In this incredibly simple bread, the only sweetness comes from bananas and just 3 tablespoons of honey in the whole loaf. But it’s just enough.

How To Freeze Gf Banana Bread

Its super easy to freeze this flourless banana bread by the slice or by the loaf.

To store by the slice, wait until your loaf has cooled completely and then slice. Wrap each slice in aluminum foil, and then place them in a zip-top bag with excess air removed. Store in the freezer for up to three months.

To store by the loaf, again wait until the loaf has cooled completely. Wrap the entire loaf in aluminum foil, and then place it inside a zip-top storage bag with extra air removed. Full loaves can also last up to three months in the freezer.

While this bread can last in the freezer for longer than three months, you may notice changes in its texture the longer you keep it. This is primarily caused by freezer burn, and thats caused by air trapped with the bread, so try to avoid that if you can.

When you ready to eat, you can defrost a slice by leaving unwrapped on the counter for about 30 minutes. If youre defrosting an entire loaf, try letting it defrost on the counter for at least an hour or until you can begin to slice through the loaf.

When choosing bananas for banana bread, always wait until they are as brown or black as possible. When they are overripe is when they are sweetest and the banana flavor is most pronounced. There are hacks to get them to brown faster but I prefer to let mine sit out. If you have bananas that arent ripe yet and you are really in the mood for banana bread, Id recommend adding more sugar to make up for the lack of sweetness.

Coconut oil is used here but you can substitute your favorite baking oil if coconut oil doesnt work for you or if you arent a fan. I also used coconut sugar, which adds some moistness and is one of my favorite baking sugars. Coconut sugar is unrefined and unprocessed and has some minor amount of nutrients. Even with both of these coconut products, you cannot taste any coconut in the final bread.

Almonds, like all nuts, naturally contain some oil. They contain more oil than the very small amount youll find in whole wheat flour. Fun fact: all-purpose flour has been stripped of all oils, which is why it keeps longer.

I was able to reduce the amount of oil in this recipe slightly, by dropping the oil from 1/3 cup to 1/4 cup. In fact, I was able to get by with as little as 2 tablespoons oil in this recipe, but I love the rich texture produced by 1/4 cup.

When making this bread recipe, use unblanched almond flour. Almond meal is coarser ground and can be heavier than blanched almond flour so it would weigh the muffins down.

If you often make gluten-free recipes with almond flour, avoid swapping out other flours unless it specifically says to do so in the recipe. It is made from ground nuts and contains more moisture than other flours.

Substituting other flours, such as wheat flour or coconut flour, in almond flour bread recipes will throw off the ingredient ratios.

How To Make It

Start by whisking together the the gluten free all purpose flour, baking powder, baking soda and salt.

In a separate bowl, mash up some overripe bananas and measure out 1 cup. Its important to use exactly 1 cup of mashed bananas for the right texture.

This recipe also doubles great. The recipe takes about 2 ½ bananas per loaf. So if you have 5 over-ripe bananas sitting around make two loaves! Nobody at my house complains when I do that!

  • In a large mixing bowl, add the shortening and sugar. Beat with an electric mixer until fluffy
  • Add the eggs, a teaspoon vanilla extract and almond milk and beat for 1-2 minutes until light and combined.
  • Add the ½ the dry ingredients to the wet ingredients and mix to combine.
  • Add half the bananas and mix to combine. Repeat with the other ½ dry ingredients and bananas. Fold in any mix-ins with a spatula.
  • Pour batter and smooth batter into the prepared loaf pan.
  • Bake for 50-60 minutes until toothpick inserted in the center of the loaf comes out clean. Cool 10 minutes in the pan then on a wire rack until fully cooled.

Use Room Temperature Ingredients When Baking Banana Bread

This tip comes is a good one for nearly all recipes, not just this one . Cold ingredients, especially solids like butter and ripened bananas dont mix as well if theyre cold or frozen.

When you allow your ingredients to come to room temperature, youll notice its so much easier to mix them. Youll also notice a finer end product because you didnt have to overmix your ingredients to fully incorporate them.
