If you have read my site for long you probably know that I have mixed feelings on gluten free flour blends. I love the idea and convenience of them. I love the thought of having just one flour to replace regular all purpose flour in baking. A one product fits all baking needs really does sound wonderful, but it is not as easy as it sounds. It is actually a difficult task.

In the five years that I have been gluten free I have tried many gluten free blends. Both homemade ones and premade ones. Some were good. Others were terrible. Most though worked well in some things, but not so great in other things. For most blends, I have found what may work well in a pancake wont work so well in a cookie. And what works in a gluten free bread may not work so well in a cake or muffin. It really is hard to find a one size fits all product when it comes to gluten free baking. Blends work okay in most things, but not all things.

This is why most of my recipes call for individual gluten free flours and not a blend.

Many people love the old blend. If you are one of them, dont worry, they still sell it. But I was not one of those that loved the old flour blend.

I also appreciate that the instructions are pretty minimal. Throw everything into your mixer, after letting your yeast activate for 10-ish minutes and then mix it to hell. Thats it. The most difficult thing about this mix is the wait time. But thats just baking in general, its a lot of hurry up and wait.

Youll need to let your batter rise for about an hour, and then itll have almost a 90 minute bake time as well. Finally, you should let your loaf cool completely before cutting into it which takes about another hour. I do not recommend making this when youre jonesing some bread.

A word of advice, when youre letting the mix rise I suggest using the water method to create a very warm place if you dont have a sunny window. Put your loaf pan into another vessel and fill that with warm water and create a warm bath for your loaf. That seems to work better than trying to use your oven at a low temperature.

Because it requires special ingredients, gluten-free bread mixes tend to be expensive, but this mix from Bobâs Red Mill is quite affordable. Each 16-ounce bag makes one loaf of gluten-free bread. The mix includes a variety of grains and seeds that produces a complex, whole-grain bread with more flavor than a typical loaf of white bread.

While traditional cornbread includes a lot of cornmeal, it also includes wheat flour, so itâs not usually gluten-free. This mix eliminates the wheat, creating a tasty cornbread that can be baked in a cast iron skillet, in a square pan, or in a muffin tin. Itâs simple to make, tooâjust add milk, egg, and oil, stir to combine, and bake. This 15-ounce box makes one pan of cornbread or 12 corn muffins.

Brazilian cheese bread isnât something that needs to be adapted to be gluten-freeâthe recipe never had gluten originally.   • Dissolve the Yeast. Start these rolls by dissolving instant yeast, also called Rapid Rise or Quick Yeast, in a small amount of warm water. This allows the yeast to get started.
  • Mix the Dough. After the yeast has dissolved, add the remaining ingredients and mix until a very thick dough forms. You want to use the paddle attachment on your stand mixer for this step. Like my gluten-free sandwich dough and hot cross buns, this dough doesnt form a dough ball. Its thicker than the sandwich bread dough but its not a dough you can turn onto the counter to knead
  • Shape. There are two ways to shape this dough. The first is the easiest: use a muffin scoop. The scoop makes quick work of shaping the rolls and it ensures that theyre all the same size. This means you wont end up with large underbaked rolls and small overbaked ones. If you dont have a muffin scoop, spoon the dough, about 1/3 cup, and drop it onto a parchment lined pan. The finished rolls wont be a round as those made with a muffin scoop but theyll bake and taste the same.
  • Smooth. After shaping the rolls, dip your fingers into some cool water and smooth the top of the rolls. If the dough begins to stick to your fingers, dip them in water again. Not only does this make the rolls look pretty, it also keeps any thin strands of dough from burning.

    Ive tried Bobs Red Mill products many times, in fact, theyre a staple of our gluten-free home. One of the first things I miss about having gluten in my life is bread, and thusly, have been on the hunt for gluten-free bread mixes.

    I really appreciate that this mix includes everything you need except for your wet ingredients, which are eggs and water.     How We Baked It

    The back of the packaging has two instructions for baking: hand mixing or bread machine. Its not too often I see a bread mix with specific instructions for using it with a bread machine, so I opted for this. I used my Zojirushi 2lb bread maker to make this loaf because it has a gluten free bake setting. Nearly all bread machines work in the same order: add all wet ingredients first, followed by flour , sugar, salt, and finally yeast. In this specific case, the directions looked like this:

    • Mix two eggs and 1/4 cup oil into 1 1/2 cup water.
    • Add wet mixture to the bread pan.
    • Pour bread mixture on top of the wet mixture.
    • Scoop out a little hole in the middle of the flour and pour the yeast packet in.
    • Start bread maker.
