    A Note On Trace Ingredients

Depending on the severity of your allergy or intolerance, it may be necessary to avoid items that are processed on shared equipment. In my case, my baby was fine when I ate items that had trace amounts of allergens, but not when I ate items with dairy, soy, or egg as an actual listed ingredient. So even if it’s not listen, it’s always important to double check the label for the fine print if you are dealing with a severe allergy. In the list below, I’ve noted most of the items with *Trace to give you a heads up to look closer.

    Soy Can Cause Villous Atrophy

If soy can be a cause of villous atrophy, and other foods can cause villous atrophy, how can we use this finding as a definitive marker for the identification of celiac disease ? There are a growing number of people diagnosed with celiac disease who are failing to respond to a traditional gluten free diet. Is the abundance of soy protein in gluten free foods one of the reasons why?

    Food Allergy And Sensitivity Testing

Below is brief overview of testing for food allergies, sensitivities, and Celiac disease. Keep in mind, most kids are sensitive to the foods this diet eliminates, but not allergic to them. Ultimately, the best way to determine if your child has a sensitivity to gluten, casein, or soy is a six month trial of the GFCFSF diet.

    • IgE reactions produce an immediate, allergic response that results in a rash, hives, runny nose, watery eyes, or anaphylaxis.
    • Because of this, IgE tests are not reliable in determining food sensitivities.
  • This test is done via skin prick or blood test and measures the bodys response when it comes into contact with an allergen.
    • Food sensitivities, or IgE reactions, produce a delayed, more subtle response that can affect a childs behavior for up to 72 hours after they have eaten the food.
    • Many allergists will not order IgG testing because they consider it controversial. However, functional medicine doctors trust it to verify food sensitivities in their patients.
    • Celiac is an autoimmune disease in which people cant eat gluten because it damages their small intestine.
    • Celiac disease can develop at any age.
    • Most people with autism that are sensitive to gluten have Non-Celiac Gluten Sensitivity .
    • very pertinent to kids who may not have celiac but still react to gluten.
  • If you wish to test for celiac disease, it must be done prior to going on a gluten-free diet.
  • Several blood tests can help determine whether or not someone has celiac disease:
  • Total Serum IgA

    The Great Hormone Debate

Samantha Grant, CN, my nutritionist, impressed upon me years ago to be extremely careful with soy intake. Soy naturally contains plant estrogen which is quite similar in structure to that of the human variety. By consuming soy, you add additional foreign hormones into your body which have the potential to disrupt your endocrine system.

One of the most common concerns is the depression or reduction of thyroid activity . True story I ran into a friend a few years ago from my old cycling team who shared with me this alarming personal story. His doctor told him to increase his protein intake and suggested getting some soy protein powder. So, my friend began drinking soy protein shakes daily which also contained soy milk. After several months of this, he began to feel quite run down and exhausted. Turns out, all that soy created a huge imbalance in his endocrine system and he was diagnosed with hypothyroidism. Since removing the soy from his diet and some medication , his thyroid levels were slowly recovering to normal levels.

It also can interfere with the natural onset of sexual development in girls as well as create problems for boys as they head toward puberty. Soy formula has been shown to create zinc deficiencies. And potentially lower a childs seizure threshold particularly in babies genetically predisposed to developmental disorders, according to Kaayla Daniel, PhD, CCN.

Soy Is A Major Processed Food Ingredient

This information seriously begs the question: shouldnt doctors also rule out other foods known to cause villous atrophy before making a definitive diagnosis of celiac disease?

Many gluten free food manufacturers use soy flour and other soy byproducts to produce foods for the gluten free market. So is soy gluten free and OK to consume on a gluten free diet? If a patient is diagnosed with celiac disease and not told about the possibility of soy as a cause, they could be using these products and perpetuating their illness.

If you have not responded to the gluten free diet, you may want to look into the possibility that soy or other food allergens are also playing a role in your disease process. If your doctor refuses to help you, consider following the scientifically proven diet plan provided in No Grain No Pain.

What I Eat In A Day (Dairy, Gluten, Grain, Soy Free)

The classic cold lunch is a Peanut Butter + Jelly sandwich, which obviously doesnt work for kids with peanut allergies or those attending nut-free schools.

An easy way to still enjoy this simple kids lunch without putting someone who has anaphylactic or contact reactions to peanuts at risk is to swap Peanut Butter for SunButter, which is made from sunflower seeds.

Ants on a log are a fun classic and a healthy snack idea for kids. Simply swap peanut butter for a safe alternative like SunButter or WOWBUTTER and top it with dried fruit.

To make this vegan, dairy, gluten, nut, and soy-free cold lunch, we used:

To avoid allergens, the burgers we use are not breaded and they need to be cooked. You can cook one the night before for a cold school lunch or cook it right before lunch for meals at home..
