    The 20 PPM graph, specifically, represents tests that were performed with a sensitivity level of 20 PPM. Additionally, it also factors in results from other tests that definitively indicated gluten content either above or below 20 PPM. If a test indicated that gluten was below this level, then it is reflected on this graph by raising the percentage shown. On the other hand, if a test indicated that gluten was above this level, it is reflected on this graph by lowering the percentage.

    It’s important to remember that studies have shown that the majority of people with celiac disease can tolerate up to 20 PPM of gluten in foods without adverse effects, so if a food consistently tests gluten-free at this level, it’s probably safe for most people with celiac disease.
