You have to accommodate for potato starch’s instability when using it as a thickener, which means adding it at the very end of cooking. Add 1 tablespoon of potato starch mixed with 1 tablespoon of cold water for every cup of soup or sauce and whisk it in, then cook for about five minutes — without letting it reach a boil. Soups and sauces thickened with potato starch will thin out if you reheat them.

Where To Source Gluten Free Flour
Whilst there are many different gluten free flours available, there are a few basics which I use more often than others. The ones I use most frequently sorghum white teff, buckwheat potato starch flour white rice and brown rice) are the ones that you too may choose to source . I also use a lot of oat flour, but I grind this from gluten free oats myself at home to save money.
As withany other gluten free products, be sure to buy base flours which are certified glutenfree if you are Coeliac or needing to avoid gluten for health reasons.
Many of the key gluten free flours can be found or ordered into good health food, nutrition and whole food shops. To find them I would recommend doing a bit of a google search on your local area to see what your options are. I also use a couple of amazing local farm shops which often have an unexpectedly good range. Interestingly, I rarely find what I need in places like Holland and Barrett, mainly because many of their products are not certified as Coeliac-safe.
If you cant source the flours you need on the ground, check out the internet for suppliers. Ocado has a reasonable range of some of the basics, as does Healthy Supplies , Pure Gluten Free and Shipton Mill. There will be plenty of other on-line sources though, so check around.

Weve got several other ingredients you can substitute for potato flour while you work on restocking your supply.
Potato flour vs. potato starch
First, lets clear up any confusion about potato flour and potato starch. Potato flour is made from whole peeled potatoes, cooked, dried, and ground into a fine, beige-colored powder. Potato starch is washed out of crushed potatoes, then dried to a fine, bright-white powder.
Whats the difference? Potato flour includes fiber, protein, and flavor, while potato starch is pure flavorless starch.
Starch helps keep bread and rolls soft, moist, and fresh by absorbing and holding liquid. When bread goes stale its because its liquid is evaporating starch slows this process.
So while you wouldnt want to use starch in a crusty baguette, its perfect for soft dinner rolls and sandwich loaves. Many King Arthur Flour yeast bread recipes call for potato flour, which adds not just starch, but a bit of creamy color and a faint hint of earthy, potato-y flavor.
Can I substitute cornstarch for potato flour? Yes, with reservations your bread will be paler and less flavorful.
How to do it: Substitute cornstarch 1:1, by volume, for potato flour in yeast recipes.

How Do I Know When Its Risen Enough
Once you pour the batter into the pan, it will be about ¾ of the way full. Place the pan into a draft-free spot to rise for an hour. After an hour it will have risen to just over the top of the pan. Keep in mind, the moisture content is higher in this bread, so it may not rise as much as other breads like this cinnamon raisin bread machine bread.

Concerns About Rice Flour
There is also a growing body of evidence and information that rice flour in large quantity may even be harmful, with the concern that it contains arsenic from water and soil contamination. Arsenic being a poison, is not a great thing to be eating.
Bog-standard boiled rice carries less of a risk because of the process of boiling in water, particularly if the rice has been soaked for several hours before cooking as advised in this BBC health article. Rice flour however, is not boiled, but is produced by grinding rice before it is cooked.
At low levels, the damage may be minimal, but for Coeliacs, it is all too easy to find that your diet has switched from damaging wheat to toxic rice and if you dont find ways to lessen the intake, you could be causing harm. If you buy ready-made commercial bakes, flours and bake mixes, take time to read the packaging you may be shocked at how much rice you are consuming. Is It Easy To Blend Gluten Free Flour At Home
Whilst I appreciate that not everyone has a willingness or will to spend time weighing out and mixing flours together, it is really not as time-consuming as it sounds. Trust me if it was, I wouldnt be doing it! I hate faff! But once you have found a gluten free flour mix that you are happy with, it is easy to stock up on the base flours and simply mix up batches of 500g to a kilo whenever your blend gets low. I weigh mine straight into an airtight container and shake vigorously to mix. Its that easy and gives you absolute control over whats in there.

Whats The Best Way To Store Potato Rolls
Gluten free breads in general are not agreeable when it comes to storage time. These potato rolls do give a little though. The moisture of the potatoes helps in that area.
The best storage is a good ole bread box. But if you dont have one of those, a plastic bag is a good alternative. A day or two on the counter is fine, but any longer than that and youll want to freeze them.

This nightshade free gluten free flour mix has become my go-to flour for gluten free baking. It works wonderfully in cakes, muffins, and quick breads.
This nightshade free gluten free flour mix is a blend of flours that I have been working with for many months now. Over the summer, I discovered that potatoes and I are not really very good friends. In fact, they pretty much hate me. Since potato starch was one of the main flours I was using in my flour mixes, I had to make a switch.
However, potato starch is in almost every ready-made gluten free flour mixes on store shelves. Bad news for me but luckily, I have a bit of experience with gluten free flours so I wasnt too upset. I had to make my own blend, but whatevs. No biggie.
Also, in case youre highly confused about why Im posting a potato recipe in a few days, I can eat a few tiny bites before all hell breaks loose. I just can saturate my life with potatoes, unfortunately. And when potato starch is in basically EVERYTHING, it was happening on an almost daily basis. Oops.
Anyways. Ive also gotten a few emails from some of you lovely peeps who stick around and read my ramblings. Actually, Ive gotten quite a few questions from people wanting to know what to use in place of the potato starch in my White Rice Gluten Free All-Purpose Flour Mix.

How Is Potato Flour Made
Potato flour, like potato starch, starts with whole potatoes, but this is where their similarities end. The potatoes are cooked, dried, and ground into a fine powder. The result is a powder that’s more beige in color, similar in appearance to whole-wheat flour.
Potato flour is of course much higher in nutritional value than starch. Plus it’s rich in vitamins, minerals, protein, and fiber, making it a healthier, gluten-free alternative to wheat flour. It does have a much stronger potato flavor than potato starch.
Are Scalloped Potatoes And Au Gratin Potatoes The Same
- Much to many people’s surprise, no! Au gratin potatoes and scalloped potatoes are no the same. The potato in a scalloped potato is sliced slightly thicker than the au gratin potato.
- Au Gratin Potatoes typically have cheese sprinkled throughout the potato layers. They also have bread crumbs on top.
- Scalloped potatoes typically have a more creamy sauce and do not have the breadcrumb topping. Scalloped potatoes sometimes contain cheese, however not always.

Flour Blending Not For You
If flourblending is something that is not for you, then it is fine to find a commercialblend that you feel happy with. Many of the recipes on Gluten Free Alchemistshould work with a standard commercial blend, but as they have beenspecifically developed using the flours as stated in the ingredients lists, Iam unable to verify the results with other flour blends. If the blend you usehas a greater ratio of rice flour in particular, you may need to add a littlemore liquid, but the best advice is to judge for each recipe as you learn whatworks best.
If you are looking for a rice-free commercial blend, there are a couple now available. The Free From Fairy produces a Wholegrain Gluten Free, Rice Free Flour Blend , which can be found via her website. Bobs Red Mill also produce two rice-free flour blends an All-Purpose Baking Flour and a Paleo Baking Flour . I have not tried the Bobs Red Mill flours, but can vouch for the Free From Fairy blend working well.
Can You Make Scalloped Potatoes Ahead Of Time And Reheat
- This scalloped potato casserole can be prepped ahead of time and reheated prior to serving. Make the casserole up to 1 day before planning to serve. Leave off the top layer of cheese, and cook the casserole as other wise instructed. Once cooked, store in the refrigerator. The next day , add the remaining layer of cheese and cover with foil. Reheat in the oven at 350 degrees for 15-20 minutes.
- Adding the top layer of cheese prior to reheating will prevent it from burning.
