I just returned from the National Restaurant Association Show, where we surveyed chefs, foodservice managers and restaurateurs from across the country. We were shocked to find that 97% of those surveyed many of whom were already offering gluten-free options could not answer four basic questions about gluten. More than 50% couldnt even name all three prohibited grains.

Now, you can see why the NFCA is passionate about restaurant training, and about making the gluten-free community aware of restaurant practices that may put their health at risk.

On Monday, May 7, 2012, Dominos launched Gluten Free Crust in its stores nationwide. Dominos partnered with NFCA and invited us to play a role in ensuring the safety of those with these gluten-related disorders. As a patient advocacy group, we felt it was our obligation to do so.

NFCA consulted with Dominos on this launch and after reviewing operational procedures, we decided that we could not recommend this product for those with celiac disease. We urge those with non-celiac gluten sensitivity to exercise judgment in deciding whether to order this pizza.

Dominos partnered with NFCA because they wanted input from gluten-free experts. Instead of launching a gluten-free product independently, they actively sought out the NFCA and its GREAT Kitchens program to understand the safest, most transparent way to go to market.

The Problem With Cross

MOD Pizza themselves have taken the unusual step of stating that anybody with celiac disease should not eat their gluten-free pizza. However, its not because of gluten in the crust. Instead, its all connected to the possibility of cross-contamination.

They accept that things do not work as smoothly as they should when it comes to dealing with gluten-free products. People working in their restaurants will make mistakes and place gluten-free crusts where crusts that contain gluten were just sitting.

Also, they do accept that people forget to change utensils, so the same equipment is used no matter the pizza. While this does make you feel rather disappointed, at least MOD Pizza comes across as honest about their failings.

So the issue regarding cross-contamination is very real, and its something you must think about carefully before you order. However, we do feel that people simply with gluten intolerance will more than likely have no issues.

    Not only this but the utensils and baking equipment used to cook their gluten-free pizza are the same as the ones they use for their regular pizzas.

    This is unfortunate as it does mean those who struggle with coeliac disease cannot eat at Dominos store at all due to the cross-contamination.

    Dominos has worked with a leading gluten awareness organization to monitor their current operation model in their kitchens which helped them recognize that they cannot assure those with coeliac disease that their products are suitable for them.

    Further research into Dominos gluten-free pizza provided us with some insight into past customer experiences where people have been told the gluten-free pizza is coeliac friendly and then theyve suffered a reaction and been extremely sick for a few days following eating it.

    Dominos should do more to train and educate all their staff to know what is and what is not suitable for customers based on their dietary needs, and if they are unsure then they should speak with a more qualified member of staff to confirm this uncertainty instead of relaying false information to customers.
