Gluten Free All Purpose Flour Blend

Quick Keto Coconut Flour Hawaiian Dinner Rolls (Gluten and Yeast Free)

The other gf Hawaiian rolls recipe variation relies on the addition of tapioca starch/flour, which helps add structure and chew to the rolls in a way that is usually unavailable without the use of gluten free bread flour. The best all purpose gluten free flour blend to use is Better Batters classic blend, which already contains tapioca starch, but you must add the additional tapioca starch for the recipe to work properly.

Rolling The Dough Into Balls

I learned how to roll dough into smooth, tight balls for individual rolls from a class I took on Craftsy by the master of bread baking, Peter Reinhart. It works very similarly with this gluten free dough as it does with wheat dough.

Cup your hand into a C shape around the dough with the outside of your hand always in contact with the counter. Only using a tiny sprinkling of flour so the roll doesnt completely stick to the counter , roll into balls in a counterclockwise motion. If youre left-handed it would be clockwise. Once its in a smooth ball, place it in a baking pan. If its slightly stuck to the surface, use your bench scraper to release it.

Once youve formed all of your rolls, let them rise in a warm, draft-free area, until doubled in size, about an hour or two, depending on the temperature of your proofing area.

Does Mcdonalds Do Gluten

The simple answer is no McDonalds in the UK does not offer a gluten free burger bun. To offer gluten-free buns, we would need separate storage and toasting equipment in place to prevent cross-contamination, which many of our U.K. restaurants kitchens do not currently have the capacity to provide.

Making The Rolls Ahead Of Time

You can make this sweet dough ahead and keep it in the fridge for 3 days. OR you can shape and freeze the rolls prior to baking. Shape the dough into rolls and place them in the baking pan. Cover with two layers of plastic wrap, followed by a layer of heavy-duty foil. Freeze for up to one month.

The day before baking, take them out of the freezer and put them in the refrigerator to thaw overnight. Remove from the fridge and allow time for their final rise in a warm, draft-free area until doubled in volume. Bake as instructed. These are great for make-ahead Thanksgiving rolls!!

You can also freeze already baked rolls. Bake them as instructed, allow to cool completely, and wrap as above. To thaw, leave them sit on counter, still wrapped. When ready to serve, cover with foil and place in a 350 degree oven for about 15 minutes. Or to reheat individually, wrap in slightly damp paper towel and place in the microwave for about 20 seconds.

Bake up a batch of these gluten free Hawaiian rolls for YOUR Thanksgiving bread basket. You wont miss the store bought ones and no one will ever know theyre gluten free!

How To Make Dairy

Gluten Free Hawaiian Rolls Recipe

Combine the coconut milk, pineapple juice and honey in a microwave-safe bowl or measuring cup and heat for 30-second increments, stirring well in between, until the mixture reaches 110 degrees Fahrenheit.

Stir the yeast into this wet mixture and allow it to sit for 10 minutes to bloom.

Transfer the wet mixture to a stand mixer and beat in the eggs using the paddle attachment.

Add the flour and salt and mix on medium speed for 2 to 3 minutes, or until a thick dough forms. The dough will be somewhat sticky but if it is overly sticky, add more flour.

Cover the dough with plastic or a kitchen towel and allow the dough to rest in a warm place for 1 hour, or until the dough doubles in size.

Divide the dough into 15 sections and form balls out of the dough. Transfer the balls of dough to a greased casserole dish .

Allow the dough to rest another 30 minutes, or until the balls have doubled in size.

Preheat the oven to 375 degrees F.

In a bowl, whisk together 1 egg white with 1 teaspoon of water. Use a silicone brush to lightly coat the dough balls with egg wash.

Bake on the center rack of the preheated oven for 23 to 30 minutes, or until the rolls are golden-brown.

Remove rolls from the oven and serve warm with butter and honey.

Theres something about baking with yeast that is such a game changer! While yeast recipes do take longer because the dough needs to rise, the process of making the dough is fun, therapeutic, and do I daresay romantic!

Why Did My Hawaiian Gluten Free Bread Come Out So Dense

If your rolls came out dense, there are a few possible reasons. As yourself:

  • Did you make any ingredient substitutions, particularly the gf flour blend and did you measure your ingredients by weight?
  • Was your instant yeast active? Were your ingredients at the temperature specified in the ingredients list?
  • Did you allow your rolls enough time time rise, and then bake them in a hot oven, as directed?
  • Did you add more gf flour for shaping than is truly necessary? Incorporating too much flour during shaping is a very common mistake, and it lowers the hydration ratio which inhibits yeast production.

Why Does Hawaiian Bread Taste Sweet

Gluten Free Hawaiian Rolls Recipe from Bakes Bread

Some types of Hawaiian bread taste slightly sweetbecause pineapple juice has been added. Hawaiian cooking is strongly influenced by the Portuguese way of cooking. They also tend to put a lot of sugar into the loaves they bake.

The sweet type is great for making savoury sandwiches. Cheese with chutney or sliced apples is a great sandwich for this type of bread.

It makes nice French toast too, and a bread pudding made with the sweeter version is wonderful too.

The Low Carb Hawaiian Rolls Ingredients:

  • 1 cup almond flour
  • 3 tablespoon coconut flour

You can substitute ¾ cup of almond flour if you don’t want to use coconut flour. But the mixture of the flours gives this bread it’s nice texture.

  • cup Golden Erythritol.

The “golden” Lankanto Sweetener deepens the flavor of these Low Carb Hawaiian rolls but it isn’t a deal breaker.

I used just plain erythritol in the second batch that I made and they were great…the family couldn’t tell the difference.

  • 4 tablespoon baking powder

I know this seems like a lot of baking powder. But you want to get as much lift as possible.

Since you are using so much baking powder make sure to use a good Clabber Girl.

  • 1 teaspoon Xanthan Gum

You can use flax powder if you don’t have xanthan gum.

  • 2 cups Mozzarella shredded
  • 3 large eggs
  • ½ teaspoon Pineapple Flavoring . This is the secret to the “Hawaiian Flavor”.

You don’t have to use the flavoring. But you won’t get the Hawaiian taste I assume you are looking for by reading this recipe.

The rolls will still be sweet, but they won’t have that something special that the flavoring gives it.

I found that ½ teaspoon was perfect in recreating the flavor of the Kings rolls that I was looking for.

If you worry about how extracts are made you can learn how to make your own here…

I used to make mint extract because it grows like a weed in my garden but I never can find the time anymore. It’s a fun and easy way to save money if you are into DIY.

Can You Freeze Gluten

You can freeze gluten-free Hawaiian rolls or bread. It keeps well in the freezer. Provided it is properly wrapped, up to 3 months. It is best to defrost them at room temperature rather than heat them up.

In fact, freezing is one of the best ways to prolong the life of any gluten-free bread. You can read more about why that is and how to store gluten-free bread so that it does not dry out too fast. by clicking the link.

The fact that any kind of gluten-free bread is expensive means that you will not want to waste any of it.

Buying frozen gluten-free bread is normally cheaper. It also stays fresher for longer and there is less chance of any wastage.

Overcome Food Intolerances

The texture is also better than the bread you freeze at home. Manufacturers have access to fast-freezing equipment, which means the bread is frozen far quicker than you can do at home.

The ice crystals are therefore far smaller, which means the bread does not get broken down at all. So once defrosted the texture is almost the same as that of fresh bread.

That is one of the reason´s the main manufacturer of gluten-free Hawaiian breads and rolls sell their products frozen as well as fresh.

The Scoop On These Rolls:

Full disclosure, these do not have the same exact consistency as store-bought Hawaiian rolls, which basically have the lightest, most airy texture.

This gluten-free version is more dense and closer to the consistency of a biscuit its nearly impossible to get that light of a texture without gluten. That being said, the taste is there!

Before we go further, I have included instructions for using dairy if you arent dairy-free, as the classic roll includes both buttermilk and butter.

But for those of us who are dairy-free, this is an incredible replacement and youd never guess the difference.

The ingredients for these dairy-free gluten-free Hawaiian rolls are remarkably simple! Lets chat.

General Gf Bread Flour Bread Shaping Tips

The Most Amazing Gluten Free Hawaiian Rolls!!

Always begin on a well-floured surface with floured hands. With the help of an oiled bench scraper, keep moving the dough as you shape it, particularly if it begins to stick to the surface or your hands.

The process of kneading the dough in this book will be done using the scrape-and-fold method. Scrape the dough off the floured surface with the bench scraper, then fold the dough over itself. Sprinkle the dough lightly with flour, scrape the dough up again, and fold it over itself again.

Repeat scraping and folding in this manner until the dough has become smoother. Keep the outside of the dough and the surface covered in a light coating of flour as you shape the dough. Handle the dough with a light touch to avoid kneading the flour into the dough, which might dry it out and result in a tight, unpleasant crumb.

A light touch is the key. Repeat that to yourself as a mantra as you first learn to shape this bread dough. Its the most important rule in shaping. More technique, less muscle.

Youll notice that the recipes do not include instructions to allow dough that has been rising in the refrigerator to come to room temperature before shaping. Always begin with cold dough when shaping the dough in this book. It is much easier to shape.
