Chewy Banana Spice Cookies

Gluten-Free, Sugar-Free Vegan Brownies

Our first pick for gluten free sugar free dessert recipes is this chewy, soft and delicious banana cookie. These cookies are healthy to eat and easy to make. With gelatin as an egg substitute, they are perfect for autoimmune paleo diet. Bananas are a great source of energy and potassium and will keep you full for longer hours.

Ingredients

  • 2 tablespoon water or maple syrup
  • 1/4 cup coconut flour

Instructions

  • Preheat the oven to 350o and line two baking trays with parchment paper.
  • Take a bowl and whisk together mashed bananas, gelatin and water/maple syrup. Let this mixture sit for 5 minutes and then add the remaining ingredients. Keep aside for 5 minutes.
  • Roll the dough balls into flattened, 1/4 inch thick cookies.
  • Bake for 20-25 minutes or until the cookies turn golden around the edges.
  • Cool for around 30 minutes and remove cookies from parchment paper.

Notes

  • Consume the cookies on same day or store them for a day in air-tight container.

Recipe Ingredients For These Low Carb Blondies

These blondies only require seven simple, healthy ingredients that you most likely have in your pantry already, especially if you’ve made any of my other recipes. If not these ingredients are easily found in most grocery stores.

As well as only needing a few ingredients, these babies are so easy to prepare. You literally mix together and put the batter into a prepared baking pan, hence the name of these, One Bowl Blondies.

That’s the way I like my dessert, simple to make, clean ingredients and crazy delicious.

  • Almond flour – I use the super fine almond flour in all of my baked goods because it lends the lightest, ideal texture, especially in gluten free desserts.
  • Coconut Flour – Coconut flour is light, naturally sugar free and low in carbs which makes it extremely versatile for low carb baking. I always use this coconut flour for my baking. I love baking with both almond and coconut flour for the perfect texture.
  • Monk fruit – I used the granular form of Monk Fruit for this recipe. The brand I use all the time is this one. You can also substitute with the sugar free alternative of your choice.
  • Eggs
  • Butter
  • Sugar free chocolate chips – I use Lily’s Chocolate Chips that are sugar free and sweetened only with stevia and erythritol. You can use whatever you’d like in here.
  • Sugar free Butterscotch chips – I put these at optional because I am aware they aren’t as easy to find as the plain chocolate chips. I do think they add a fun little molasses flavor to these blondies.

Panna Cotta With Mango Gelee

It is a gluten free diabetic dessert inspired by Italian cuisine. This mango custard is served chilled after supper on a warm summer night. Honey is a natural sweetener that substitutes raw or refined sugar in this gluten free sugar free recipe. It adds sweetness to any dish without compromising on its taste.

Ingredients

Instructions

  • In a small bowl mix 3 teaspoons of gelatin and 3 tablespoons of cold water until gelatin absorbs water and turns soft.
  • Combine 1/2cup milk with 4 tablespoons honey and warm slightly. Remove from heat and add gelatin whisk until melted. Cool slightly. Now whisk in the yogurt, vanilla and remaining milk.
  • Pour this mixture equally into dessert glasses and allow it to set. Save half the quantity of this mixture for later use.
  • Meanwhile repeat the process of making softened gelatin with remaining quantities of water and gelatin.
  • Blend mangoes, lime juice, remaining honey and 1/4 cup water until smooth. Transfer this mix into a saucepan and warm. Remove from heat and add softened gelatin. Whisk until gelatin melts.
  • Divide the mango mixture equally and pour on top of the yogurt-gelatin mixture in the glasses. Chill for around 45 min or till the mix sets nicely.
  • Whisk the previously saved yogurt mix vigorously until smooth. Top it on the mango layer in each glass and chill until the final layer is set.
  • Garnish with lemon wedges and serve.

Alternatives To Refined Sugar

There are so many different unrefined, or less-refined, alternatives to white sugar that it can be confusing. Using them in your kitchen successfully requires an understanding of each product.

Coconut palm sugar is a granulated sweetener made from the sap of the coconut tree. It has a low glycemic index of 35, which has a slower and less severe impact on blood sugar, and also contains important nutrients including potassium, magnesium, zinc and calcium. It is easier to bake with than liquid alternatives because it can generally be substituted one to one however, its flavor is more intense and similar to brown sugar. Since the flavor is stronger than white sugar, starting with 25 percent less coconut palm sugar often yields good results. Coconut palm sugar will also caramelize in the oven, so its perfect for cookies and brownies.

Liquid alternatives include honey, molasses, agave nectar, raw coconut nectar, yacon syrup, maple syrup and brown rice syrup that does not contain barley malt and is gluten free. When using a liquid sweetener, its necessary to reduce the liquid in the recipe by the amount youve added. For example, if you use 1/2 cup of honey instead of white sugar, youll need to reduce other liquid in the recipe by 1/2 cup. Its not a solid rule but instead a good starting point when testing a recipe.
