Whats The Best Way To Cool Yeast Breads

Yeast breads can be very fickle. A tall, nicely baked loaf can all of a sudden start to sink or worse, collapse all together once its taken out of the pan. Lets make sure that doesnt happen to yours!

Pro tip: Remove the bread from the oven like usual. Place it on a wire rack to cool in the pan for about 10 minutes. Now, heres the cooling tip when you remove it from the pan, dont just sit it down and walk away to finish cooling. Lay the bread on its side to cool for 15 minutes. Then flip it over and cool for another 15 minutes.

This way the bread is balanced on all side for forming that nice tall crown. Remember, gluten free breads need that cool down period. Its like a second bake time. And its crucial for the formation of the loaf.

How To Make Sure Your Low Carb Bread Recipe Is Done

The only really challenging part about this low carb bread recipe is knowing when its done. It will look done before it actually is! And if you take it out too soon, it will fall and worse, it will be gummy inside.

Here are 2 ways to test for doneness:

  • The toothpick test. Insert a toothpick and check if it comes out clean. But, note that this bread will pass the toothpick test before its fully done. So, check with a toothpick and then continue baking for at least 10 more minutes.
  • The crust test. Another way to tell is that the top should get very hard and crusty. Yes, this low carb bread creates a hard crust! I actually love that, and its an important marker of the bread being done.
  • Oven temperatures vary, so it might take a little experimentation in yours if its not done the first time. But in general, err on the side of more time and not less. You can always cover the top if it starts to burn, though Ive never had to do that.

    When I first tell people that Im gluten, dairy AND sugar free, the first thing they always ask me is: Well, what do you eat?!!! You would think, having eaten this way for most of my life, I would have a simple, easy and maybe a little sarcastic answer. But the truth is, this question always tends to leave me a little tongue-tied.

    In fact it seems like this is a question that I have to ask myself a lot. What do you eat when you have such limiting food restrictions. Especially when it seems like these three ingredients are in EVERYTHING!!

    The world has progressed a lot in the last 10 years. There are a lot of products and restaurants out there that offer gluten, dairy and sometimes even sugar free options. But I would argue that anyone would be hard pressed to find items that avoid all three.

    Im Allergic To Nuts Can I Make Magic Mug Bread With Other Flours

    Yes! Although we like the flavor best with almond flour it works very well with quinoa flour.

    Coconut flour is also an option. However it is so absorbent, you will need to use only 1/3 cup of coconut four, and add an additional 2 tablespoons oil to soften the bread.

    If you do not need to eat grain free, oat flour is a very tasty option.

    Why Youll Love This Gluten Free Bread Recipe

    1.The soft, chewy interior. The words pillowy soft come to mind with every bite the bread has a gorgeous open crumb and just enough chew to it, like any proper bread should.

    2.The crisp, caramelised crust. The crust cracks and crackles as you cut it, and its full of those amazing flavours that are brought about by the wonders of caramelisation.

    3.The flavour. If you want to compare this gluten free bread to a loaf of regular bread, its on the whole wheat side of the flavour spectrum. Its taste is wholesome and more complex than that of your average loaf of white bread, thanks to the addition of buckwheat flour. At the same time, it doesnt have the overpowering, slightly acidic flavour of, for instance, rye bread. Its a nice everyday sort of loaf, and its amazing with some butter and jam, spread with hummus or as part of a toasted cheese sandwich.

    4.In addition to gluten free, its also vegan. Thats right, theres no eggs and no dairy products in this recipe!

    5.Easily adaptable depending on the ingredients you have on hand. Im fully aware that you might not have all the ingredients on hand, which is why Ive included a detailed list of substitutions at the end of this post and also within the recipe card.

    6.Easy to make. I know that making your own gluten free bread might sound scary and impossible. But believe me when I say its really not. And the results oh my, they are so worth it.

    How To Make Low Carb Bread With Almond Flour

    This almond bread recipe is super easy! Just a few easy steps:

    • Prep. Preheat the oven and line a loaf pan with parchment paper.
    • Stir dry ingredients. These would be almond flour, psyllium husk powder, baking powder, and sea salt.
    • Add wet ingredients. Add the eggs, melted coconut oil, and warm water.

    TIP: Mix well here to create air bubbles! This will help your bread rise.

    • Bake. Transfer the batter to the baking pan, round out the top, and bake until the top is crusty and an inserted toothpick comes out clean.

    TIP: It will pass the toothpick test before its completely done, so make sure the top is very crusty, too.

    Let your keto almond bread cool completely before slicing it, which will allow it to set inside.

    How Should I Store This Gluten Dairy And Egg Free White Bread

    This bread is best eaten fresh Otherwise, you can keep it room temperature, in an air tight container for a day. After that, I would keep it in an air tight container in the fridge. I eat it room temperature, soft and plain for about a day. After that, it gets better if you toast it by that point. Ive never personally frozen it, as we eat it all up, but I would imagine you should slice it first before freezing, and then pull out a slice at a time, and toast it to eat it.

    Making Gluten Free Bread

  • Add the sugar and yeast to your warm water and stir set it aside for 5-10 minutes but no longer.
  • While your yeast is proofing, in the bowl of a stand mixer fitted with the paddle attachment, add the flours, flax seed meal, xanthan gum, baking powder, and salt. Turn your mixer to low and mix just until combined.
  • Add the oil, egg whites, vinegar, and proofed yeast mixture.
  • Turn the mixer to a medium speed and mix for an additional 2 minutes. The dough will be thick and sticky. Turn off the mixer and scrape down the sides.
  • Using a rubber spatula, add the dough to your prepared loaf pan making sure to fill in the corners of the pan and level the top. Wet your fingers and smooth the top.
  • Cover the dough with a lightly oiled piece of plastic wrap and allow it to rise in a warm place for 45 to 60 minutes, or until it has risen slightly above the loaf pan.
  • When the dough is near the top of the pan, preheat your oven to 350°F. Remove the plastic wrap and bake for 60 â 65 minutes. Half way through baking, cover the bread loaf with a piece of foil to keep it from over-browning.
  • Remove the loaf from the oven and let cool completely before slicing. Slice the entire loaf and store in a container at room temperature for up to 4 days or in the freezer for up to a month.

    Mixing The Ingredients And Kneading The Dough

    First, mix the yeast and sugar with some warm water to activate the yeast. After 5 10 minutes, it will become bubbly and frothy, which means that the yeast is active. If theres no bubbles and/or foam formation, youll know that its inactive and you should open a new yeast package.

    Next up, prepare the psyllium gel by mixing the psyllium husk with some water. The gel will begin to form within seconds.

    Then:

  • Add the potato starch, brown rice flour, buckwheat flour,
  • and salt to a bowl,
  • and mix thoroughly to combine.
  • Make a well in the middle and add the yeast mixture,
  • the psyllium gel, and
  • the apple cider vinegar.
  • Now, we come to the mixing and kneading stage theres really no right or wrong way to knead gluten free bread, as you dont have to go though the stretching motions youd typically use to build up the elasticity in a gluten-containing wheat bread.

    Once the wet and the dry ingredients are combined, I tend to squeeze the dough through my fingers until smooth and homogeneous. After a few minutes youll notice the dough coming away from the sides and it will be easy to form it into a rough ball.

    While it wont have the same super-stretchy elasticity of a gluten-containing wheat dough, theres enough elasticity there that you can stretch portions of it without them breaking off.

    Once you complete one 360 degree rotation of the dough, you should be left with a ball of dough. Flip it seam side down and rotate in place to seal the seams.

    Recipe Notes And Top Tips

    Sugar Free Gluten Free Bread Recipe. No Knead Easy Bread
    • Measure the flour correctly: Use the spoon and level method to ensure you dont add too much flour and end up with a dense bake. How? Rather than scooping it into the flour bag, use a spoon to transfer it to the cup. Then use the back of a knife to level off the top. Even more accurately, I always recommend using the weight amounts and scales for any baked recipe.
    • Allow it to rest: Its important not to remove this healthy banana bread from the pan too soon, as it will be delicate straight from the oven. Instead, allow it to cool for at least 30 minutes before removing it from the pan, then allow it to cool completely on a wire rack.
    • To make oat flour: Add the rolled oats to a high-speed blender or coffee/spice grinder and process until floury. You can do the same to make the ground nuts/seeds.
    • For sweeter sugar-free bread: If you have a sweet tooth, add a small amount of sugar-free sweetener to the recipe. Using Stevia drops is the best way to avoid changing the ratio of wet to dry ingredients. Otherwise, I recommend a granulated option .

    Yes, you can freeze this easy, quick bread recipe. Bake the bread as directed and either freeze the entire loaf whole or slice it into pieces. Either way, wrap it with aluminum foil or plastic wrap tightly.

    Then place the quick bread in a storage container or freezer bag. Then when you are ready to serve, just grab a piece and thaw then you can serve.

    How Long To Bake Gluten

    This gluten-free bread recipe works best when baked for 60-65 minutes in the oven or on the gluten-free setting in a bread machine.

    Remember to cover your gluten-free bread with foil half-way through baking so it doesn’t over-brown.

    You might read that a loaf is done baking once it hits around 200 degrees F. Please bake this loaf 60-65 minutes even if your thermometer says otherwise.

    Yes, if you suffer from celiac disease, you can eat store bought gluten free breads.

    However, I would caution you to be extra diligent about reading labels

    Remember, just because something isnt made with gluten-containing ingredients doesnt mean that it cant be contaminated somewhere during the manufacturing process.

    Gluten can hide in the soil of farms and on the machinery at plants, plus countless places in between. For this reason, you should always look for certified gluten free breads.
