When we started on this gluten-free journey, we mourned bread as we knew it. I never thought we would find a good tasting, soft, chewy bread again. I had lost all hope. We bought Udis gluten-free bread, and it was pretty good but still not the same. THEN.then, I found this recipe for THE BEST Gluten Free Sandwich Bread. It is like the holy grail of bread recipes! This bread recipe is not like baking a gluten bread, but it is still easy enough to make!

Prior to ordering, I immediately asked the staff what procedures they use to prevent cross contact. He promptly explained that they wipe down the prep area and the slicer.

He also explained that they wash their hands and put on new gloves. In addition, he explained that the Udis Gluten Free sub roll is enclosed in an individually sealed bag. The staff thawed it in the microwave. (Pretty sure this was done still in the packaging.

Additionally, the employee explained they put down fresh parchment paper as a barrier and always and only cut the sandwich with a designated knife, only used for gluten-free sandwiches. I watched him complete each step just as he described. He also explained that all the meats and cheeses were gluten-free, EXCEPT the Meatballs and the Chicken Parmesan. I was thoroughly impressed. We were the only diners at the time, as we came for a late lunch after running errands. I would hope all these precautions would be followed even if it were busier.

Jersey Mikes Subs Review

  • Udis-made rolls are individually sealed and opened only when a customer requests them.
  • Subs are prepared on a parchment paper, so as to put a barrier between the sandwich and the counter.
  • Employees put on clean gloves when preparing an order.
  • Dedicated knives and other utensils are used.
  • Customers can request to have toppings pulled from fresh bins in the back so as to prevent potential contamination from the assembly line.

Disclaimer: Yes, I had a wonderful experience, but that does not mean that every Jersey Mikes Subs location guarantees a similar experience. Ask questions, watch the sub preparation carefully, and dont let your guard down.

Yes, Jersey Mikes has gluten-free bread that is safe for customers on medically-necessary gluten-free diets.

In December 2017, Jersey Mikes announced it would be using pre-packaged gluten-free sub rolls by Udis at all of its 1,300 locations nationwide. The company says, Udis gluten free sub rolls arrive at the restaurant individually wrapped and fully baked. The packaging is not opened until the sub is ordered and, as a result, there is little risk of cross contamination with other subs.

The bread rolls ingredients are water, tapioca starch, brown rice flour , canola oil, egg whites, resistant corn starch, tapioca maltodextrin, cane sugar, sugar cane syrup, rice bran, yeast, sugarcane fiber, salt, gum , cultured corn syrup solids, citric acid , locust bean gum, enzymes, and white rice flour.

Prior to its nationwide launch, Jersey Mikes had begun testing the Udis gluten-free rolls in 111 Los Angeles and 19 West Palm Beach locations in December 2016.

The idea of offering gluten-free bread rolls came from a franchisee whose daughter had celiac disease. Given the severity of celiac disease and the difficulties of feeding someone a safe gluten-free meal without exposing them to even a crumb of gluten, a protein found in wheat, barley, rye and sometimes oats, is a challenge. The potential for gluten cross contamination in sandwich restaurants is a real threat to the health of someone with celiac disease.

Tips And Tricks For Making Homemade Subway Bread:

  • I have had a few people email me and say that just before baking they brushed the outside of the dough with olive oil or butter and then sprinkled on some Italian seasoning and some Parmesan cheese for a great homemade Subway Italian Herb and Cheese bread. I cant wait to try this myself.
  • This bread froze just about as well as other breads. It was still soft but seemed a bit dryer after freezing. Fresh is best but they do freeze and thaw well.

Udis Style Gluten Free White Bread Recipe

A couple of days ago I made my first attempt at making a copycat recipe for an Udis-style gluten free white bread recipe. It was a flop. Today I took another stab at it and created a decent gluten free white bread recipe! Yeah! Its not perfected yet but still tasted wonderful, even after it cooled. I used many of the ingredients which Udis white bread contains, however, the rice flour is just a little grainy. You cant notice it in a sandwich, but you can notice it a little when eating it plain. Id really rather use sorghum flour instead of rice flours, but just had to give this a go. Meanwhile, the texture of this bread is wonderful! -similar to sourdough sliced bread. It has that Udis chew, yet soft. And this recipe makes a much larger loaf than Udis white sandwich bread. I also added some substitutes for corn-free dieters. Enjoy my gluten free white bread recipe!

It had just a tad too much moisture, evidenced by the slight sinking in of the bottom and a little on one side of the loaf. You can see the built-up condensation in the photo above at the bottom of the loaf. It only occurred after removing from the oven. And once I sliced the ends off to allow the steam to escape, it stopped sinking in So I reduced the water by 2 tablespoons in the recipe below. Ill give it another go and see if it needs to reduce further and will keep you posted.

Udis Gluten Free Croutons

So many of my followers have been enjoying the new Udis Gluten Free Soft White Sandwich Bread that I thought I would make a copycat recipe. My husband really enjoys it for toast and for sandwiches. This bread is designed to make sandwiches in advance and the bread remains soft and fresh. It is wonderful to toast as well. Keep in mind that while this bread is denser compared to my other gluten free bread recipes, you can leave it on the counter and it will remain fresh for at least two days. The real Udis new Soft Gluten Free White Bread Ingredients:

Water, Modified Tapioca Starch, Rice Flour, Rice Starch, Canola Oil, Tapioca Starch, Cane Sugar, Sorghum Flour, Egg Whites, Sugar Cane Syrup, Modified Cellulose, Cultured Brown Rice, Brown Rice, Salt, Yeast, Guar Gum, Xanthan Gum, Enzymes.

While I did use modified tapioca starch , I did not use cultured brown rice or modified cellulose, which are all highly processed ingredients.

Invert Syrup and Brown Rice Syrup Substitute:

Youll notice that Udis recipe calls for sugar cane syrup. It is the same thing as organic invert syrup. If you do not have access to either invert syrup or gluten free brown rice syrup, just boil 3/4 cup water with 3/4 cup sugar and cook until it reduces and reaches the consistency of syrup. Just use 1/4 cup. you can also substitute with agave syrup or honey.

Ingredients In Udi’s Gluten

Because gluten performs a number of functions in bread doughsuch as binding, elasticity, structure, and moisture retentionwhen it isnt present there need to be replacement ingredients that will mimic these functions. Therefore, the ingredient list for gluten-free baked goods will contain some that may be unexpected. However, there are also ingredients that are found in regular bread, so dont be alarmed by the several multi-syllabic words that you may have never heard of.

For example, Udis uses an array of dough conditioners, including calcium sulfate, monocalcium phosphate, cultured dextrose, ascorbic acid, microcrystalline cellulose, and enzymes. Dough conditioners are used by virtually all commercial bakeries to create an environment within the dough that yeast thrives in. Dough conditioners make baked goods lighter with better crumb texture and can retard staling.

Otherwise, the ingredient list includes tapioca starch, brown rice flour, teff flour, flax seed meal, and potato starch to replace the regular wheat flour. It also contains yeast, egg whites, and baking powder and soda to assist in leavening, and the xanthan gum is a common additive that helps in binding ingredients together. Also on the list are canola oil, sugar, apple cider vinegar, salt, and cornstarch.

A serving of Udis gluten-free multigrain bread is 140 calories, 4 1/2 g total fat, 0 saturated/trans fat, 0 cholesterol, 24 g carbs, 3 g sugar, 1 g fiber, and 2 g protein.

Ingredients: water, pea starch, modified tapioca starch, rice starch, canola oil, rice flour, sorghum flour, tapioca starch, invert cane sugar, egg whites, cane sugar, modified cellulose, apple cider vinegar, salt, yeast, cultured brown rice, brown rice, guar gum, xanthan gum, enzymes. contains: eggs.

Nutrition : 140 calories, 4g fat, 24g carbs, 1g fiber, 3g sugars , 2g protein.*

I never look. But this time, I did. And this time, I saw the Jersey Mikes ad that featured the Udis gluten-free sub bread. Okay, maybe it was a sign. I needed to try it for myself. Thankfully, I have a Nima Sensor, so I feel like I can stay safe, even when its in a sketchy situation.

Jersey Mikes Subs, known for its fresh sliced and grilled sandwiches, is introducing gluten-free rolls nationwide. The new rolls will be featured in every one of the brands more than 1,300 locations. After receiving positive reviews in test markets, Jersey Mikes plans to launch the glutenfree sub rolls December 4.

Nutrition : 120 calories, 4g fat, 22g carbs, 1g fiber, 3g sugars , 3g protein.*

Final Thoughts On Jersey Mikes Gluten Free Subs

To summarize, we really enjoyed our Jersey Mikes gluten free sub sandwich. We have a variety of options to eat, as all except two of the meat options are gluten-free. They took many good precautions in making our sandwich. I would prefer that separate toppings be set aside for those needing gluten-free. This is because any crumb of gluten is problematic for one with Celiac Disease. As Jersey Mikes continues their certification process, I imagine that the process will become even better. While the bread is $3 more for the large sandwich, I believe this is totally reasonable as they continue to talk precautions to keep us safe.
