Gluten Free Pancakes With Almond Flour And Cottage Cheese
These gluten free pancakes are a combination of two of my popular breakfast recipes.
Both of the recipes are also gluten free if you want to check them out.
My Cottage Cheese Pancakes with Oats is the first pancake recipe on The Worktop I made with cottage cheese. Theyre also naturally gluten-free and high in protein.
The Keto Cream Cheese Pancakes are low carb. But they are a bit thinner. I love them, although they are a different pancake style.
So, I decided to take what I loved about both recipes. And voila! I came up with these fluffy gluten free pancake.
Avoid Cheese Packaged At Deli Counters
It’s unfortunately also possible for any cheese to have gluten cross-contamination introduced when it’s handled or packaged. Many stores, especially more upscale supermarkets, buy large wheels or blocks of cheeses, and then cut them up to sell in smaller quantities. If this cutting and repackaging take place in the deli section where workers also make sandwiches, or in the bakery section where workers are using flour, the cheese can become cross-contaminated.
Therefore, it’s best to stick with cheese that was packaged at the manufacturing facility.
To tell the difference, the cheese that’s repackaged at local stores usually is wrapped in basic plastic wrap that’s held closed by a stick-on label, while cheese that’s packaged at the manufacturing facility usually has a more substantial shrink-wrap-style plastic cover, sometimes with the label printed directly on it. If in doubt, of course, you should ask.
In addition, if you purchase cheese sliced at the deli counter, you risk that cheese being cross-contaminated in the slicing machine since a few sliced deli products contain gluten. Again, you’re better off purchasing cheese that was pre-sliced and then packaged at the manufacturer, although some people have reported success by asking the store personnel to slice their cheese and other deli products in the early morning after the equipment has been cleaned and before it’s been used for gluten-containing deli products.
How To Make Gluten
Making this dish in the Instant Pot is very easy and fast. If I have had a busy day at work, coming home and throwing everything in the Instant Pot for a quick dinner makes cooking stress-free!
Also, when cooked under pressure this meal will be cooked faster, and also will blend the cheeses with pasta well, giving it a nice buttery texture. I have a delicious Instant Pot version of this dish, which can be accessed here. Just make sure to replace the pasta with the gluten-free version.

Cheeses That May Have Gluten
The FDA allows processed and packaged food to be labeled gluten-free if it contains no wheat, rye, barley, or any crossbreeds of these grains. Gluten-free foods may have also been processed to remove gluten. It must contain less than 20 parts per million gluten to be considered gluten-free.
That’s the lowest amount of gluten that can be detected with available scientific tools.
Its important to read the labels of any cheese and cheese products. Some cheeses and cheese products may have certain ingredients added in. These can include:
Cottage cheese. Cottage cheese doesnt usually have gluten. But some brands may use modified food starch or wheat starch.
Blue cheese. Most blue cheese is gluten-free. Mold spores are added to the milk mixture to make blue cheese. These spores are sometimes grown on rye or wheat bread. But blue cheese rarely contains more than 20 ppm gluten. So it should not trigger a gluten allergy.
Shredded cheese. You can usually find several different types of pre-shredded cheese at any grocery store. The cheese itself is almost always gluten-free. But manufacturers may use a starch with gluten to prevent the shreds of cheese from sticking together.
Cheese spreads. These are often gluten-free. Some brands may use gluten to help with the consistency of the spread. Check the label.
Is Almond Flour Okay On A Gluten Free Diet
Yes! Almond flour is gluten free. Its also low-carb and keto-friendly. Essentially, its just made from grinding whole almonds into a flour consistency.
When buying almond flour there are two main options: blanched or unblanched.
Blanched almond flour is slightly lighter and fluffier. That makes it a good option when youre making delicate pastries like macaroons.
However for most recipes, I recommend using unblanched almond flour. Its less processed. Therefore, it retains more of the minerals and fiber from the almonds.
So, to make these pancakes as healthy as possible, I recommend usingan unblanched almond flour in this recipe. As a benefit, youll get more fiber, calcium, iron, and vitamin E!

This is such a great question! And of course Im not laughing! Sometimes the easiest things to make in the kitchen require a bit of know-how that no one ever talks about. Well, Im talking!
Heres how to make a great gluten-free grilled cheese.
Bread and butter. The foundation of grilled cheese. Since Catherine uses Udis bread, that what I used. However, you can use whatever bread you love.
Butter each slice. You dont want too much butter nor do you want just a little. While Ive never measured it, Im guessing you want about one teaspoon per slice of Udis. And be sure to butter right up to the crust.
Mmm! Bread and butter!
Next grate some cheddar. About one ounce is perfect for Udis slices.
Place one piece of bread in the pan, butter side down, and top with the cheese. Dont worry if some cheese gets into the pan.

- The gluten-free and celiac community recognizes Velveeta as a gluten-free product.
- Since Kraft Foods does not label Velveeta as being certified gluten-free, we can assume that cross-contamination may occur.

Tips For Working With Gluten Free Yoghurt Pastry
- As discussed, roll and shape the pastry right after you make it. It is at its flexibility peak, like me after a few wines.
- Use your rolling pin the press down on the lump of pastry to secure it and flatten it before rolling. I find this helps prevents cracks.
- Patch up as cracks with your fingers as they appear. The warmth from your hands will help bring it together.
- Make sure your paper and rolling pin are well floured to prevent sticking. Nothing worse than having to scrape the whole thing up and start again.
- Dont expect it to have as much flexibility as glutenous pastry, or even pastry with xanthan gum. It needs a little more TLC, but the gum free result is worth it.
- If you plan to do lattice work, crimped edges or any fancy pastry work, use the starchy option. The starch free version is trickier to work with and wont hold up to intricate stuff.

Is Velveeta Gluten Free What Is Velveeta
Manufactured by Kraft Foods, Velveeta is a processed cheese product with a velvety, smooth consistency when melted.
Invented back in 1918 by the Monroe Cheese Company, the brand was sold to Kraft Foods in 1927.
Though originally sold as Pasteurized Process Cheese Spread and marketed as a healthy product that enjoyed the stamp of approval of the American Medical Association, Velveeta contained whey and real cheese.
However, back in 2002, FDA forced Kraft Foods to label Velveeta as Pasteurized Prepared Cheese Product.
Currently, Velveeta contains mainly milk protein concentrate and whey protein concentrate, mixed with milk, fat and various preservatives. According to FDA standards, technically, Velveeta is not cheese.

What Dairy Products Are Gluten Free
