This is, hands down, the best gluten free pizza crust. Its crisp on the outside, chewy on the inside, and is also dairy free and vegan. Having a really easy gluten free pizza dough recipe makes life that much better. With just a handful of ingredients, you can have the best gluten free, dairy free, and egg free pizza ever.

I dont know about you, but once I started eating a gluten free diet, this became one of my top priorities to figure out:

Find gluten free pizza. Find the best gluten free pizza.

For a date night a while back, my sweet husband took me to a pizza place that had the coveted gluten free pizza crust. I was thrilled. And extra thrilled that I didnt have to bring my own dinner .

That experience, however, can be summed up in one word:

Disappointment. .

It was not good pizza. It was edible, sure. But it wasnt good.

How To Make Gluten Free Pizza Crust

What I love about this crust is how truly easy it is to make! All you need is a bowl, a whisk and a spatula. First you whisk together the wet ingredients. Next you add in the dry ingredients, whisk together until you cant whisk anymore, and then continue to stir it together with a spatula.

Because were using coconut flour, the dough will look more like a batter and thickens as it sits. After its been mixed together, let it sit for about 5 minutes.

Next, you dump the dough on a piece of parchment that is dusted with tapioca starch. The dough will be sticky. Dust your hands with tapioca starch, as well as the top of the dough. Using your fingers pat the dough down into a circle 8-9 circle, dusting with additional tapioca as needed. The thinner you pat out the dough, the crispier the crust will be.

Once you have formed your pizza dough you can lightly brush off any excess tapioca flour.

What Is The Best Flour For Gluten Free Pizza Crust

Rice flour.

You want to use a gluten free flour blend that is rice flour based.

That means that if you look at the ingredients on your bag of flour, rice flour will be listed first.

I prefer to make my own from bulk ingredients , but you can certainly buy a good gluten free flour blend, too!

Using Expandex Modified Tapioca Starch For Chewier Gluten Free Pizza Dough

For a complete discussion of how Expandex adds value to this recipe, please scroll up a bit. If you dont have or dont want to use Expandex, you can use 2¾ cups all purpose gluten free flour and make up the remaining ¼ cup of flour with regular tapioca starch/flour.

Tapioca starch will help a bit to make the recipe chewier, although not as much as if you used Expandex. There is no need to add more water to your dough if you arent using modified tapioca starch.

Freeze The Parbaked Gluten Free Pizza Crust

If youd prefer to have a half-baked crust on hand, dinner can be as easy as a premade, packaged frozen pizza crust. Just follow the recipe instructions through step 3 below.

After the crust has been parbaked for about 7 minutes in a 400°F oven, allow it to cool completely. Once the crust has cooled completely, wrap it very tightly. I like Glad Press n Seal freezer for this sort of thing.

Place the parbaked crust in the freezer for up to a month. Even better than Press n Seal is a food sealer that removes all trapped air from the container, since trapped air is what causes freezer burn.

Whey protein isolate is simply a milk protein powder that is nearly 100% protein and is often used for bodybuilding and low carb recipes these days. Ive found that it behaves a lot like gluten in baking.

However, whey protein isolate tends to make raw dough very soft. Together with Expandex modified tapioca starch, it allows for the creation of gluten free bread recipes that look, feel and taste more like conventional yeast bread.

One of the things I felt devastated about when my family took the gluten free journey was the thought of never again having pizza. Where Is The Best Place For Rising Gluten

Yeast pizza dough rises best in a warm location. My oven has a bread proofing mode and that is where I allow my pizza dough to rise. When the oven is set in bread proofing mode it is 100°F.

If your oven does not have a proofing mode you can preheat the oven to 200°F. Once it gets to 100°, turn off your oven.

I know that some people proof their dough ontop of their oven as they preheat it to 425°F. The pizza dough needs warmth to rise properly.

  • Mix your warm water, sugar, and yeast. Let it sit until proofed.
  • Add ingredients to mixer and mix until combined.
  • Scrap the sides of the bowl until the dough is in a loose ball.
  • Using oiled hands, spread the dough into a circle about 10-12 inches in diameter.
  • Bake for 8-10 minutes or until the center is set. Remove from the oven.
  • Spread marinara sauce . Leave a little bit of space between the sauce and the edges.
  • Sprinkle on cheese of choice.
  • Add any additional toppings and place back in the oven. Bake for 8-10 minutes or until the cheese is melted and starts to turn brown.
