    Absolutely! For hamburger buns, divide dough into 3-ounce portions and space about 2 inches apart on a parchment-lined baking sheet. Proof and bake as directed in recipe. For hot dog buns, roll 3-ounce pieces into ropes and place about 1 inch apart on parchment-lined baking sheet. Proof and bake as directed in recipe.

To freeze baked rolls, wrap individually in plastic wrap and store in a gallon ziptop bag for 2 months. Wrap rolls in foil and reheat at 300 degrees F for 15 minutes.

    If youve made my gf white sandwich bread or Olive Garden style breadsticks, then you already know about a tangzhong and the magic that it works in bread baking. This, combined with some dry milk powder and a few enrichments, is what makes these rolls so darn soft.

    To recap what a tangzhong is, its when a small amount of the flour from the bread is cooked with a small amount of liquid and it creates a thick paste. This paste pre-gelatinizes the starches in the flour, which means they can absorb more liquid. I had worked on this bread dough for years when I finally posted it for the first time. Its a dough thats not too sweet, but something that creates soft, fluffy rolls that will serve as simple dinner rolls, buns for hamburgers, hot dogs, or sandwiches.

    Be Patient But Don’t Let It Rise Too Much

    If your dough hasn’t risen enough after shaping, your kitchen might be rather dry or a bit on the chilly side. Don’t worryif you’ve measured your ingredients properly and you’ve covered the baking sheet properly, the dough will rise.

    If the environment isn’t quite right, it will just slow the yeast’s activity. Be patient with the rise.

    Since this recipe is made in the batter-style , it doesn’t rise as smoothly as the recipes made with gluten free bread flour. When conventional bread rises, the gluten creates an invisible netting that traps the rise and keeps the top of the bread taut, like when you pull plastic wrap tightly over a bowl.

    Without the gluten or even a super close replacement, in a recipe like this, the top of the dough will become pitted and cratered at the very end of a proper rise. When the craters begin to form, the dough has risen fully and it’s ready for the egg wash and a spin in a hot oven.

    Don’t Be Afraid Of A Wet Dough

    If you want any yeasted dough to rise, you must have a proper wet to dry ingredient ratio. When the ratio of wet to dry ingredients is too low, the dry ingredients are overwhelming the wet ingredients , and the yeast will not rise. That’s just the way it works.

    Yeast isn’t active at very, very high temperatures or very, very low temperatures, but it’s rare that temperature will prevent your dough from rising. Those toxic temperatures are very extreme.

    If your dough isn’t rising, it’s usually because your dough is too dryor you didn’t wait long enough.

    Shape With Plenty Of Extra Flour

    In this sort of recipe, I prefer to start with a wet dough. It’s more difficult to shape and handle, but you can flour the dough generously during shaping without drying it out too much.

    Just handle the dough with a light touch, and even a higher quantity of extra flour won’t incorporate into the center of the dough where it will stifle the yeast.

    • To store: Leftover buns should be stored in the refrigerator, covered. They will keep well for up to 1 week.

    Walmart Gluten Free Bread And Buns

    I want to start by saying that this is not a sponsored post. Walmart has no clue who I am. Today I am just sharing a product that my family has been enjoying and that I thought you might too.

    Since going gluten free I have realized that I eat less bread. The fact is that bunless hamburgers are good. Not quite the same, but still good. I have also learned to love eating just meat and cheese instead of always eating a sandwich.

    However, sometimes you just want some bread or a sandwich or a somewhat normal hamburger.

    I have been gluten free since 2009. Back in 2009 the gluten free options were a bit limited compared to now.

    Today you can find gluten free bread in most groceries store and some of it is actually good gluten free bread. In fact, there are several brands of gluten free bread that we love and buy often.

    One of our new favorite brands that we have tried recently is Walmarts gluten free bread.

    The main thing I love about Walmarts gluten free bread and buns is that it is convenient. I am at Walmart at least once a week. Some of you may be thinking wow you go to Walmart a lot, but not really. The fact is that I live in NE Oklahoma. Less than two hours from Walmart headquarters.

    That means that we are surrounded by Walmart stores. So maybe not surrounded, but we have a lot of them. I think I have five Walmart stores all within thirty miles of my house. No matter which direction I go, I can get to a Walmart quicker than almost any other store.

    Gluten Free Egg Free Hamburger Buns

    There is one egg white in the bread dough, which helps them rise.

    You can try replacing it with aquafaba , but I’m afraid I haven’t heard about great results from using that in baking.

    The egg wash on top of the rolls can be replaced with melted butter or even some olive oil. It helps the rolls brown lightly in the oven, and take on a slightly shiny appearance.
