Even though I have zero desire to eat canned condensed soup of any kind ever again, I admit that around Thanksgiving it can be hard to miss out on all the holiday food because I just want to feel included, but mostly its due to the nostalgia factor rather than any real need to eat a green bean casserole made from canned and processed ingredients!
Anyway, my favorite part of the aforementioned green bean casserole was always the French fried onions that graced the top of it.
But, they are fried in wheat flour so thats big no-no for me now so my only option is to make my own gluten free French Fried Onions!

How To Make Gluten Free French Onions
- Slice the shallots thinly, and make sure to shingle each piece so that pieces seperate well.
- Next, add the sliced shallots to a bowl and mix in the starch and white rice flour. Toss well to coat the shallots in the dry ingredients.
- Heat ½-inch oil in a pan and test 1 shallot by dropping it in. If it sizzles, it’s time to fry!
- Fry the shallots in 3-4 batches, making sure now to overcrowd the pan.
- Drain shallots onto a paper-towel lined plate or pan.
- Season with a sprinkle of salt! Enjoy!

This recipe is related to a recipe for Onion Rings in my recently released cookbook, Gluten-Free Party Food. It is an onion ring recipe I love to use when Im feeling snacky.
To make them casserole ready though you want to slice the onions extremely thin, dunk and coat them in cornmeal, then bake until they are super dried out.
I initially used the mandoline to slice the onions really thin, but then lost patience and continued slicing them by hand. If you want them super duper dehydrated like the original Frenchs Onion rings, than use the mandoline.
If you want them to be delicious and dont care if they arent the spitting image of the dehydrated ones, then just cut them thin by hand.
I personally hate using the mandoline. Ive come close to chopping off my fingers so many times, and it wastes some of what youre chopping. Just my personal experience.
These Gluten-Free French Fried Onion Toppings are not the spitting image of the traditional French Fried onion rings, but they taste pretty much the same and at the same time are gluten-free. My onion loving soul calls that a win.
In hindsight, I wish I had sliced the onion in strings instead of keeping them round. Just a hindsight moment, but doesnt change the delicious taste. Just have to break them up by hand. Minor inconvenience.
Major plus: No frying required for these crunchy bad boys. It is all done in the ovenminus the grease, but full of the crunchy onion flavor. #winwin
