These long, bun-like thins are made from a mixture of gluten-free flours, including potato flour, and are perfect for stuffing with your favorite sub sandwich fillings.

Proving Your Burger Buns

Because we’re working with an enriched dough, it does take a little longer to prove than some of my other bread recipes.

I usually prove these for around 60-90 minutes, until they have puffed up nicely and about doubled in size.

If you have a particularly warm spot, you might find they prove a little quicker.

And likewise, if it’s a cold day, it may take longer.

Use these timings as a rough guide but if your rolls don’t puff up a lot in 90 minutes, don’t be afraid to leave them a little longer.

In this sort of recipe, I prefer to start with a wet dough. Its more difficult to shape and handle, but you can flour the dough generously during shaping without drying it out too much.

Just handle the dough with a light touch, and even a higher quantity of extra flour wont incorporate into the center of the dough where it will stifle the yeast.

    It’s always important to let them cool for at least half an hour before then tucking in.

    This is because when you take the gluten free burger buns out of the oven, you need to allow times for the gums to settle.

    There’s a reason why people love warm fresh bread – not hot!

    Once cooled completely, I’d recommend popping them in an airtight container straight away.

    If you’re going to freeze your bread, do this straight away by popping them in a freezer bag.

    These are best eaten the day of baking – if you’re baking them ahead of freezing them, I’d recommend refreshing them before eating

    To do this, either microwave for 10-20 seconds or sprinkle with water and put in a hot oven for five minutes before eating.

    I’m not sure how well it would work to just straight-swap the dairy and egg for dairy free versions, so without trying it myself I wouldn’t recommend it.

    Shaping Gluten Free Hamburger Buns

    First, cut the dough in half with a bench scraper to make both hamburger and hot dog buns. Put aside one half of the dough while you shape the other half.

    Portion out the dough into about 3-ounce pieces. I use my scale to measure each so theyll all be roughly the same size. Roll them into balls . Place them about 2 inches apart on a parchment-lined baking sheet.

    Take your hand and press down on them to flatten them to about 1/2-inch thick. This just ensures that they all rise up and not out. Cover the rolls while you work on shaping the hot dog buns.

    Begin by rolling out the second half of your dough into a rectangle thats about 1/2-inch thick. I had enough of my dough left to make 7 3-ounce-sized hot dog buns. Begin cutting the dough into strips that are roughly equal in size. You could steal some of your hamburger bun dough to make an even 8, but thats up to you.

    Lay them on their side on the other half of your baking sheet. Press down lightly to make an evenly sized roll thats about one inch high. Do this with the rest of the rolls, spacing about 1/2 inch apart. These will end up touching when theyre fully risen and baked, but thats what we want for nice, soft sides.
