The sad reality of gluten-free bread is it’s very much at a disadvantage. Without the elasticizing gluten present to give the dough a soft, springy texture, most gluten-free baked goods tend to lack that familiar bread-like feel. That is, until now. A group of Italian food scientists claim to have discovered a gluten substitute that comes closer than ever to the real thing.
Virna Cerne and Ombretta Polenghiwho hail from the land of pasta, pizza, and all of the deliciously gluten-filled thingswere honored at this week’s European Inventor Awards in Lisbon for a discovery that could reshape the way gluten-free goods are made. The scientists, who work for an Italian-based food company called Dr. Schär, say their goal was to find an alternative for the estimated one percent of people who suffer with Celiac disease and other gluten-related medical conditions.
While grocery store shelves are well-stocked with gluten alternatives, as hoards of people who aren’t necessarily Celiac sufferers take to the trend, the majority of products on the market don’t hit the spot when it comes to the taste and texture of real bread. The reason for this, according to Cerne is that “today the gluten-free products include a lot of fiber but the fiber cannot be really elastic.”
The Best Ingredients For Gluten
Look for gluten-free whole grains, legumes , and nuts. Youll get more filling fiber and often protein, plus key vitamins and minerals without having to rely on fortification. Just a note about fiber: Some grain-free breads made from beans and nuts can be very high in fiber. Check the label to see how many grams. Where does it fit into that recommended 25 to 35 grams of fiber per day? Especially if youre not used to it, enjoying a sandwich made with two slices of high-fiber bread can be a little rough on the gastrointestinal system. Start with one slice and drink with plenty of water if youre not sure how two slices will feel.
You also want to check to see whether the product has been certified gluten-free by a third-party organization.

Is Brewers Yeast Gluten
Brewers yeast, also called saccharomyces cerevisiae, is not gluten-free unless specified on the product label. Most brewers yeast is a byproduct of the beer brewing process and contains gluten from the barley used to make beer. Overall, these Mission brand are the best gluten free tortillas and my overall favorite for a number of reasons. Theyre relatively well-priced , are very flexible, widely available and have a mostly neutral flavor.
