Vegan No-Bake Chocolate Chip Cookie Bars (Gluten Free)

Melt 1/2 cup of butter in the microwave then let it cool slightly, before adding the egg and 3/4 cup white sugar.

Whisk together well.

Then add 1 cup of gluten free flour, ½ tsp baking powder, ½ tsp baking soda, ½ tsp salt and cup brown sugar:

Sprinkle approximately 1 Tbsp of chocolate chips onto the top before baking for 30 35 minutes :

  • Add softened butter and brown sugar to a bowl and mix it until fully combined. I just used a spoon for this recipe, you can use a mixer if you want too.
  • Add the egg and vanilla. This will loosen up the mixture so now you can really beat it well. Beat until it’s light and fluffy, about 2 minutes by hand.
  • Add the Bob’s Red Mill almond flour and other dry ingredients and stir to combine.
  • Add the chocolate chips and combine.
  • Add the cookie bars to a pan and spread them out. I like to line the pan with parchment so that I can pull them out after baking to cut them up pretty.
  • Bake, cool, cut, serve, DEVOUR!
  • See! They aren’t fussy, they are no harder than making traditional chocolate chip cookie bars and they turn out just as well.

To reheat, let them thaw out in the refrigerator the night before and then pop them in the microwave for about 30 seconds to 1 minute.

    Sugar-Free Sweetener – I like to use a blend of xylitol, erythritol, and stevia in my recipes. By using a combination of sugar alcohols and stevia you can use half the amount required of regular sugar.

    Vanilla – Mexican vanilla extract is an affordable choice to other pure vanilla extracts.

    I use my food processor to make these cookie bars. I simply add all the ingredients except the chocolate chips and process them until a ball of dough forms. At first, the mixture will look dry and crumbly. But after a minute or two, it comes together into a nice dough. Then I mix in the chocolate chips and press into a rectangle on a baking tray. Bake, cut, enjoy!

    How To Store & Freeze

    • Store leftover cookie bars in an airtight container at room temperature for up to 4-6 days. You can store them in the fridge for 7-10 days.
    • To freeze the bars, you can freeze the block of baked bars, uncut, by tightly wrapping the block in plastic wrap, then foil, and storing in an airtight freezer bag or container. If your bars are already cut, you can tightly wrap them the same way and freeze them in a bag or container for up to 6-8 months.
    • The bars only need to be slightly thawed before you can cut them from frozen. Otherwise, you can thaw them in the fridge overnight before bringing them to room temperature or warming them in the oven at 300°F or microwave to serve.

    Press the dough into the prepared pan in an even layer. Top the dough with the extra chocolate that you set aside. Bake at 350 for 20-22 minutes. They will seem under baked in the center, but will finishing baking as the sit in the hot pan. Remove the cookie bars from the oven and allow to cool in the pan for 10-15 minutes.

    Lift the cookie bars out of the pan using the parchment overhang. Slice into 8 bars, or 16 squares. Sprinkle with flaky salt and enjoy.

    Mechanically sorted oats have undergone sorting by a machine to separate oats by length, density, and color from wheat, barley, and rye grain. This method of sorting oats from gluten isnt foolproof. A very well-known product using mechanically sorted oats is Cheerios.

    Purity Protocol Oats Growers are required to have a three-year gluten-free crop rotation, and annual field inspections to ensure their fields are free of gluten grains. After extensive testing, those oats are certified gluten-free.

    How To Make Thinner Gf Cookie Bars

    If you’d prefer to make bars that aren’t quite as thick, and maybe even cut them into sticks, you can bake the same cookie dough in a jelly roll pan. A quarter sheet pan is a rimmed baking sheet that measures 9-inches x 13-inches x 1-inch.

    A jelly roll pan is slightly larger, measuring 10-inches x 15-inches x 1-inch. Those extra few square inches make a big difference in providing the cookie dough with enough space to bake without overflowing the pan.

    Since the batter will be better exposed to the heat of the oven in a jelly roll pan, you’ll need less baking time. Instead of 40 minutes at 325°F, thinner bars will bake in about 30 minutes. Similar to cheesecake, the bars are done when they no longer jiggle much in the center.

    There are two whole eggs in this recipe and one egg yolk. The two whole eggs may be able to be replaced with one chia egg each . Without the eggs, you’ll miss out on the crinkly brownie-style top, though.

    The egg yolk, which helps to add richness and tenderness to the bars, is a bit harder to replace. You can try another tablespoon of unsalted butter or even a tablespoon of extra virgin olive oil. Feel free to experiment!

    How To Make Your Own Oat Flour

    While I dont mind using gluten-free flours like almond, cassava, or coconut flour, or a gluten-free flour blend on occasion, sometimes all you need is a little oat flour to get the job done.

    Oat flour is also much less expensive than gluten-free flour blends which are often made up of several different kinds of flours and stabilizers to replace the gluten.

    As long as you have gluten-free oats in your pantry, you can make a large batch of oat flour yourself, for pennies on the dollar, with a high-powered blender or food processor.

    To make oat flour, just add a few cups of gluten-free oats to your food processor or blender. Pulse or blend until the oats completely break down and become the consistency of traditional flour. This process only takes a minute or so in my high-poweredVitamix and a few minutes in myfood processor.

    As mentioned above, be sure to use a 1:1 gluten-free all-purpose flour to make these gluten-free.

    Its also important to follow the steps in the recipe to get the correct swirl in your cookie bars, they will be baked for about 5 minutes, then you will remove them and swirl before adding them back to the oven to complete cooking.

    Remember these should fully cool as well before cutting, they will continue to set up and harden during the cooling time. This works the best on a wire rack.

    How To Make Triple Chocolate Cookie Bars

    Step One: First add the melted butter, brown sugar, egg, egg yolk, molasses, and vanilla extract to a mixing bowl. Stir until well combined.

    Step Two: Next add in the dry ingredients and stir until everything is well combined and you have a thick batter.

    Step Three: Once the batter is well mixed, fold in the chocolate chips and the chopped chocolate bar until the chocolate is well combined in the batter.

    Step Four: Transfer the batter to an 8×8 baking pan that has been lined with parchment paper. Bake the cookie bars for 25-30 minutes at 350 degrees or until a toothpick inserted in the center comes out clean.

    Step Five: Once the cookie bars are finished baking, let them come to a complete cool in the pan. It will be tempting to cut into them as soon as they come out of the oven or transfer them to another place, but do not do it!

    Letting them come to a complete cool ensures that they do not fall apart when slicing them. Once the bars are completely cooled, slice them into either nine or sixteen pieces and enjoy!
