This recipe is inspired by classic boxed funfetti cake, made with gluten-free flour. The crumb is rich and milky with all sorts of authentic vanilla flavor, and loaded with sprinkles of course. For once, I suggest no, insist that you use artificial vanilla in a recipe. It adds to the nostalgia!

What Types Of Sprinkles Should I Use In This Gluten Free Funfetti Cake

While you might think all sprinkles are created equal, I disagree. When making a funfetti cake, it helps to use a specific type of rainbow sprinkles.

The best sprinkles for making a funfetti cake are rainbow jimmies. They are the longer sprinkles, that you used to put on your ice cream.

These sprinkles keep their color, and wont immediately bleed into your batter.

This is important, because it will help your batter say white while you add it to your pans. This will allow the color of the sprinkles to really shine through once the layers are baked.

If you really want to be picky about your sprinkles, I also recommend getting a rainbow sprinkle blend that doesnt have any chocolate/brown sprinkles in it. Funfetti cake layers look so much better without any brown sprinkles!

The type of sprinkle you should NOT use are the tiny, round, rainbow sprinkles. Theyre called nonpareils, and they are the true enemy of funfetti cake layers.

Nonpareils will start to bleed their colors the second theyre stirred into your cake batter, resulting in a creepy, pink/grayish batter.

This can also happen if you let you rainbow jimmies sit in your batter for an extended period of time, and then try to stir it.

The key take aways? Only use rainbow jimmies in this funfetti cake recipe, gently fold them into your batter, and immediately pour into your cake pans.

Gluten Free Funfetti Birthday Cake

My go-to gluten free birthday cake! With a vanilla cake base, lots of sprinkles for a funfetti twist and finished off with a classic dairy free buttercream frosting. The perfect recipe for any celebration!

I simply cannot let my birthday month pass without sharing a gluten free birthday cake! We already have a lot of gluten free cake recipes on the blog, but this is definitely one of my favorites and is perfect for any kind of celebration.

It has a rich buttery vanilla flavor, tons of sprinkles to make it funfetti and finished off with my classic dairy free buttercream frosting.

Plus, its so easy to make, requiring just one bowl and a few simple ingredients you probably already have on hand.

I opted to make this a six inch 3 layer cake, but you can also make a 2 layer 8 inch instead. Either way, it will be enough to feed about 14-18 people, depending on how much everyone wants to eat.

Tips And Tricks For Success

  • The most important tip is to chill your dough. This is non-negotiable. If you skip this step, the funfetti sprinkle cookies will spread and you will be disappointed.
  • Use a silicone baking mat or parchment paper to line the baking pan to prevent funfetti cookies from sticking.
  • Use a small scoop to make sure all of the cookies are the same size. This makes even, round cookies that bake at the same rate.

Adding The Pink Drips:

  • While the cake chills, make the white chocolate ganache drip.
  • Heat the heavy cream in a heat proof bowl in the microwave for 30-45 seconds, until it’s steaming and just beginning to bubble.
  • Gently pour the heavy cream over the white chocolate chips, making sure they are fully covered with cream. Allow mixture to sit for 1 minute.
  • Stir slowly until the cream and white chocolate are combined. Some bits of chocolate may not be fully melted yet. If you notice this in your mixture, heat the mixture again for 15 seconds and stir. Repeat as necessary until all the chocolate bits are fully melted and incorporated.
  • Once the ganache is smooth, mix in the gel food coloring until the ganache is evenly colored. If you plan to use a plastic bottle to add your drips, pour the mixture into a plastic bottle.
  • Let the mixture cool until the desired viscosity is reached and it’s barely warm to the touch.
  • If it seems too thin or thick, you can add a touch more chocolate chips or heavy cream! The type of cream and white chocolate that you use can affect the consistency, so feel free to adjust as needed.
  • Make a test drip with your ganache to see if it’s the right consistency, then adjust as needed .
  • Once it’s the right consistency, add the drips to the chilled cake using a plastic squirt bottle or spoon. After covering the sides of the cake with drips, chill the cake in the freezer for 5 minutes to help the drips set.

    If you want to absolutely nail this gluten free birthday cake recipe then I have a couple of tips or you to get the best results!

    For starters, when baking this gluten free funfetti cake, you’ll need three 20cm/8-inch cake tins. If you don’t have that many then you’ll have to bake the cakes in batches.

    A top tip when adding the sprinkles is to add it right at the very end, before pouring it into the cake tins.

    If you add the sprinkles too soon, their colour will start to leach into the cake batter as you mix it up and you’ll end up with some very interesting colours!

    Once the batter is ready, fold in the sprinkles with a few turns and then pour it straight into the tins. Sorted.

    When baking the cakes, do not be tempted to open the oven door before the timer is up! This will cause them to sink when you eventually get them out – not a good look!

    Almond Vanilla Buttercream Frosting:

  • Beat the unsalted butter on a medium speed for 30 seconds until smooth with a paddle attachment and stand mixer or a hand mixer.
  • Mix in the vanilla extract, almond extract, and salt on a low speed.
  • Slowly add in the powdered sugar and mix on a low speed. Half way through add in the heavy cream to make it easier to mix. I like to place a kitchen towel over my mixer to contain any powdered sugar clouds.
  • Mix on low until the ingredients are fully incorporated and the desired consistency is reached.
  • If the frosting is too thick, add in additional cream . If the frosting is too thin, add in more powdered sugar .
  • Cover the frosting with plastic wrap to prevent crusting and set aside.
  • Can I Make This Gluten

    Yes, you can absolutely make this funfetti cake with regular ingredients. I highly encourage you to use cake flour though as it creates a lighter fluffier crumb. Remember to omit the xanthan gum if using regular flour.

    Not dairy-free? No problem, regular salted butter and milk will do the job just fine. The yummiest results will be with full-fat homogenized milk or buttermilk.

    Theres a lot of debate around this. I believe that the unique funfetti flavors comes from a combination of clear vanilla extract and a dash of almond extract. Its funny that I call for clear vanilla extract. If youre familiar with vanilla, you know that clear vanilla is artificial vanilla. And thats the point. Boxed funfetti cake mix, the type you probably grew up eating, includes artificial vanilla. If thats the flavor you crave, grab a bottle. It makes a difference! Id use clear vanilla extract in my frosting too, for the full effect.

    As for the almond extract, it adds an almost maraschino cherry flavor. The almond extract isnt required. Feel free to skip it if you dont want to buy a bottle.
