How Do You Cook Gluten Free Waffles

I use a Belgian waffle iron that Ive had for years.

It gets the job done, but Ive been eyeing a bigger square waffle iron so I can better keep up with my hungry kiddos.

I also want a waffle iron that will beep when the waffle is done. My kids will call me over to the kitchen table and Ill get distracted and forget to go back!

Make Sure The Ingredients Are Warm Not Too Hot Or Cold

If you’re microwaving the butter and milk, it should be warm to the touch, not too hot to touch. Be sure not to get it too hot otherwise you risk killing the yeast. And the other ingredients – maple syrup and the egg should be warm also.

Tip on heating the butter and milk: chunking the butter into pieces helps it melt quicker.

How To Make Gluten Free Waffle Batter

Waffles (gluten free, dairy free)
  • Dont skip the sugar. My mom always skipped it when we were kids. She thought, we are pouring sugar all over our waffles, they dont need it inside too. As much as I love her, my mom was wrong. The sugar plays an important part in helping the waffles the brown as they cook. Without the sugar, youll have super pale waffles.
  • Measure your flour by scooping it into a measuring cup with a spoon, then swiping off the excess. Dont scoop the flour directly with the measuring cup, youll end up with too much flour.
  • Make sure your baking powder is fresh. Old baking powder wont raise your batter as much and you will have dense waffles.
  • Waffle batter thickens as it sits, so you may need to add more milk. I already give a range because depending on the humidity or where you live, some days you need more milk or less. I always end up using at least 2 cups because I live in the ultra-dry state of New Mexico. You should have a pourable batter that isnt thin or watery.
  • I like to use a spring-loaded ice cream scoop to measure my waffle batter. It is less messy than using a ladle or measuring cup. I will sometimes mix everything in a large measuring cup with a spout so that I can pour the batter directly onto the iron.
  • One of my very favorite Sunday brunch waffle and pancakes is this pancake bottle. You can mix up the batter in the bottle usking a blender ball, just give it a good shake and then squirt out your batter. It works great for waffles too!

Recipe Tips And Faq’s

Can I add protein powder? Yes, I sometimes do to give the waffles a protein boost. I add ¼ cup to the dry ingredients. I usually have to add an additional ½ cup milk to get the batter to the right consistency.

What consistency should the batter be? The batter will be pourable but pretty thick. If you use a thinner milk substitute like rice milk, start with about 1 ½ cups, mix, and then add the remaining amount depending on the consistency. It should be the consistency of a thick milkshake.

Topping ideas – If you just want to have a waffle the traditional way, you can’t beat pure maple syrup! My grandpas both made their own each year so I wouldn’t dream of using any cheap imitation.

I like to top my waffles with berries, too. I always have frozen berries on hand but will sometimes use fresh ones if they’re available. If we really want to get fancy, we might top it with a little dairy free whipped topping.

Can I Make These Waffles Ahead Of Time

Waffles can be made ahead of time if you like to batch cook or just to have something on hand for busy mornings.

After your waffles have cooked and cooled, wrap each waffle in a paper towel and place the whole stack inside a ziploc bag or container. You can refrigerate them if you plan to eat them soon or freeze them for longer storage.

To serve, reheat in an oven set to 350 degrees for about 10 minutes to crisp the outside. I haven’t tested reheating in a regular slot toaster, but I suspect it would work as well.

Can I Use A Cast Iron Waffle Maker

We havent tried this recipe in a cast iron waffle maker yet. It should work fine in a cast iron waffle maker thats well oiled, but we stuck with our non-stick waffle maker for these since I wasnt sure if the batter would stick or not.

If you want to try this with a more natural pan without non-stick coatings, just make sure that your cast iron waffle maker is well oiled since Im not sure if this batter will stick to cast iron yet. If we test this recipe with our cast iron waffle pan, Ill add an update to this!

How To Make The Homemade Strawberry Sauce

Our homemade strawberry sauce is easy to make and is made with strawberries and natural sweeteners. Its paleo and can be made without added sugars as well!

Heres how to make the strawberry sauce :

  • Measure your 4 cups of strawberries after you have hulled and quartered them.
  • Place the quartered strawberries and the maple syrup into a medium sized heavy bottom sauce pan and cook over medium heat.
  • Once the strawberries and syrup start to boil, reduce the heat to medium/low heat and simmer until the strawberries begin to soften and break down . Stir occasionally.
  • Stir in the lemon zest and lemon juice if using.
  • If you want a chunky sauce, mash the strawberries with a potato masher until it reaches the texture youd like.
  • If you want a smoother sauce, use an immersion blender to puree the sauce. Place your immersion blender directly into the sauce and blend it all until it is smooth. Be careful of splashes from hot strawberries!
  • Serve over the chocolate waffles, ice cream, or whatever you like.
  • Store in an airtight container in the fridge for up to 3-4 days.

If you dont have good strawberries to make strawberry sauce for these waffles, you can skip it and just use dairy free butter and pure maple syrup. That tastes amazing too!

The lemon zest in this strawberry sauce is purely optional, but I love the flavor dimension it adds to the sauce.

Notes For Making Gluten Free Waffles

Measuring Flour – When working with gluten free flours, you want to spoon the flour into the measuring cup, then level it. Don’t scoop your measuring cup into the gluten free flour, it will pack it down and you’ll have too much flour.

Room Temperature Ingredients – While this recipe works best with room temperature ingredients, you can use colder ingredients.

Baking Powder – For those that have made this recipe in the past and loved it, it previously called for 3 teaspoons of baking powder. I found that people were using blends with baking powder already in it and they weren’t getting the best results. I’ve reduced the baking powder to 1 teaspoon.

Dairy-Free Option – This gluten-free waffles recipe works with milk or dairy-free milk.

Mix and Storage – This gluten-free waffle mix can be stored in an airtight container for up to three months at room temperature. When you are ready to make waffles: Preheat a non-stick waffle iron. If you doubled or tripled the dry ingredients before storing make sure add enough wet ingredients or measure out one batch worth of dry ingredients to mix with the wet ingredients above. One batch equals approximately 2 cups + 2 tablespoons of dry waffle mix. Pour the dry waffle mix into a large mixing bowl. Add in vanilla, eggs, milk, and oil. Mix just until the batter is smooth. Cook as directed.

Sugar Free Option – Use honey or coconut sugar instead of granulated sugar.

Ingredients In Gluten Free Waffles

Gluten Free Flour – The base for these gluten free waffles. You can use either of my gluten free flour blends, or you can use Bob’s Red Mill 1-to-1 Gluten Free Baking Flour . We don’t recommend the Bob’s Red Mill all purpose gluten free flour .

Sugar – A touch of sugar adds a little sweetness and helps with the texture.

Baking Powder – To help create the air bubbles needed to help the gluten free waffles fluff up and rise while cooking.

Salt – Salt is a flavor enhancer and it helps with the rise.

Vanilla Extract – We love adding a touch of vanilla to this gluten free waffles recipe. It adds a little flavor and pulls everything together.

Eggs – Eggs help bind everything together and they help wit the texture.

Milk – We like to use unsweetened almond milk, but you can use your favorite milk.

Oil – You can use your oil of choice, but we like to use neutral flavored oils like avocado oil.

Easy Gluten Free Belgian Waffles

There’s just something about a big fluffy gluten free Belgian waffle that makes my gluten free baking heart happy. It could be that they’re so decadent and have the appearance of a super luxurious breakfast when really, they couldn’t be simpler! Just one bowl, an hour rise time and a waffle iron and you have all the makings of a restaurant-quality Belgian waffle that’s also dairy free.

Tips For The Best Gluten

  • Use gluten-free flour + almond flour. A little almond flour is the secret to getting golden gluten-free waffles with amazing flavor!
  • Whip to egg whites. Whipping the egg whites gives the batter an unbeatably light consistency. Its totally worth the effort!
  • Set in the oven after cooking. If youre not serving the waffles right away, set them on a wire rack over a baking sheet in a 250F degree oven so they stay nice and crisp.

There you have it! Delicious, golden, crispy gluten-free waffles that are worthy of the very best maple syrup.

How Do You Make Strawberry Waffles

This particular recipe is based off of a standard Belgian waffle. They are light and fluffy thanks to the whisked egg whites, which helps with leavening. The texture is all thanks to the mixing method.

First combine all of your dry ingredients into a bowl. Whisk them well to make sure everything is evenly distributed.

Next, cracks your eggs and divide the yolks and whites into two separated bowls. Whisk the egg whites until they are frothy but not turned into meringue. Set that aside.

Then, whisk the egg yolk until it’s smooth. Add the remaining liquid ingredients to the yolks. Whisk them together.

Add the egg yolk mixture to the dry ingredients and fold together until all of the dry ingredients are incorporated. Then add your egg whites to the batter and gently fold it together until it’s incorporate. The key is not to deflate the air that has been whisked into the egg whites.

Getting The Perfect Gluten Free Waffle Shape

If you’re a perfectionist, you’ll want each and every waffle to be a perfect shape. For Belgian waffles, that means the whole circle, and not a cup’ missing. For square waffles, that means no rough edges.

Leave a 1/4-inch clean border around the edge of the iron. That will give the waffles a bit of space to expand during cooking, but without overflowing the sides.

For the fluffiest waffles, be sure to blend the oil and egg yolks first until creamy before adding the other ingredients, and then folding in the whipped egg whites.

How to Make Gluten-Free Dairy-Free Waffles (Episode 30)

Since you really need to separate the eggs and whip the whites, a chia egg or similar egg substitute won’t work. If I were to try to replace the eggs here, I’d use 1 1/2 tablespoons more oil in place of the yolks, and 1/4 cup aquafaba, whipped until it holds soft peaks, for the whites.

Aquafaba is the name given to the liquid from a can of chickpeas. One can typically yields 1/2 cup brine, or aquafaba. Be sure to fold in the whipped aquafaba just as directed with the whipped egg whites in the recipe.

Which Waffle Maker Is Best For Perfect Fluffy Gluten Free Waffles

I’ve tried many, many waffle makers over the years, and I’ve finally settled on two favorites.

For Belgian waffles, I’m partial to the Presto Flipside Waffle Maker . It cooks very evenly and as long as there’s a light coating of oil, the waffles never stick. And the price is very fair.

For traditional square waffles, I absolutely love the waffle maker I bought years ago at Kohl’s, but I’m sorry to say that they don’t sell it any longer! It’s The Food Network brand, and I’ve loved everything I’ve ever bought under that label.

This Hamilton Beach brand waffle maker looks very similar, and has really good reviews. That’s also an affiliate link, but please shop around!

How To Make Gluten Free Chocolate Waffles

Here are the steps to make our gluten free and dairy free chocolate waffles. This recipe makes 3 large Belgian style waffles, which have about 1-2 servings for each waffle depending on how hungry you are So theres about 3-6 servings in this batch.

  • Preheat your non-stick waffle iron .
  • In a large bowl, whisk together the gluten free flour, sugar, baking powder, baking soda, and salt. You can swap the sugar for a granulated sweetener if you like.
  • Add xanthan gum if you are using a gluten free flour mix that doesnt include xanthan gum.
  • In a small bowl, whisk together the dairy free milk, oil, and vinegar .
  • Add the liquid ingredients to the dry ingredients and whisk together until mixed well. and you have a thick batter.
  • Scoop the batter into your hot waffle iron according to the amount that your waffle iron will hold. We pour 1 measuring cup of batter into our Belgian waffle maker. Spread the batter a bit if needed.
  • Cook in the waffle iron for 4 to 4-1/2 minutes. Once its done cooking, the steam will reduce or stop when its ready.
  • Top with your favorite dairy free butter and toppings.

Our photo below is of our regular waffle batter, but the chocolate batter is just as thick. This will give you an idea of how thick the waffle batter will be for our chocolate waffles.
