How To Shape The Raw Egg Rolls

With a corner of the square facing you, place a bit of filling about an inch from that corner. The filling should be as dry as possible without sacrificing flavor.

Fold the corner over the filling, and fold one more turn. Make it tight, and press out any trapped air.

Whenever you’re planning to fry filled dough, be sure to eliminate any air as you go. Trapped air will allow oil to seep in during frying and the finished product will be greasy.

Next, fold the left and right sides, tightly, toward the center of the roll. Roll away from you once more, until the roll is sealed. Moisten your fingers as you go only as much as necessary to make the wrappers stick closed at each step.

Keep in mind that moisture makes hot oil splatter. If you allow your moistened, sealed egg rolls to sit for a moment as the oil heats to the proper frying temperature, any excess moisture should evaporate.

If you need to avoid xanthan gum, rest assured, you can still make gluten-free dumpling wrappers! Instead use ground up chia seeds.

To do so, grind up chia seeds into a powder using a coffee grinder and sub in 6 tablespoons ground chia seeds in place of the xanthan gum. Since chia absorbs more water, add 2-3 tablespoons more warm water to the dough. Either white chia seeds or black chia seeds will work, but ground black chia seeds will produce a light greyish dumpling, while white chia seeds will only minimally change the appearance of the dumpling to look a little more whole grain.

While the chia seed wrappers are easier to roll out into rounds, they’re a bit more delicate when it comes to pleating, so handle them more gently. How To Make Dumpling Wrappers

I recommend using the metric measurements in grams for exact results.

Step 1: Mix the dough

  • Combine all the dry dough ingredients in a bowl, then add the water , and mix thoroughly with a spoon waiting a few minutes until the dough isnt too hot to handle.
  • Knead the mixture into a smooth dough for around 1-2 minutes with your hands .
  • Add a little more water in the dough isnt pliable and smooth or a little more flour if its too sticky.

Step 2: Divide the dough

  • Wrap the dough in cling film and chill it in the refrigerator for 30 minutes.
  • Then, divide it into four pieces, placing three back in the fridge , and rolling the remaining piece out into a rope shape. Divide the rope into 7-8 pieces.

Step 3: Roll out the dumpling wrappers

  • Dust the counter with a little tapioca flour/cornstarch and flatten each piece with your hand to begin .
  • Roll out the dough with a rolling pin until it about 2 mm thin.

A pasta machine would also work for even dough. Remember, gyoza wrappers are usually thinner than regular Chinese dumpling wrappers so feel free to adjust the thickness.

  • Use a round cutter or glass to cut the dough into round potsticker/gyoza wrappers OR cut out 3 1/4-inch/ 8x8cm squares for wonton wrappers. Dust each with a little cornflour/tapioca starch.

Traditionally, the dough can be weighed out to even pieces and rolled into individual round wrappers without a cutter. However, this isnt a method Ive done enough to do confidently.

  • Cut into Squares: Use a pizza cutter or a large, sharp knife to cut the dough into 3-inch squares. If you plan to make egg rolls, you can make larger squares. This recipe should make about 16 3-inch squares

    How To Freeze Homemade Gluten

    You can also freeze the finished potstickers too cook them later – here are all of Lisa’s tips on freezing potstickers. If you don’t plan on cooking your gluten-free potstickers immediately, freeze them, even if just for a couple of hours!

    When I go through the effort of making homemade dumplings, I always double the recipe and store more than half in the freezer. To freeze the pleated uncooked potstickers, make sure none of the dumplings are touching one another on a baking sheet and place the baking sheet uncovered in the freezer for at least an hour. Once the dumplings feel firm, you can transfer the dumplings to a freezer-safe storage bag, using a metal spatula to lift them from the pan if needed.

    Cook frozen dumplings straight out of the freezer without defrosting, adding 1-2 minutes to the fry and cook time.

    I mentioned this above, but if they crack a tiny bit while freezing, don’t worry! The steam from cooking will seal the cracks back up.

  • Then have a little pot of water ready on the side. Dip your finger in and wet the wrapper all around the edges. This will help everything stick together like glue.
  • Add a teaspoon of filling in the centre.
  • Fold in half, in a triangular shape, tucking the filling in .
  • Dip your fingers in water again and wet both edges.
  • Now fold both sides up along the filling .
  • Wet the two little tails slightly and cross them over, pinching them closed.
  • Set your wonton dumpling aside on a plate. Note: wrap the plate with cling film or place a slightly damp cloth/paper towel over them while you fold the rest .
  • NOTE: this is just one of the many ways you can fold them / how they are typically folded in wonton soup. Feel free to fold however you want.

    How Do You Shape Raw Egg Rolls

    Place a wrapper on a flat surface, 1 corner facing to. Put 2 tablespoons of filling in the middle down of the wrapper . Fold the corner to the middle and continue with the right and left corners so it looks like an envelope.

    Start rolling the wrapper from the bottom and moisten the end corner on the front with water to seal it. Make sure there is no air trapped in the egg roll.

    What If My Gluten

    This is fairly normal for gluten-free dough, especially as it begins to dry out. Luckily, small cracks when pleating the gluten-free dumplings will steam while cooking and the cracks should seal.

    However, if you have a larger crack, you can patch it with a little extra dough, smoothing the edges with a drop of water before cooking the gluten-free potstickers/ dumplings.

    Are Wonton Fillings Gluten

    For the most part, we can assume that wonton fillings are not gluten-free because most contain soy sauce. Traditional Chinese soy sauce uses wheat as an ingredient, making it not good for a gluten-free diet.
