
  • In your mixing bowl add the softened butter, brown sugar and granulated sugar. Mix for a few minutes until it is light and fluffy. Be sure to scrape the bowl at least once.
  • In the meantime, get a small bowl and add the all-purpose gluten free flour, baking soda, salt and cinnamon. Mix lightly with a fork until combined.
  • Once your butter mixture is fluffy, add in the egg and mix until combined.
  • Scrape the bowl and add the vanilla extract. Mix until combined.
  • Add half of the flour mixture to your mixing bowl. Mix until incorporated, then repeat with the other half.
  • Add in the oats. Mix until they are combined, then hand mix to make sure everything is incorporated.
  • Use a 1 1/2 tbsp cookie scoop to place dough on the baking sheet. I recommend only doing 6 per sheet because they will spread while baking. Roll the dough into a ball so they are all even.
  • Bake for about 12-14 minutes, until the edges just start to turn brown.
  • Remove the baking sheet from the oven and let the cookies sit for 1-2 minutes. Then transfer the cookies to a cooling rack to cool completely.

Today Im visiting an incredible blogger friend Sarah of Sarah Bakes Gluten-Free and I really wanted to make her an ultra-special treat. What better way to spread baking cheer than with homemade gluten free vegan Oatmeal Cream Pies? I knew that you would agree.

Im surprised it has taken me this long to recreate Oatmeal Cream Pies. Probably because they werent really my thing as kid . I was a sucker for all-things processed and I wont lie, I still battle a war with my deep need for potato chips. Lets put it in simpler terms: There really is no battleI just eat them often.

Making the cookies was a simple task. Most baked goods follow its own ingredient guidelines so the oatmeal cookies for me were easy. The cream filling part however had a bit of a trick to them. First off, I had to remember what the filling used to taste like . I tried doing a shortening and powdered sugar filling like you would find in homemade Oreos but that didnt sit right. So I started to look around to see what others had done which I found a common denominator: Marshmallow Fluff. Im not about to buy a tub of vegan marshmallow crème to only have the remainder sit unused so that option was out. But I did have a plan B.

How To Get Perfect Oatmeal Cream Pies

Have you ever had a sandwich cookie where the moment you took a bite, all the icing squeezed out the back. The problem is cookies that are too crisp. When baking these pumpkin oatmeal cookies, we want to make sure to underbake them just a bit. They will be extra soft and youll think Im crazy, but youll thank me later. This is how you get the perfect oatmeal cream pie texture, just like Little Debbie herself.

Faq For Gluten Free Oatmeal Cream Pies

Can I make this recipe for Gluten Free Oatmeal Creme Pies vegan?While this recipe be can easily be made dairy-free by using dairy-free butter , I have not tested this recipe without eggs. I recommend using a flax egg 1 Tbsp flaxseed meal and 2 ½ Tbsp water instead of the egg in the cookies.

Can I freeze my oatmeal cream pies?I recommend wrapping each oatmeal sandwich cookie in plastic wrap and placing in an airtight container or ziplock bag and freezing that way. Allow thawing at room temperature when ready to indulge. Do NOT microwave!

My oatmeal cookies are crispy and hardThe cookies are overbaked which make them crispy and crunchy. I recommend removing the cookies from the oven after 10-11 minutes while they still look underbaked. This way they will be soft and chewy.

What can I do with leftover Cream Pie Filling?You may have some leftover cream pie filling from this recipe. Store it in your fridge for up to 7 days or freeze it for future use. When ready to use it, allow for it to thaw at room temperature and re-whip it for 3-5 minutes.

It is also delicious used as filling in my Chocolate Cupcakes or Smores Cupcakes.

Tips For Perfecting These Vegan Oatmeal Cookie Sandwiches

Homemade Gluten Free Oatmeal Cream Pies

Use quick oats. Its important to use quick oats for this recipe. Do not use rolled oats or steel-cut oats. Quick cooking oats are essential.

Choose the vegan butter wisely. Surprisingly, certain varieties of vegan butter can make a big difference when baking cookies. I highly suggest using vegan butter from a tub for the cookies. On the other hand, I recommend vegan butter sticks for the frosting. This tip will not make or break your cookies, but it will definitely help you achieve the best results!

Bake the cookies on the middle rack. For the best results, I recommend baking the cookies one tray at a time on the middle rack of your oven.

Dont over-bake the cookies. For deliciously soft and chewy cookies, remove them from the oven while they still appear slightly underdone. This is around the 15 minute mark for my oven. Keep in mind the cookies will continue cooking, firm up, and de-puff while cooling on the baking sheet. Removing them from the oven while they still appear undercooked will result in perfect, soft, chewy cookies.

Choose the gluten-free flour wisely. If you need to make these cookies gluten-free, I recommend using Bobs Red Mill 1 to 1 Gluten-Free Baking Flour. It is the best replacement for traditional all-purpose flour.

Sift the powdered sugar. While preparing the vanilla cream filling, its helpful to sift the powdered sugar over the butter. This removes any clumps and allows it to smoothy dissolve into the butter.

Recipe Step By Step Directions:

Step 1: Add your dry ingredients to a large mixing bowl and whisk to blend.

Step 2: In a smaller bowl, add your wet ingredients and whisk to blend. Pour your wet ingredients into your dry ingredients and mix well. Allow the dough to sit for 10-15 minutes.

Step 3: Use a cookie scoop to make uniformly sized cookie dough balls. Drop them onto a parchment paper-lined cookie sheet. Since these are going to be used for cookie sandwiches, press each dough ball down a bit so it is partly flattened

Step 4: Bake at 350º F for 10 minutes. Remove from the oven to a cooling rack while you make the creamy middles.

Step 5: Mix up the cream filling in a standing mixer.

Step 6: Fill a piping bag and pipe the cream filling onto the cookies. Place a second cookie on top of the cream filling to make the sandwich cookies.

Step 7: Pipe the cream onto cookies. Make sure to leave half unfrosted so you have plain tops to put on top of the frosted cookies.

Step 8: Put a cookie on top and there you have it…oatmeal cream pies just like you probably ate before you went gluten free!!

You can also make a big gluten free skillet oatmeal cookie if you like pizookies.

You can also use these Gluten Free Oatmeal Chocolate Chip Cookies as the cookie base for these cream pies.
