Better Batter gluten free flour blend contains the same ingredients you will find in most gluten free all purpose blends. You will find rice flour, starch plus xanthan gum and pectin.

In the Better Batter Artisan Flour you will find that is free of rice because it is sorghum based and instead of xanthan gum they use psyllium husk as the binder. This blend is incredible and you are trying to avoid rice and gums then you must give this blend a try.

Cup4Cup is really a pastry flour. High in starch, lower in protein, its just a dream for pastry. Light and airy, it does just what pastry flour is meant to do: surround the cold butter in a recipe smoothly, and then puff effortlessly when the cold butter hits the heat of the oven and gives off steam.

Cup4Cup does have enough protein and structure to trap the steam given off in the oven, which is important. If you just use a high-starch blend that doesnt have the other attributes of Cup4Cup , it wont trap steam and you wont get the flaky goodness of the beautiful biscuits, scones, pie crusts and puff pastry.

You can buy gluten-free all-purpose flour in an individual package, or in bulk quantities. Individual packages are anywhere from 8 to 32 ounces apiece. Its a good idea to stick with individual bags if you dont plan on using gluten-free flour often, especially since gluten-free flour is only shelf-stable for a few months.

If you expect to use a lot of it on a regular basis for daily cooking and baking, youll save big if you buy gluten-free all-purpose flour in bulk. This usually entails buying three to ten packages at a time from a store or seller. If you use any of these blends, especially Bobs Red Mill or Namaste, your recipe simply will NOT turn out.

King Arthur Flour multi-purpose gluten free flour blend is perhaps the most widely available blend, and I would give anything to be able to use and recommend it. Unfortunately, its very high in starch so its unbalanced, and the rice flour in it is grainy. *whomp whomp whomp*

How To Use The Formula For Making This All Purpose Gluten Free Flour Blend

To prepare each all purpose gluten free flour blend below in whatever quantity youd like, apply each percentage listed for each individual flour to the total quantity of flour that you plan to make, one by one. Add the amounts together, and youll have the total.

For example, if you wanted to put together 140 grams of flour , using the Mock Better Batter Blend, heres the math:

30% BRF = 30% x 140 grams = 42 grams superfine brown rice flour30% WRF = 30% x 140 grams = 42 grams superfine white rice flour15% TS/F = 15% x 140 grams = 21 grams tapioca starch/flour15% PS = 15% x 140 grams = 21 grams potato starch5% PF = 5% x 140 grams = 7 grams potato flour3% XG = 3% x 140 grams = 4 grams xanthan gum2% PPP = 2% x 140 grams = 3 grams pure powdered pectin

If you add up all the numbers, it will equal 140 grams . So make as much or as little as you like.

Now I know that many of you are going to want to tell me about how you buy your rice flour from your local ethnic market, and its plenty fine for you. Or that you grind your own.

Or something else entirely. But if you want consistent quality without making a federal case out of it, you need to buy your superfine flours from Authentic Foods.

The Myth Of A Cup For Cup Gluten Free Flour

Even the founder of Better Batter has told me that its very, very close to her blend. But it is not a true cup for cup replacement for conventional flour.

I dont care what anyone says, including the founder of Better Batteror the makers of Cup4Cup gluten free flour. There is no such thing as a cup for cup gluten free replacement for conventional flour in conventional recipes.

Gluten free baking calls for gluten free recipes. Theyre different, they need different ratios of wet to dry ingredients, different binders, and different methods.

Ive dedicated my working life to making everything as normal as possible, but it will never be exactly the same. We took out gluten. Its just different.

What Makes This All Purpose Gluten Free Flour Blend The Best

When youre first starting out baking gluten-free, sometimes there are tears. Okay when I first started out baking gluten-free, there were a few tears. Okay, fine. Lots of tears. A great all-purpose gluten-free flour blend is salve for our psychic wounds.

Ive done extensive testing of various all purpose gluten free flour blends, and one of my two favorites is Cup4Cup. I did not care for the price, so I hacked it and created a D.I.Y. version of Cup4Cup.

I know many of you really enjoy that blend, and Im so glad. I just didnt find myself turning to it that often, though.

Then I realized that, if Im making the blend myself, Im the Boss of the Blend. And I think Cup4Cup is a bit too starchy.

It tends to make overly fluffy baked goods, and they sometimes dont brown as well as I would like. So guess what? I fixed it. And now I really love it. I think you will, too. Just be sure to use superfine rice flours.

Better Batter How-To: Gluten Free Pastry Crust

The difference between potato flour and potato starch is like the difference between cassava flour and tapioca starch. Potato flour is a powder made from whole potatoes that have been peeled and ground into a fine powder. Potato starch is simply the pure starch, washed out of potatoes then dried into a fine powder.

Potato starch can be replaced with cornstarch, but potato flour has no substitute. If you cant have nightshades, I recommend you try my mock Cup4Cup or Better Than Cup4Cup blends, which dont use potato flour.

If you can have but cant find potato flour, you can actually grind potato flakes into a flour and use that. Its the same thing, just in a slightly different form.
