Almond Flour Is Not Almond Meal

Almond Flour Pancakes | Gluten-free, Paleo, Grain-free Pancakes

One thing to keep in mind when cooking with almond flour is that its not exactly the same as almond meal. While both are made from almonds, the flour is lighter and fluffier. To make almond flour, the almonds are first blanched and peeled, then ground finely.

On the other hand, almond meal is usually made from raw almonds with the skins left on. Plus, its not ground as finely. The result is a slightly coarser meal, similar to cornmeal, flecked with tiny bits of almond skin.

How To Make Them

To make almond flour pancakes, youll just need one bowl and about 5 minutes of prep time. Start by preheating your skillet on low heat, since the batter will come together so fast.

Stir together all of the ingredients, keeping in mind that the batter wont be quite as runny as traditional pancake batter.

The batter will thicken up as you go, but dont dont be tempted to add extra liquid to the batter. When the batter is too wet, they are difficult to flip. Do be sure to use the back of a spoon or a spatula to gently smooth out the batter when its thick, so that the pancakes will cook evenly.

Its important to keep your pancakes relatively small so that they will cook evenly and are easy to flip in the skillet. I use about 3 to 4 tablespoons of batter per pancake, then I use a spatula to spread out the pancake on the pan so that its about 1/4 to 1/2-inch thick.

The pancakes will be about 4-6 inches in diameter.

Just like traditional pancakes, youll cook these for about 3 to 4 minutes on one side using low heat, until the batter bubbles a bit on top, and then youll flip them over and cook for another 2-3 minutes. You want both sides to be nice and golden!

Keep the cooked ones warm in the oven if you cant serve them right away, then top them with fresh fruit or any of your other favorite pancake toppings.

Extra pancake syrup isnt necessary with these, but you can add it if you want to!

Keto pancakes with almond flour are a great base for a healthy breakfast. If you want to give it an extra flavor, it is best to use low-carb ingredients to keep your food keto-friendly.

These are some of the best:

  • Low Carb Organic Maple Syrup.
  • Unsweetened chocolate chips or dark chocolate chips.
  • Fresh or frozen berries.
  • Low carb unsweetened cranberry syrup or other fruity syrup.

Let me start this post off by saying that Im a serious carb lover. Big carby fluffy pancakes and waffles are my jam. But some days its nice to enjoy a breakfast that is a little lighter in carbs and packed with extra protein and healthy fats.

Almond flour is a great option to use as a healthy low-carb flour in pancakes. Each serving of these almond pancakes is packed with 18 grams of protein and is perfect when you want a protein-packed breakfast option. I also make a variation of these pancakes with matcha in them that are delicious!

Using almond flour for grain free pancakes makes them higher in protein and lower in carbs than wheat flour pancakes. These naturally gluten pancakes yield tasty, fluffy pancakes, similar to flourless banana oat pancakes, which the whole family devours with zero complaints!

Although there are many versions of pancake recipes using almond flour, I sincerely believe this recipe makes the best tasting that replicates the taste of traditional homestyle pancakes.

Adding almond butter adds extra fat to coat the almond flour and downplay its grainy texture. Almond butter, or peanut butter, also adds moisture, a creamy taste, and increases the amount of protein.

Although the mashed banana can be replaced or omitted for a low carb keto version, I love the flavor and moisture it also adds. During recipe testing, our family preferred almond flour banana pancakes for the best, traditional taste.

How To Serve Low Carb Waffles

Keto waffles are the perfect weekend low carb breakfast idea. But they are also great for a little morning or afternoon snack. You can serve them the traditional way with a little butter and low-carb maple syrup just like almond flour pancakes.

I also like to serve them with fresh berries and a little whipped cream on top. This is one of my favorite after work snacks. They are a real treat topped with fruit and whipped cream.

Since they are stored in the refrigerator, I just pop one in the microwave or toaster to heat it up. I find the toaster oven makes them crisper than the microwave.

A large batch of these almond waffles can be made ahead to freezer for later. All youd have to do is reheat them in the microwave or toaster oven straight from the freezer.

If you use an electric griddle, set it to 350 degrees F. If you a burner, set it to medium-high.To test that your griddle or pan is at the right temperature, spoon about a tablespoon of batter onto the griddle. Cook the pancake for about a minute and then flip. If itâs too pale, increase the heat. If itâs too dark, decrease the heat. And if it looks perfect, the pan is ready.

  • Almond meal differs a bit from one batch to the other, so you may have to adjust the amount of liquid you use to get the batter thickness you want.
  • For puffier pancakes, use sparkling water.
  • Add blueberries or other fruit such as peaches, pineapple, or even dark chocolate chips to add flavor to your pancakes.
  • Pancakes made with almond meal won’t “bubble” on top the same way regular pancakes do when they’re ready to flip. So you’ll have to check the underside to see when they are brown. Then it’s time to flip them.
  • Use a nonstick pan with a little coconut oil or cooking spray to make sure that your pancakes don’t stick to the pan.

Can You Make These Ahead Of Time

Yes, you can make these almond flour pancakes beforehand. Just place the cooled pancakes on a baking sheet in the freezer for 30 minutes to freeze. Then layer them in a freezer ziplock bag with parchment paper between each one. They will last for about 3 months in the freezer. You can thaw them overnight or just microwave them frozen for about a minute when youre ready to serve.

How To Make These Extra Fluffy

For extra light and fluffy almond flour pancakes separate the egg whites from the yolks before adding them to the batter. Beat the egg whites separately until stiff.

Blend together the remaining ingredients, including the yolks. Once the mixture is well blended, gently fold the beaten whites into the pancake batter.

It only takes seven simple ingredients to put these pancakes together, and chances are that you already have them. Let’s take a look:

  • Almond Flour: Finely ground almond flour made from blanched almonds is mostly my first choice. If using Almond meal, I make sure to use finely ground flour. If your almond meal is coarse, you can give it a quick grind in your blender to make it fine.
  • Eggs: Two large eggs bind the batter and make these pancakes fluffy. For best results, use room temperature eggs. Egg substitute is mentioned below.
  • Milk: I use 2% milk as that’s what I have on hand. You can also use almond milk, which keeps these pancakes low-carb.
  • Baking Powder: An essential ingredient that helps these pancakes rise.
  • Maple Syrup: Adds a touch of sweetness. Skip it if making a low-carb version or substitute with a sugar-free syrup.
  • Olive oil: Adding just a little bit of oil makes the batter easy to work with and helps the pancakes set well.
  • Salt: A pinch of salt balances the sweet from the maple syrup. But it is optional, so suit your personal preference. Please note: skip it altogether if skipping the maple syrup.

Egg Substitute: To replace 1 large egg, mix 1 tablespoon of flaxmeal with 3 tablespoons of water. Let the mixture sit till it thickens and becomes gelatinous. Alternatively, use ¼ cup of unsweetened applesauce.

Tips For The Best Almond Flour Pancakes

Now that you know how to make almond flour pancakes keto, use these tips for success.

  • Use the right almond flour.Wholesome Yum brand has the finest consistency, so your almond pancakes will have the best texture.
  • Check the batter consistency. It should be like a typical pancake batter . If its too thick, add more milk as needed.
  • Dont use too much oil when frying. If you want an evenly browned surface as shown in my pictures, its best to oil the pan, then wipe with a paper towel, so only a thin layer remains.
  • Cover when cooking the first side. This is different from white flour pancake recipes. To make the almond flour pancakes easier to flip, cover with a lid after adding the batter to the pan, then flip and cook uncovered on the other side.

What Brand Of Almond Flour Is Best For These Paleo Pancakes With Almond Flour

I have been testing this recipe for over 3 months now and have tried this with three different almond flour, two of which are popular brands that are available throughout the US.

On my first try, I grounded my own almond flour made from blanched almonds using my Vitamix blender using the method I outlined in my How To Make Almond Flour post. The recipe below worked perfectly and delivered perfect almond flour pancakes.

On my second testing, I used Trader Joes packaged almond meal and it was very similar to the first version except that the color was darker as the almond meal is made from almonds with the skin on. On my third testing, I used Bob Red Mills superfine almond flour . The batter made with superfine almond flour was thicker compared to the other two versions. Therefore, I had to add in 2 to 3 more tablespoons of almond milk to the batter to make it a little runnier.

With that being said, if you decide not to add in more liquid you would still have great pancakes, but your batter would be thicker delivering thicker pancakes.

How To Freeze Pancakes

If you want to make these low carb almond flour pancakes ahead of time and serve them at a later date, you can place the pancakes on a baking sheet so they arent touching and place in the freezer for 30 minutes , then place them in freezer safe containers and freeze for up to 3 months. Once ready to reheat, simply add pancakes to a plate and microwave for 30-60 seconds or until warm.

Variations For This Healthy Pancake Recipe

The Best Almond Flour Pancakes | Fluffy Gluten Free Pancakes

No Seeds? No Problem: Simply omit the seeds in this recipe, or finely chop walnuts or pecans for a nutty twist.

Healthy Pancake Topping Suggestions:

  • Use a homemade fruit syrup or homemade chia seed jam as an option.
  • Fresh berries, sliced peaches, or chopped pears, depending on what fruit is seasonally available!
  • Homemade whipped cream, using pastured or grass-fed heavy whipping cream. I leave my whipped cream unsweetened , or lightly sweeten it with monk fruit sweetener.

Tips For Making These Keto Waffles Perfectly

  • Make sure to use almond flour, not almond meal. Using almond meal will result in waffles that are denser and not fluffy. The bag should say almond flour on it and be very light in colour and have a fine texture.
  • If you like a sweeter waffle, feel free to add 1-2 tablespoons of sugar to the waffle batter.
  • If you like a savoury waffle, omit the vanilla extract from the recipe.
  • Be patient when cooking. Its best to cook almond flour on medium-low heat to prevent it from burning. This usually means you may need to cook the waffles slightly longer on each side than traditional waffles.
  • Almond flour naturally has a grainer texture than wheat flour. This is just the texture of almond flour and cannot be completely avoided. The grainy texture is delicious! Just remember to expect this type of texture when you make this recipe.

How To Make Almond Flour Pancakes From Scratch

If you like making pancakes, youre in luck! Making these gluten-free pancakes is just like making ordinary pancakes. All you have to do is mix, cook, flip and enjoy!

Mix Batter: In a large mixing bowl, whisk together the eggs, almond milk, coconut oil and vanilla extract. Add the almond flour, gluten-free flour, baking powder and salt.

Heat Skillet or Griddle: Place a large skillet over medium heat, add a little oil and allow the skillet to heat up. You can also heat an electric or stovetop griddle.

Make Pancakes: Ladle the batter onto your skillet or griddle. Let the pancakes cook for two or three minutes before flipping. Youll know theyre ready to flip when little bubbles form on the surface of the pancakes. Cook for another 2 minutes and transfer to a plate.

Enjoy! Serve your pancakes warm with your favorite toppings.

  • Berries Everything tastes better with fresh berries! Well, almost everything. But definitely pancakes!
  • Yogurt You can add a dollop of yogurt on top similar to the way you might use whipped cream.
  • Honey or Syrup Drizzle them over the pancakes, or add them to a small bowl to dip each forkful of pancakes before you take a bite.
  • Butter or Nut Butter You can add a pat of butter and let it melt on top, or add a swath of your favorite nut butter. I especially like almond butter or hazelnut butter.

Recipe For Gluten Free Waffles

1. Place all the ingredients except the butter and almond flour into a blender or large jar to use with a hand mixer. Blend to combine.

2. Then, add almond flour and blend until smooth. The result should be a thick batter. Add more flour if necessary.

3. Pre-heat your waffle maker, and grease it with butter. Fill the waffle machine with third of your waffle batter , repeat it two more times, or until you run out.

4. You can keep your waffles warm by covering them until you make the rest. Serve immediately with your favorite toppings.

Vegan Almond Flour Banana Pancakes [Gluten

Almond Flour: When combined with the proper amount of eggs and liquid, almond flour or makes for incredibly lovely pancakes, muffins, cookies, brownies, and more! It yields a light and fluffy texture that closely mimics regular flour.

Almond flour is a good source of fiber, and contains healthy fats and some protein. It is naturally sweet, which makes it a great ingredient for those who have a sweet tooth but dont want to use a lot of added sweetener.

Tapioca Flour : A starchy ingredient, tapioca flour helps bind recipes together, generate some fluff and further aids in making a recipe seem like its made with regular all-purpose flour. While the tapioca flour in this recipe isnt mandatory, I certainly recommend it, as it results in the best, fluffiest pancakes!

You can replace tapioca flour with arrowroot flour in a 1:1 replacement in most cases .

Eggs: Eggs help fluff up the pancakes to blissful texture and allows them to stay nicely held together. If you cant do eggs, try my Paleo Vegan Pancakes, which use flax eggs. They require some patience, but they are your best bet for making grain-free and egg-free pancakes.

Unsweetened Almond Milk: In order to combine everything together, we need some liquid. I use unsweetened almond milk for a dairy-free version but you can use whole milk if you do dairy. I also love using canned full-fat coconut milk because it makes the pancakes taste so incredibly rich and luscious.
