Campfire Skillet Pizzas Cooking Instructions

*This recipe will make one 12-inch pizza with a thick crust, or two 10-inch pizzas with thinner crusts when using refrigerated dough.* The pre-made gluten-free pizza crust featured in this recipe is approximately 8 inches in diameter.

1. To cook over the campfire, make sure the flame has burned down to a height below your cooking grate. You dont want your skillet to be directly touching the fire or youll burn the pizza crust.

2. Spray the skillet with non-stick cooking spray or brush with oil.

3. Spread the refrigerated pizza dough on the bottom of a 12-inch cast iron skillet, or divide the dough evenly between two 10-inch skillets. Fold the edges over to fit the round pan.

4. Place the skillet on the fire cooking grate or on the camp stove and cook the pizza crust until the bottom is golden brown. This may only take a few minutes depending on how hot your fire is.

5. Remove the pan from the heat and carefully flip the crust in the pan with a spatula.

6. Spread a layer of pizza sauce on the crust, then add cheese and toppings.

7. Cover the pan with a lid or aluminum foil, then return to the heat and cook until the crust is done and the cheese is melted.

8. Let the pizza cool, then slice and enjoy!

Freezing Uncooked Gluten Free Pizza Crusts

If youd like yet another way to prepare several of these yummy gluten free pizza crusts in advance, freeze them and bake them later all at one time hop to In Angelas Kitchen for her how-to photos of how to make your own frozen pizzas with my mix! Angela:

Cut 8 parchment circles 2 inches larger than trays. Lightly oil trays so parchment sticks, put parchment circles on trays, then oil parchment. Set aside.

Working with only 4 crusts at a time, mix together 4 crusts according to the package directions. Divide pizza crust between 4 prepared trays. Drizzle a bit of olive oil over each crust. With well oiled hands, pat out pizza crusts, leaving a ridge at the edge to contain toppings.

Spread pizza sauce onto each crust. Add toppings.

Wrap each pizza well, label and freeze. Repeat with remaining pizza crusts and toppings.

To bake: unwrap pizzas and remove from trays. Place pizza on your favorite pizza baking pan, pizza stone or directly on the baking rack of the cold oven. Close oven door. Set oven to bake at 400 degrees F. Check pizza after 25 minutes. Depending on toppings, bake for another 15 to 20 minutes until crust is baked through and toppings and bubbly and cheese is melted. They are usually circular pans and have lots of little holes in them to help the air flow and to make the outside of the crust crisper, while allowing the inside crust to remain chewy.

Par Baking Pizza Crusts

Who doesnt love the convenience of pulling a frozen pizza out and shoving it in the oven? Well next time you make this recipe , make two and freeze one!

My gfJules Pizza Crust Mix actually makes 2-3 large pizzas already , so if youre not in the mood for two large pizzas today, youll be set, because you can easily par bake one and freeze it for later!

You can even make these delicious, authentic gluten free pizza crusts into HEART shapes

Heres how to par bake any shape crust and freeze them for later:

Follow the instructions for making, spreading and rising the pizza just as you would normally, but then bake it at 450F for only about 5 minutes, or until the dough has puffed and is starting to look a bit dry but not brown.

Remove the crust to cool to room temperature and then either cover with toppings or not, your choice. Either way, at that point, wrap the pizza well with plastic wrap twice. This will prevent freezer burn. If you know youll be keeping it in the freezer for a few weeks or even a month, Id suggest another layer of foil, as well.

When youre ready for gluten free pizza next time, preheat your oven to 500F, then remove the foil and plastic wrap. If you havent already topped it previously, add sauce and toppings now.

Place the frozen gluten free pizza on your favorite pan or pizza stone and place it in the preheated oven, baking until the crust is browned and your toppings are melted, at least 10 minutes.

How To Make Gluten

  • Preheat your oven to the proofing setting or to 200°F. Once it gets to 100°, turn off your oven.
  • In a large bowl, combine the all-purpose gluten-free flour, instant yeast, gluten-free baking powder, and salt. Stir to combine the ingredients.
  • Warm the water to 110°-115°F. I microwave the water in a large glass measuring cup for 45 seconds. I also use a thermometer to check the temperature. If your water is too hot it will kill the yeast.
  • Add the honey to the warm water and stir until it is dissolved.
  • Pour the warm water and honey mixture into the gluten-free flour mixture and mix with your mixer on low. .
  • Pour the olive oil and apple cider vinegar into the dough mixture and mix on low speed for 1-2 minutes, until the dough starts to form. The dough will be very sticky.
  • Place the pizza dough in a greased ovenproof bowl and cover with plastic wrap. Cover the bowl with a towel and place in your warm oven for 30 minutes to rise.
  • Remove the dough from the oven and preheat the oven to 425° F.

Crust too crumbly or dry?

Make sure to use the blend of gluten-free flours we recommend in the notes. We cant guarantee results with other combinations of gluten-free flours as we havent tried them. For tips on store-bought brands, we recommend checking the comment section to see what others have tried.

Crust too tough or hard?

Next time, try cooking it for less time and/or rolling it slightly thicker.

Whats the best way to freeze this pizza crust?

Par-bake crust 20-30 minutes, then let cool and transfer to a sealed container and store in the freezer up to 1 month.

Where Is The Best Place For Rising Gluten

Yeast pizza dough rises best in a warm location. My oven has a bread proofing mode and that is where I allow my pizza dough to rise. When the oven is set in bread proofing mode it is 100°F.

If your oven does not have a proofing mode you can preheat the oven to 200°F. Once it gets to 100°, turn off your oven.

I know that some people proof their dough ontop of their oven as they preheat it to 425°F. The pizza dough needs warmth to rise properly.

Other Ways To Cook Gluten Free Pizza

Ive also used a portable pizza oven when I offer samples at gluten free shows. My favorite so far is the Presto Pizazz® Pizza Oven. This handy gadget is fun to watch in action and takes any guess-work out of rising and baking a pizza.

Another option is to simply cover a baking sheet with parchment paper sprayed with cooking oil and bake the pizza in a round or rectangular shape on that. Whichever pan or method, this recipe can make a thin or thick crust and will make your whole family happy.

Particularly when using a regular baking sheet though, dont make the center of the crust too thick or use a very watery pizza sauce, as it will be harder to get that part of the pizza nice and crispy on the bottom.

Tips For Measuring Gluten

The best way to measure gluten-free flour is the spoon & level method. Using a spoon, scoop the flour into the measuring cup. After youve spooned the flour into the measuring cup, use the back of a knife to level off the top of the measuring cup. Please do not scoop the flour out of the bag with your measuring cup or you could get more gluten-free flour than the recipe calls for.

Also, use a measuring cup made for dry ingredients .

Is Yeast Gluten

Most yeast is gluten-free, but some kinds of yeast do contain gluten. The most common kinds of yeast used for baking, like bakers yeast, active dry yeast, and instant yeast, are gluten-free.

I use Fleshmans Rapid Rise Yeast, and it is labeled gluten-free. Always check your labels.

I have not tried this recipe with active yeast . If you want to use active yeast, you will need to proof the yeast first and you will need to double the rising time.
