High-carb foods and drinks raise blood sugar shortly after consumption. In healthy people, when a rush of glucose enters the bloodstream, the beta cells in the pancreas release an amount of insulin thatâs proportional to the amount of glucose in the blood. Insulin directs the glucose into the cells so it can be used for energy.

Any unused energy gets moved to the liver and muscles for future use. When the liver and muscles stores reach capacity, any unused glucose gets stored in fat tissues.

When glucose gets stored repeatedly and doesnât get used by physical activity or intermittent fasting, fat storage accumulates and weight gain happens. How To Make Low Carb Bread With Almond Flour

This almond bread recipe is super easy! Just a few easy steps:

  • Prep. Preheat the oven and line a loaf pan with parchment paper.
  • Stir dry ingredients. These would be almond flour, psyllium husk powder, baking powder, and sea salt.
  • Add wet ingredients. Add the eggs, melted coconut oil, and warm water.

TIP: Mix well here to create air bubbles! This will help your bread rise.

  • Bake. Transfer the batter to the baking pan, round out the top, and bake until the top is crusty and an inserted toothpick comes out clean.

TIP: It will pass the toothpick test before its completely done, so make sure the top is very crusty, too.

This low carb bread recipe with almond flour came about somewhat by accident during my Sunday keto meal planning. Lately Ive been making the flattened version of my 4-ingredient almond flour biscuits to use for sandwiches each week, but since Ive been wanting to create a keto almond flour bread recipe, last weekend I decided to attempt that instead.

This is one of the closest ways Ive come to a carb-free bread or carbless bread. Technically, cloud bread is lower in carbs, but the texture is much further from real bread. My white keto bread recipe is also lower in carbs , but that one is more like a fluffy white instead of a classic wheat. That one is more light, while this low carb gluten-free bread is chewy and similar to wheat bread. You can also make coconut flour bread without any almond flour at all or for a sweeter almond flour loaf, make almond flour zucchini bread. Just depends on what youre going for!

The taste and texture of this keto almond bread reminds me of a denser wheat bread. It even has a crusty exterior! You just need to make sure to bake it for long enough, so that the inside isnt wet anymore. The difference is, its paleo, gluten-free, and packed with protein and fiber, keeping you full for much longer. What is quark?

Quark is a German cooking cheese, which is made by heating soured milk until it curdles. It is available in larger supermarkets in the UK and Northern Europe. In the US you can get it online or in delis/natural food stores.

Recipes using almond flour can result in a crumbly, dry texture because of the lack of gluten. The quark makes up for this and gives this low carb loaf a wonderfully moist bread-like texture.

Any other benefits?

Yes! Quark makes this recipe also less heavy than other grain free bread recipes, because you use it in place of fats such as butter or coconut oil. With almond flour or almond meal containing plenty of healthy fats on its own, you still get that lovely low carb long-term energy boost.

The Ingredients & Possible Subs

This bread does have quite a few ingredients, but youll find that most are staple paleo and keto pantry ingredients. In the list below youll find details on several ingredients and possible subs. But if possible, please do try and make this recipe without any subs. As out of the 18 permutations we tried, this one really was terrific and the absolute best.

Almond flour. You truly need a super finely ground almond flour here, as if you use meal your bread will turn out dense and oily. Super fine almond flour brands include Anthonys , WellBees and Bobs.

Now if paleo, or in keto maintenance, you can lighten up the bread even more by substituting part of the almond flour with arrowroot flour.

Golden flaxseed meal. Youll want to use golden flaxseed meal , and regrind the flakes in your bullet or blender until finely powdered. Great way to avoid slimy bread. You can technically substitute the flaxseed meal with psyllium husk powder, but we prefer the crumb much more with the flax. Just make sure its the golden variety and not the regular .

Psyllium husk powder. Same as with your flaxseed meal, youll always want to regrind your psyllium husk. We always favor NOW brand as it doesnt turn bread purple. You can substitute it with more flax, but your bread may lose some elasticity and rise.

Now, the cream of tartar and powdered ginger help to condition the dough to get an even nicer rise. Though note that you can skip them without too much detriment to the final results.
