These vegan English muffins are soft, fluffy, and easy to make! Perfect for slathering with jam and vegan butter or stuffing with your favorite sandwich fillings.

My love for English muffins runs deep! A toasted English muffin covered in butter and strawberry jam was my favorite breakfast growing up.

It’s pretty unfortunate that vegan English muffins are kind of scarce. Sorry to be a bearer of bad news: but lots of popular brands contain dairy products.

There are vegan brands out there , but I know these aren’t available everywhere. So I decided it was time to come up with a homemade vegan English muffin recipe. And guess what? They were WAY better than any store-bought English muffin I’d ever had .

Can I Make Vegan English Muffins

Yes! You can definitely make your own vegan English muffins. The procedure of baking English muffins is what makes them special. Traditionally, while making yeast bread, you let the dough rise before shaping it and baking it.

It takes only a few simple ingredients to make your own vegan English muffins at home. And most especially, you need some patience because these require two peaks.

English Muffins Are Not English At All

Were sorry to break the news, but English muffins did not originate in England. In fact, until Thomass English muffins were imported from America in the 1990s, the British were unaware of their existence.

  • First make the dough: mix all wet ingredients , then add the psyllium husk and flax seed meal in order to soak and form a slightly gelatinous substance. Then add the rest of dry ingredients and give it a good mix. The dough should be sticky and soft something between batter and dough. Before preheating the skillet you can add the leavening agent this will create lots of nice air bubbles. At this point you could leave your dough ferment for an hour or two or proceed to baking right away.

    2.Divide and shape the dough. Divide the dough in equal parts , shape into rough balls using greased hands.

    3. Cook. Spacing at least 1½ inches apart place the balls on the preheated skillet and press dough balls into thick rounds. Brown both sides and place the muffins in the preheated oven and bake until they are cooked through inside.

    Editors notes- This is the kind of simple recipe you can throw in a blender together and pour into a greased ramekin/bowl/mug and BAM- Instant English Muffin. I found the perfect sized mug is actually the generic cereal bowl from Ikea. Any microwave friendly cereal bowl works and I recommend it, as it cooks evenly. Not only that, its perfect to slice in half, toast and spread!

    For those without a microwave, simply bake in an oven safe ramekin for 350 for 12-15 minutes, or until fully cooked in the center and the edges are golden brown.

  • Pre-heat the oven to 180C .
  • Grease a few small baking pots/ramekins with butter .
  • Then sprinkle some cornmeal all over the bottom and sides with a little sieve or your fingers. Note: this step is important to get that proper toasted cornmeal flavour and outer texture typical of English muffins.

    Cooking The English Muffins

    Now preheat your oven to 350 degrees F . You don’t have to cook these on the stove first, but it helps brown both sides before baking.

    At this point, if you’d like to ensure perfectly round English muffins, I’d recommend using these English muffin rings. They’re inexpensive and also useful for pancakes!

    To keep your dough from sticking, lightly grease the inside of the rings with leftover coconut cream. Place the ball of dough inside one of the rings on a flat surface like your silicone mat lined pan.

    Flatten the ball with the palm of your hand until it fills the edge of the rings. Smooth gently with your fingers.

    Heat a skillet or griddle over medium low heat. Sprinkle the tops and bottoms of the muffins with cornmeal, breadcrumbs, extra flour, or skip it, then place them on the pan or griddle.

    If you’re worried about sticking, use a little coconut cream to grease the pan, but I didn’t have any issues.

    Anywho, cover the pan or the griddle if you can. Cook for about 5-6 minutes on each side, depending on how hot your burner or griddle gets. you’re looking for a medium brown on each side.

    Then transfer your muffins to the lined baking pan and bake for about 10-20 minutes. You will need to cut into one to test it , since it kinda depends on how much they got cooked on the inside during the stove top round and how hot your oven is.
