I should have titled this post The Great Zucchini Loaf Challenge! I have a friend who is always telling me that they positively hate zucchini. This friend last ate zucchini thirty years ago at boarding school. They tell me often that it is a waste of a vegetable, that it tastes like soggy watery nothing and that no-one in their right mind should enjoy it. Boarding school ruined many culinary experiences for my very food-unadventurous friend.

However, I have witnessed this same friend gorging on stuffed deep-fried zucchini flowers with no idea what they were eating! They maintain that they positively hate beetroot but once gobbled down almost an entire chocolate beetroot cake Id made. When I explained that beetroot was the main ingredient they just shrugged their shoulders and smiled as they stuffed the last crumbs into their mouth. I knew theyd eat zucchini in a cake, so I decided to bake some zucchini bread to prove my point.

But Im back on my Lyme drugs, and following a fairly strict diet. It seemed so unfair that I would make a delicious cake that I then couldnt eat! So I have modified the ingredients so that this cake is healthy, delicious and suitable for people like me who are on restricted diets. Let me assure you that the modifications in no way limited the yumminess.

You can also make this recipe with conventional wheat flour if you prefer.

Method:

How To Make Low

Step 1: Preheat your oven to 350°F and line a 7.5-inch loaf tin with baking paper. Set aside.

Step 2: In a large mixing bowl, add the soft bananas, eggs, and melted coconut oil. Beat together with an electric mixer until the mixture is smooth and frothy.

Step 3: In a separate mixing bowl, mix together the almond flour, xanthan gum, granulated stevia, cinnamon, nutmeg, and baking powder.

Step 4: Add the dry ingredients to the wet and mix until the batter is smooth and completely combined. Fold in the crushed walnuts or pecans.

Step 5: Pour the banana bread batter into your prepared baking tin and smooth out the top.

Step 6: Bake for 35 40 minutes or until a toothpick inserted in the middle comes out clean.

Step 7: Remove and allow to cool for 15 20 minutes in the tin. When the loaf feels cool enough to be removed, remove from the tin and allow it to completely cool before slicing.

Gluten Free White Bread

I reviewed the plainest variety of each bread I could find. In most cases, that’s the white bread variety. Sometimes, the whole grain variety was the one I could get my hands on fastest.

I’ve included as much detail as possible about each brand, including price , availability, ingredients and other allergens.

Every bread in this post holds its shape, can be separated when frozen or fresh, tastes relatively good and is worth a try. Some are more expensive than others, but in my personal experience , none of them crumble or fall apart in that sad, sad way we all know and hate.

How To Make Low Carb Bread With Almond Flour

This almond bread recipe is super easy! Just a few easy steps:

  • Prep. Preheat the oven and line a loaf pan with parchment paper.
  • Stir dry ingredients. These would be almond flour, psyllium husk powder, baking powder, and sea salt.
  • Add wet ingredients. Add the eggs, melted coconut oil, and warm water.

TIP: Mix well here to create air bubbles! This will help your bread rise.

  • Bake. Transfer the batter to the baking pan, round out the top, and bake until the top is crusty and an inserted toothpick comes out clean.

TIP: It will pass the toothpick test before its completely done, so make sure the top is very crusty, too.

Let your keto almond bread cool completely before slicing it, which will allow it to set inside.

First, I highly recommend getting a pizza stone if you don’t have one. It really makes a huge difference when you make gluten-free pizza.

But no worries. If you don’t have one, simply use a heavy baking sheet.

If you don’t have a heavy baking sheet then you can use a cookie sheet. Let it preheat in the oven just as you would a pizza stone.

You can do this before you make your gluten-free pizza dough.

How To Give Grain Free Bread More Volume

Youll notice this recipe calls for 5 eggs which seems excessive but its key to a nice, tall loaf of grain-free bread, it also gives it a better texture.

Another important recipe note is the type of loaf pan. Youll want to use a 7 x 3-inch loaf pan, anything larger and your loaf will be a little flat, which is still usable but not ideal for sandwiches. This type of loaf pan is also a must for many grain-free bread recipes, otherwise, the cooking time will need to be adjusted.

Baking Without Sugar And Gluten

I love to bake, but the last thing I need is more sugar in my life. Sugary foods are my downfall, especially muffins, quick breads, and other baked goods that are often as sweet as cake! Tips For Measuring Gluten

The best way to measure gluten-free flour is the spoon & level method. Using a spoon, scoop the flour into the measuring cup. After youve spooned the flour into the measuring cup, use the back of a knife to level off the top of the measuring cup.

Friends, please do not scoop the flour out of the bag with your measuring cup. If you do you may get more flour than the recipe calls for.

Also, measure flour using nested measuring cups. Do not measure dry ingredients in a liquid measuring cup.

How To Serve & Store

Serve grain free bread once it has cooled. Make almond butter and jelly sandwiches, make it into toast, or use it as the base of French toast. It is also great with Whole30 Egg Salad and Whole30 Chicken Salad!

Store bread in an airtight container at room temperature for up to 3 days. Store in fridge for up to 5 days.

In addition to being low in carbs and gluten-free, this banana bread is made with no added sugar. While this recipe is sweetened by the ripe bananas, it also uses one of my favorite alternative ingredients: Lakanto brand maple syrup.

This is a zero sugar liquid sweetener derived from monk fruit and erythritol. If you cant find this, you can absolutely use another brand of sugar free maple syrup or regular maple syrup. I prefer to use this brand as its 100% natural, non-GMO, and vegan. I like to use this because it keeps the bread super moist and also adds that classic sweet maple flavor without all the added sugar.
