Move aside, Little Debbie! These homemade oatmeal cream pies are coming for your classic sandwich cookies.

If youre anything like me, you probably grew up eating one too many Little Debbie desserts. Oatmeal Creme Pies were the original treat that started it all. They are incredibly popular, and thats to no ones surprise. Its an irresistible dessert containing two oatmeal cookies filled with sweet cream frosting. And today we are recreating them!

Easy Vegan Oatmeal Cream Pie Recipe

This simple vegan oatmeal cream pie recipe is so delicious and easy to make!

It comes together in no time and is packed with flavor.

The chewy oatmeal cookies are filled with cinnamon, nutmeg, brown sugar and a hint of molasses, with an ultra fluffy sweet vanilla frosting in the middle.

All the ingredients are basic and the recipe has just a few simple steps youll be making these cookies again and again!

However, together they create that classic cream pie that we all know and love, and theyre seriously addicting. Like the Little Debbie cookies we all grew up on, these are just as good and completely vegan!

How To Make Them

  • In a stand mixer, cream together butter and brown sugar
  • Add eggs and mix well
  • Add in remaining ingredients and combine
  • On a silicone lined or greased baking sheet, please small cookie scoop or tablespoon size balls on the baking sheet 3 inches apart and bake for 10-11 minutes

Pro Tip:The middle should be a bit undone still and the edges golden brown, be sure not overbake or they wont be chewy

  • Let the cookies cool a couple minutes then remove and place on a wire cooling rack
  • Meanwhile, prepare the filling by mixing together softened butter, powdered sugar, gluten free vanilla extract and milk
  • Beat on medium speed 4-5 minutes
  • Pipe the cream filling on to the flat side of one cookie then top with the remaining cookie to make a cream pie

How To Sandwich Cookies

I like to use a piping bag fitted with a star tip to fill my Gluten-Free Oatmeal Cream Pies but you can also use a small cookie scoop or an offset knife instead.

Start with completely cooled cookies and lay out half of the cookies on a parchment-lined sheet tray. Pipe your filling on the cookies leaving ¼ inch of room at the edges. Add your top cookies and slightly press them down. You dont want the filling to come out from the sides.

You can enjoy these gluten-free oatmeal cream pies right away but can also allow them to set up in your fridge for 15-20 minutes if you prefer a less messy cookie.

Store your homemade Gluten Free Oatmeal Creme Pies in an air-tight container in your refrigerator for up to 5 days or wrap each sandwich individually in plastic wrap and freeze it for up to 3 months.

My recipes are posted in grams since baking by weight is the most accurate way to bake. Digital Scales are very affordable and can be found for less than a set of measuring cups. Measuring cups are very inaccurate and can cause significant errors when it comes to baking. Especially since I bake with gluten-free flours which weigh differently than regular flours. I do provide some ingredients like spices and leavening agents in measuring spoons.

How To Make Gluten Free Dairy Free Oatmeal Cream Pies:

Now Im going to be very honest. I almost gave up. I also almost slung cookie dough across my kitchen in rage while testing these bad boys. It took me about six different times of cookie testing to get the consistency right. I probably tested with four different kinds of flour and FINALLY after having to throw the previous five batches of cookies in the trash, the sixth batch finally turned out amazing..and saved my sanity.

How To Make This Recipe

  • Preheat the oven to 350F.
  • Mash up the banana fully.
  • In a large bowl, whisk together the oat flour, oats, cinnamon, baking powder, baking soda and salt.
  • Add the olive oil, brown sugar, molasses and banana directly into the dry ingredients and stir until well combined. This should result in a wet, sticky dough.
  • Scoop 8 dough balls onto a parchment lined baking sheet. Each cookie should be about 2 tbsp of dough.
  • These cookies wont spread, so use a wet hand to press the dough into the cookie size and shape you prefer.
  • Bake at 350F for 12-13 minutes.
  • While the cookies are baking, make the filling by whisking together the cream cheese and confectioners sugar until smooth. This should take a bit of time, but it will come together!
  • When the cookies are out of the oven, let them cool slightly before spreading the icing on 4 cookies. Sandwich the cookies together and serve!

    Soft And Chewy Cream Pie Recipe

    The key to a great cream pie is to have ultra chewy cookies with ever so slightly crisp edges.

    The filling also has a distinct fluffy texture which is usually made with marshmallow fluff.

    This same texture can be achieved by aerating vegan butter for a few minutes with an electric mixer, or vigorously by hand for about 5 minutes.

    Some powdered sugar helps to thicken the fluff up a bit more so that its spreadable, and a bit of vanilla and salt help bring out an irresistible flavor!

    Make The Oatmeal Cookie Dough

    Like many of my vegan cookie recipes, we are making the oatmeal cookie dough in one bowl! The first step is to cream together the butter and sugar. This helps to incorporate air into the dough and gives the cookies that perfect lift so they dont turn out too thin.

    Next, add in the flax egg, molasses, and vanilla and mix. After that, all the dry ingredients get added including the flour, salt, baking soda, and spices. I chose to keep things simple and just use cinnamon, but you could totally add in a dash of nutmeg or cloves for even more flavor!

    What Ingredients Go Into Pumpkin Oatmeal Cream Pies

    Flour – For almost all of my recipes, I use Bob’s Red Mill 1:1 Gluten Free Flour Blend. I have found it to be the most versatile gluten free flour. I have also used King Arthur, Walmart Great Value Brand and Pillsbury all with similar results. You can use a homemade flour blend but keep in mind this recipe was developed with BRM, so your final product may be slightly different.

    Oats – Make sure to use certified gluten free oats. I typically use Bob’s Red Mill brand.

    Baking Powder & Baking Soda – We are using a little of both kinds of leaveners for this recipe. Pumpkin can be problematic in cookies because of it’s high moisture content. The baking soda will help these cookies spread out instead of turning out like cakes.

    Spices – Cinnamon and of course, pumpkin pie spice!

    Butter – For non-dairy butter, I use either Miyokos brand or Country Crock Plant Butter. I find those two brands have the closest taste to real butter. If you can have dairy, then go ahead and use regular butter for this recipe. It’s a 1 to 1 substitution.

    Brown Sugar& White Sugar – For this fall flavor recipe, we want brown sugar which imparts a little of the homey molasses flavor. But because of all the moisture from the pumpkin, we need more white sugar to give the cookies the right amount of spread and chewiness.

    Egg – We are just using one egg yolk in this recipe, to act as the binder for the ingredients. I don’t call for a whole egg because we are trying to keep the moisture as low as possible.

    Today Im visiting an incredible blogger friend Sarah of Sarah Bakes Gluten-Free and I really wanted to make her an ultra-special treat. What better way to spread baking cheer than with homemade gluten free vegan Oatmeal Cream Pies? I knew that you would agree.

    Im surprised it has taken me this long to recreate Oatmeal Cream Pies. Probably because they werent really my thing as kid . I was a sucker for all-things processed and I wont lie, I still battle a war with my deep need for potato chips. Lets put it in simpler terms: There really is no battleI just eat them often.

    Making the cookies was a simple task. Most baked goods follow its own ingredient guidelines so the oatmeal cookies for me were easy. The cream filling part however had a bit of a trick to them. First off, I had to remember what the filling used to taste like . I tried doing a shortening and powdered sugar filling like you would find in homemade Oreos but that didnt sit right. So I started to look around to see what others had done which I found a common denominator: Marshmallow Fluff. Im not about to buy a tub of vegan marshmallow crème to only have the remainder sit unused so that option was out. But I did have a plan B.

    Gluten And Dairy Free Oatmeal Cream Pies

    Makes about 25 sandwich cookies

    Preheat oven to 350°F. Line baking sheet with parchment paper.

    In a bowl, combine the flour through cinnamon. Stir and set aside.

    In the bowl of a stand mixer, combine the butter, coconut oil, both sugars, raisin puree, and molasses. Mix until well combined. Next add the eggs, vinegar, and vanilla to the sugar mixture. After blending well, add the flour mixture to the mixer and mix just until everything is combined. Using a medium cookie scoop , scoop cookie dough onto the parchment lined baking sheet. I could fit eight on a pan. Make sure you have enough space between the cookies as they do spread to a flat cookie. Bake 13 minutes. Watch them because they need to be soft baked. Allow to cool on the baking sheet while the next batch bakes and then transfer to a wire rack to cool completely.

    While the cookies are baking, combine the flour and milk for the frosting in a pot. Heat over medium heat stirring constantly and allow to thicken. The mixture cooks in about 5 to 10 minutes to form a thick paste. Allow this mixture to cool completely. In your stand mixer, combine the butter and sugar whip until light and fluffy. Next add the flour mixture, marshmallow fluff, and vanilla to the butter mixture. Whip until well combined and fluffy. Frost cooled cookies and sandwich together to form the cream pies. Store in an airtight container.

    High Altitude Gluten Free Oatmeal Cream Pies

    • Preheat oven to 350F. Prepare your baking sheet by lining it with parchment paper.
    • Crack the egg into a small bowl and set aside.
    • In your mixing bowl add the softened butter, brown sugar and granulated sugar. Mix for a few minutes until it is light and fluffy. Be sure to scrape the bowl at least once.
    • In the meantime, get a small bowl and add the all-purpose gluten free flour, baking soda, salt and cinnamon. Mix lightly with a fork until combined.
    • Once your butter mixture is fluffy, add in the egg and mix until combined.
    • Scrape the bowl and add the vanilla extract. Mix until combined.
    • Add half of the flour mixture to your mixing bowl. Mix until incorporated, then repeat with the other half.
    • Add in the oats. Mix until they are combined, then hand mix to make sure everything is incorporated.
    • Use a 1 1/2 tbsp cookie scoop to place dough on the baking sheet. I recommend only doing 6 per sheet because they will spread while baking. Roll the dough into a ball so they are all even.
    • Bake for about 12-14 minutes, until the edges just start to turn brown.
    • Remove the baking sheet from the oven and let the cookies sit for 1-2 minutes. Then transfer the cookies to a cooling rack to cool completely.

    What Is In The Middle Of Oatmeal Creme Pies

    To make my Little Debby copycat, I used buttercream icing inside my oatmeal cream pies. Make sure your cookies are completely cooled, then add the icing to the middle. If the cookies arent cool, the icing will melt and your sandwiches will fall apart! We definitely dont want that to happen!

    Mash the banana before you do anything else. You want it super smooshy, and as it sits out, itll just improve the texture you need. And then everything else can be whisked together quickly and boom. Your batter is done in less than 5 minutes.
