No. I often joke that were accidently vegan because we have the milk and egg allergies, but yet we still do meat. With my growing family, and especially boys, they still love meat. So, I find that my baking is vegan, but that our dinners still often have chicken, fish, pork and beef. Only one of my recipes included below are a vegan recipe, so youll see plenty of ways to still incorporate meat into your diet, while avoiding these allergens. Gluten Free Dairy Free Frittata

We have 12 backyard chickens and I love to find meals that I can use the eggs the girls are working hard to lay. We have grown to love frittatas! Which is just a fancy name for an Italian dish made with eggs and veggies.

None of our frittatas are created with the same ingredients. It usually depends on what meat and veggies I have in the house.

Frittatas are very simple to make! They work best for us in our cast iron skillet.

  • Cook your meat of choice. I usually do a pound of breakfast sausage and chopped up bacon. If you are left with a lot of grease from your meat, you are going to want to drain some of that. A little is fine and gives your veggies great flavor.
  • Add in your veggies and some olive oil. I use whatever I have on hand. A couple bags of frozen veggies, leftover corn from last night, mushrooms. You get the picture. You know what your family likes! I love it when it has some great colors.
  • Crack your eggs into a glass pyrex dish and add about a half cup of dairy free milk. We always have almond milk on hand. Whisk that all together then add about 1cup of dairy free cheese.
  • Pour your egg/milk/cheese mixture over your meat and veggies. Use a spatula to spread it out evenly. Top with a little dairy free cheese and bake your frittata in the oven until your eggs look puffy and cooked. Ours takes about 25 minutes at 350 degrees.

Why Follow A Dairy

Well, let me explain.

You see, we all have consumed grains, dairy, legumes, and meat in our lifetime, yes? Yes! I eat them all. Gluten-free grains of course.

But heres the thing. As I sit here typing up this post, I can tell my brain and body need a little calming down. Its been on the crazy cycle for oh weeks now! YIKES! Yes, stress can really take a toll on ones health and deplete you of important key MINERALS.

You know what else it can do? It can cause that oxidative stress to rise and if we are under chronic stress , the physical and mental kind, then our immune system is going to have a hard time responding. It will try to react and recover but doesnt have the necessary nutrients in order to do so. Hey, its pretty tired of trying to fight, ya know? Hence the continuous inflammation of the body and brain. Sad, but true.

On the other hand, a little stress and a little inflammation can be good for the body. If you are healthy, managing stress, and moving the body daily, then your body will easily recover from that acute stress and build it up stronger.

Unfortunately, for many of us, we get stuck in the chronic stress cycle. Am I right? Raising hand! Which is why I thought it was about time we make another anti-inflammatory meal plan. What To Look For When Buying Salmon

The other important part of this salmon and asparagus recipe is the quality of the salmon! Theres a wide variety of salmon quality at the store . Heres what to look for when shopping for this sheet pan meal:

  • Fresh salmon is best. You can find decent frozen salmon. But for the very best salmon, buy it fresh from your local seafood counter.
  • Buy wild caught salmon. Fish that is wild caught in your country is usually a sustainable choice. There are also quality options in well-regulated farms see Seafood Watch Consumer Guide.
  • Coho is a good choice. We tend to like Coho salmon for its mild flavor: its a good middle of the road option in terms of price. Of course, King salmon is incredible but more of a splurge. Atlantic salmon is typically farmed salmon, so its a less desirable choice.

Do You Use Crazy Ingredients

I live in a small town in Idaho, so I dont have access to an Aldi, Trader Joes or Whole Foods. Most of the ingredients I get are from Walmart. And, a few I have to get from my local Natural Grocer. I try to not do crazy, specialty ingredients and instead stick to simple ingredients because those are easier to find and are usually less expensive. Every once in awhile, you will have to get some dairy-free sour cream or dairy-free cream cheese . But, againif I can find them in IdahoI hope you wont have a problem either. I also try to ALWAYS link to any different type ingredients in the recipe cards to Amazon, in case youd rather shop online, or even to see what they look like to help you spot them at the grocery store.

Gluten Free General Tsos Chicken On Rice

What about those nights when you really crave fast food or carry out? I get it! One of my favorite finds at Aldi is a gluten free dairy free General Tsos Chicken meal.

Obviously, its not enough for that little bag of chicken to feed our family, so we doctor it up a little bit. We like to get a couple bags of frozen broccoli and some red onion and add that to our chicken. It helps the meal go farther and it tastes more like take out to me! We serve it over a bed of rice.

I will say, this sauce is delicious but it does have a kick to it, so if you have someone in your family who doesnt like spicy things, you can hold back a little chicken and broccoli before adding the sauce packets.
