Bob’s Red Mill…My Gluten Free Flour of Choice

Cornbread is great topped with butter, honey or jelly. I like to brush my cornbread with melted butter when it first comes out of the oven before I slice it.

This easy homemade gluten-free cornbread is the perfect bread to serve with soups, Beef Stew, and chili, but it also goes awesome with my Crispy BBQ Chicken Thighs. It can also be eaten for breakfast!

This recipe for gluten-free cornbread is so easy that you wont go back to the boxed gluten-free cornbread mix once you try it! Its sweet, and the texture is the perfect balance between soft and firm.

Cornbread should not fall apart when you pick it up but should melt in your mouth. Its super easy to make and can be eaten with dinner or for breakfast.

Can You Freeze Cornbread

Yes, you can freeze cornbread. Cut the cornbread into squares and place it in a freezer-friendly, air-tight container. If layering the cornbread, place parchment paper between the layers to avoid it sticking together. Defrost the cornbread by letting it sit at room temperature for 30 minutes. Reheat in the oven or microwave.

Arrowhead Mills Organic Yellow Cornmeal Gluten Free

Its full of flavor and a staple food for anyone thats gluten-free. This cornmeal is more expensive, at around $7 a bag. But will still be easy to source in your local grocery store. The perk of this brand is that its organic, which may be something of importance to you.

The only ingredient in this cornmeal is organic whole grain yellow cornmeal. Its also low fat, dairy-free, and sodium-free. This means its suitable for a selection of dietary lifestyles.

For Americans, cornbread is among the most popular southern comfort classics! It continues to be lovingly served as a side dish to a delicious warm meal, or as a filling afternoon snack. I can remember the frequent days when my mom would make Jiffys cornbread for our family during weeknight dinners, and holidays while she was a stay at home mom. It was honestly one of my favorite things to eat while I was growing up!

Recently, Ive been learning all of the various ways that people have enjoyed eating cornbread in their homes. My friends and coworkers have mentioned eating their cornbread sweet with honey, moist and cake-like, greasy, spicy with jalapenos, and cheesy. Whatever your opinion is on how you feel cornbread should be, I believe we can all agree that it is truly a great gift to the culinary world! Its delicious and affordable to everyone around the world to be enjoyed in any special way you like!

To make my cornbread, I veganized the recipe from the back of the Bobs Red Mills cornmeal package. For those living in Seoul, if you go to the Itaewon foreign food marts, you could also pick up a bag of large coarse grain cornmeal, and further break it down in a small blender to make it usable for this recipe.

How To Make Gluten

Buy Bobs Red Mill Medium Cornmeal (4 Pack), Gluten Free ...
  • Preheat oven. If using a cast iron skillet, place it in the oven to preheat. A hot skillet gives the cornbread a crunchy exterior. Dont have a skillet? No problem. Use a cake pan.
  • Make the batter. Whisk together the dry ingredients. Dont skip this step you want the baking powder, baking soda, and salt evenly distributed throughout the other ingredients. Add the wet ingredients and stir until the batter is almost smooth. Dont worry about a few lumps here and there.
  • Bake. Pour the batter into a greased 8-inch skillet or 8-inch cake pan. Bake until set.
  • Cool. This is the hardest step. Before serving, cool the cornbread for about 5 minutes. Cut into pieces and enjoy.

Great Value Yellow Cornmeal

Its important to note that Walmarts own brand does not make any gluten-free claims. However, it does not contain any gluten-containing ingredients and is not a may contain. But it has not been tested for gluten, so this may be one to try if your intolerance is mild. It is best to avoid these types of cornmeal if your intolerance is extremely sensitive or you have celiac disease.

If youre on a budget though, this brand is great as its only around $2 a bag!

The ingredients in this particular cornmeal is unlike the others. As this cornmeal has been enriched, there are additional ingredients. But dont worry none of them contain gluten! The ingredients are:

The Pan: Skillet Vs Cake Pan

I think a cast iron skillet is one of the best pieces of equipment you can have in your kitchen. You can use it to make a steak or make a cake.

If you have an 8-inch cast iron skillet, use it! Pop it in the oven before you turn the oven on to preheat. A hot skillet gives gluten-free cornbread a crispy brown exterior. And if youve ever baked gluten-free, you know how challenging it can sometimes be to get a nice brown crumb on baked goods.

When the oven is at temperature and your batter is ready to go, remove the skillet from the oven. Grease it generously. Use either cooking oil or nonstick cooking spray. If you use vegetable oil, swirl it around in the pan to coat the pan evenly.

But what if you dont own a cast iron skillet? Does that mean youre destined to live a life free of gluten-free cornbread? Not at all! An 8-inch round cake pan works just fine. The baked cornbread wont turn out as brown and crunchy thats the only difference.

Is Bobs Red Mill Cornbread Gluten

Bobs Red Mill makes a cornbread mix that has gluten and another option that is gluten-free. Their Stone Ground Cornbread & Muffin Mix contains wheat flour, making it not a good option for a gluten-free diet.

They also carry a Gluten-free Cornbread Mix that has no gluten ingredients and is certified as gluten-free. This company makes their gluten-free products in a desiccated gluten-free facility too.

Homemade cornbread has been a part of my life for as long as I can remember. When I was growing up, Mom made a lot of it and shed always serve it with chili or a big pot of beans. One of her favorite things, and it still is to this day, is to mix soft butter and honey together then slather it over warm cornbread.

How Do You Make Gluten Free Cornbread From Scratch

  • Heat a 10-inch cast iron skillet in the oven for 10 minutes . If making muffins, line muffin tins with paper liners or spray them with cooking spray .
  • In a bowl, whisk together cornmeal, flour, sugar, salt, baking powder and baking soda.
  • Make a well in the center of the dry ingredients and crack in the eggs. Break up the eggs slightly, then pour in the buttermilk. Whisk the eggs and buttermilk, incorporating the dry ingredients.
  • Whisk in the melted butter.
  • Take the hot skillet out of the oven and swirl in a tablespoon of vegetable oil . Add the batter to the hot pan, spreading it in an even layer.
  • Bake the GF cornbread for 15-18 minutes, or until the edges are golden brown and the top is lightly cracked.

Gluten Free Cornbread And Sausage Stuffing

Gluten Free Polenta Cake

  • 2/3 cup of softened unsalted butter
  • 1 cup of sugar
  • ½ tablespoon of baking soda
  • ½ tablespoon of baking powder
  • 1 teaspoon of salt

Directions

  • Preheat the oven to 350°.
  • Polenta Cake: Add the butter and sugar to a standing mixer with the paddle attachment and beat with an electric mixer on medium speed until light and fluffy, about 5 minutes.
  • While the butter and sugar are creaming, mix together the flour, cornmeal, baking soda, baking powder and salt in a large bowl with a wooden spoon and set aside.
  • Add 1 egg at a time to the creamed butter and sugar bowl over low speed until they are combined.
  • Pour in the milk and mix on low speed until combined. Slowly add in the dry ingredients until mixed together.
  • Transfer the batter to a prepared deep 8 pan and bake at 350° for 40 to 45 minutes or until golden brown and a toothpick inserted into the center comes out clean.
  • Remove from the oven and let the cake completely cool on a rack to room temperature.
  • Buttercream: Add the softened butter to a clean stand mixer with the paddle attachment and whip on high speed until it becomes light and fluffy, about 5 to 7 minutes.
  • Add in the powdered sugar and maple syrup and mix until completely combined.
  • Once the cake has cooled add the buttercream to the top and spread around so that the top is covered.
  • Add fresh berries to the top, grab your designated cake tester, and serve this beautiful cake gluten-free friends can enjoy.
