How To Thicken Alfredo Sauce

If youd like to learn how to thicken Alfredo sauce, its a lot easier than you think. Theres a few different ways you can do it.

  • Make a roux. Which basically means melt some butter in a pot, sprinkle a few tablespoons of gluten free flour in there, when whisk like your life depends on it. After a minute or so, itll start browning. Then pour your milk in and continue to whisk. In another minute or so, your milk will start to thicken beautifully. This is when you add your spices and cheese, and whisk until its all melted and beautifully combined. This is probably the most successful way I know how to thicken Alfredo sauce.
  • Add more cheese. A more calorie-dense way to thicken Alfredo sauce, and often used. You can just keep dumping cheese into it until its thick. I mean, its delicious. But youll be at 500,000 calories by the time you add pasta to it.
  • Make your Alfredo sauce with cream cheese. This ones a no-brainer. Start with a thicker, creamier base, and youll get a thicker, creamier sauce. Like I mentioned above, I use Neufchatel cheese to bring the calories and fat down a little bit, and it works just as well as cream cheese.
  • Eat Gluten Free At These Chain Restaurants

Olive Garden now offers gluten free pasta.

Looking to dine at a chain restaurant but on a gluten free diet? Dont despair: just about every chain offers menu items that are gluten-free. Some have special menus devoted just to gluten-free dishes, some serve dishes that simply dont contain any ingredients with gluten, and others can modify existing menu items so that they dont contain any gluten.

If you have celiac disease, always make sure that your server and the manager know that anything containing gluten can make you sick, because while gluten free awareness among restaurant staff is becoming more commonplace, theres still a major learning curve for example, not many people know that deep fryers can cross-contaminate if theyre shared with non-gluten-free foods. So be careful, but these restaurants tend to have a pretty good track record when it comes to gluten free dining.

We really like the Trader Joes Rice Penne Noodles for this dish but any gluten-free pasta noodle works. If you arent a penne fan, throw in some fettucini or spaghetti noodles. There is no wrong noodle! Keep in mind that gluten-free noodles dont keep as well as traditional pasta!

I like to also grill or pan fry chicken with mine but if youre looking to make the dish vegetarian, just exclude the chicken. At the end I also like to toss in some basil or spinach just a few leaves that wilt when tossed in the final dish! These are also optional. I just love the pop of color and the flavor!

And last, but not least, I love to sprinkle some Mrs. Dash Original seasoning and add some gluten-free garlic bread for dipping!

Would Olive Garden be my first choice for a gluten free dinner? Probably not, but if Im with a group of friends who want to eat there, there are at least some options for me.

I think there are better places to eat gluten free food, but do appreciate Olive Gardens attempt at explaining their procedures and being more transparent out it than most restaurants.

Why Make Alfredo Sauce With Cream Cheese

In most Alfredo sauce recipes, youre going to find heavy cream and about 100,000 pounds of cheese. I mean, it tastes amazing. But I think you can achieve a creamy, rich texture without going so crazy on the calories . So, I make my Alfredo sauce with cream cheese, or Neufchatel cheese .

If you want to go more a traditional route, all you really need is cheese, butter, and salt. Serious Eats has a great article about it over here.

Does the Olive Garden make its Alfredo sauce with cream cheese? I have no idea. But what I do know is that this recipe comes out amazing every time, and tastes just like an Olive Garden Alfredo Sauce recipe. Plus, it only takes about 15 minutes to make, if you grate your own cheese. I use my big food processor, which has a grating/shredding blade on top. Honestly, I use this so often, I really couldnt live without it!

The Chain Breaks One Major Pasta

If you don’t salt boiling water when you cook noodles, you’re in pretty prominent company: Olive Garden doesn’t either. It skips the seasoning to maintain a longer warranty on its pots, Business Insider reports.

Apparently, though, guests don’t mind the lack of salt the company just reported its best quarterly sales in years.

Whats Gluten Free At The Olive Garden

Eating out when you cant eat gluten is hard to do, and the Olive Garden, unfortunately, doesnt make this process easier. In this post, Ill talk about whats gluten free at the Olive Garden and take you on a tour of the Olive Gardens gluten-free menu. I also tested three items for hidden gluten and reveal the results below. This post contains affiliate links. Please read my disclosures.

Before being diagnosed with celiac disease in 2012, I loved eating at the Olive Garden. Id always ordered a big bowl of pasta or chicken parmesan, and I always indulged in one too many soft and doughy breadsticks. I couldnt get enough of the bottomless salads with crunchy croutons either.

Alas, my breadstick and gluten-y pasta days are behind me now that I have celiac disease, a rare autoimmune disease where my body attacks the healthy tissue lining my small intestine every time I eat gluten, a protein found in wheat, rye, barley and sometimes oats.

However, despite being on a strict gluten-free diet, I still, on occasion, have had a meal at the Olive Garden. Its not my favorite restaurant because the gluten-free food is only okay, at best. And to be honest with you, after I wrote this article, and found hidden gluten in one of my dishes, I havent been back.

If you eat at the Olive Garden, you need to do so with a whole lot of caution, make good choices when ordering, and communicate your dietary needs as clearly and specifically as possible with your server.
